How To Grill Chicken Thighs: Temperature
When the chicken is ready to cook, preheat the grill for medium heat. If you’re using boneless skinless chicken thighs, your target temperature is 400 degrees. Add a little more boost of heat to 450 degrees for bone-in thighs. Ensure the grill grates are clean to keep the chicken from being contaminated with old, charred food debris.
How To Grill Bbq Chicken
- Preheat your grill by turning the heat up as high as it can go for a few minutes.
- After its heated, turn one side off or turn it down to medium low or low.
- Clean the grates and lightly dip a paper towel in oil and brush the grate of the grill to coat. Make sure that youre holding the paper towel with your BBQ tongs instead of your hands!
- Using a pastry brush, brush one side of the chicken breast with BBQ sauce and then lay that side down on the grill grates over the heated portion of the grill.
- Brush the top half of the chicken breasts with BBQ sauce.
- Cook with the lid down until grill marks are just starting to appear- this should take about 5 minutes .
- Brush the top of the breasts with another light layer of BBQ sauce, flip it and then brush the side facing up.
- Continue this process of brushing BBQ sauce and flipping the chicken every 5 minutes until the internal temperature of the chicken reached 160 F degrees. This will take about 20 minutes in total.
- Once the internal temp reaches 160, brush it with a final layer of BBQ sauce and then turn the grill off.
- Let it rest for 5 minutes with the lid down and with the chicken placed on the grill grates where the heat was off. After 5 minutes are up, the internal temperature should register 165 degrees F and you can serve as desired.
How To Grill Chicken Thighs: Time
With the grill hot and ready and the chicken seasoned and prepped, grill the thighs over direct medium heat. Boneless chicken thighs take about 8 minutes, while the cooking time for bone-in thighs is 10-14 minutes. Use a meat thermometer by placing it in the thickest part of your thigh to test doneness. Once the internal temperature reaches 165 degrees, remove the chicken from the grill and allow it to rest for five minutes before serving.

Grill Over Indirect Heat

I know our tendency when grilling is to cook hot and fast from start to finish, but we can tear a page out of the low and slow playbook to really improve the overall texture and tenderness of our grilled chicken breast. The key is to bring the chicken up to temperature over indirect heat. This means you have direct heat going on half of your grill and no heat on the other half.
Your chicken breasts are going to be grilled on the indirect heat side of your grill where the heat is circulating and cooking the chicken without charring the outside edges of the chicken or burning those thin ends to a crisp before the middle is done. Your overall grill temperature should be hovering around 350 degrees F. This means you will have juicy, flavorful chicken from edge to edge!
Use a great internal thermometer in the thickest part of your chicken breast to check the temperature of your chicken as it cooks. I recommend an instant read thermometer from ThermoWorks. Your target temperature for this indirect cooking step is 150-155 degrees F before moving on to the next step. If you can keep your grill temperature at 350 degrees F, depending on the size of your chicken, this should take about 20-25 minutes.

Direct Heat To Finish A Grilled Chicken Breast
The last step to the perfect grilled chicken breast is a direct heat sear. This gives the chicken a few minutes on each side to crisp up and get all of that tasty grilled chicken flavor that we love. The key here is caramelization. The sugars in the marinade and seasoning we used will hit the high heat from the flames and start to bubble and brown.
Be careful to avoid overcooking and burning at this point. It will make your perfectly grilled chicken breasts taste bitter. You are looking for a target internal temperature of 160 degrees. Since chicken is safe to eat at 165 degrees F, this last tip is crucial. Transfer the chicken to a plate and cover immediately with a tight layer of foil. The carryover momentum from the heat rising within the chicken will create a little steam oven inside the foiled plate and push the final temperature up to 165 degrees F. This process takes about 5-10 minutes.
Dont Overcook This Is Super Important
Chicken doesnt take long to cook. If you over cook it, the chicken will be come dry and wont taste great.
If you pull it off right as the chicken is done, you will have moist and delicious chicken. On average chicken should take about 15 minutes to cook on a gas grill.
12 minutes if you chicken is thin and 20 minutes if you chicken is thicker.
You can also use a meat thermometer to check the internal temperature. The chicken needs to have an internal temperature of 165 degrees F.
I cant stress enough that you do not want to overcook the chicken!

Trim The Chicken Breasts
Picking the right ingredient is always a key step to ensuring you end up with great results. Make sure you are buying boneless, skinless chicken breasts. These often come untrimmed in the package with minimal processing. You can also buy them trimmed .
If youre not a fan of trimming chicken, buying them hand trimmed from the butcher can be a great time saver, just be aware it will usually cost you a bit extra per pound. If you want to save yourself some money, trimming yourself is a great way to go! Remove any dangling pieces of fat, rib meat, connective tissues, or loose pieces of chicken meat to create nice, uniform breasts.
No matter if you buy trimmed or trim yourself, be sure that your chicken is fully defrosted before you attempt the next steps. Having chicken that is frozen in the middle can cause several issues during the marinating and grilling steps. My favorite way to defrost is to set the chicken in a zip top bag and then onto a plate and onto the bottom shelf of your refrigerator. Make sure your bag is open to allow the chicken to breathe while defrosting. Most chicken breasts will defrost within 24 hours in the fridge.
Place The Chicken On The Grill
Put the chicken on the grill by placing larger pieces closer to a higher temperature and smaller pieces further away. Move pieces closest to the heat in the following order:
Everything will cook evenly, and nothing will burn, when chicken pieces are placed appropriately. With this arrangement, the total cooking time will be determined by the largest pieces . Expect about 45 minutes of grilling total.

Organic chicken meat often has a far better texture and quality of taste than non-organic varieties.
Also try to buy skinless. The meat in chicken breast is generally very lean, but the skin can contain layers of fat that can render and turn greasy when cooked on the grill.
