What’s The Difference Between A Griddle And A Grill Pan
These are two very different things. The names are sometimes casually interchangeable and both pans are designed for high-heat cooking, but a griddle has a smooth, flat, uninterrupted cooking surface. Its like a frying pan, but usually larger and often square. A grill pan, on the other hand, whatever its size or shape, has some arrangement of ridges.

How To Cook With A Griddle Pan
For both cast iron and nonstick, the technique remains roughly the same. While you can cook many things on a griddle pan, I found they work best for steak and veg , because these respond well to flash frying at high temperatures. So for testing I focused on these ingredients.
And the frying is easy. Thinly slice your veg, or keep your steak at whatever thickness you want it, and brush it with a high smoking point oil. The benefit of a griddle pan is you don’t need to oil the whole pan, just the food, leading to a less greasy end product.
You’ll need to preheat your pan, which takes up to five minutes for a cast iron, a little less for nonstick, on a medium-high heat. This ensures the whole surface is equally hot, meaning the food will cook evenly and your char marks will be more appealing. In general, I found centimetre-thin slices of aubergine and courgette cooked well in 2.5 minutes on each side, while a relatively thin steak only needs around 1.5-2 minutes on each side.
Don’t move the food around, as this will cancel out the sear marks. Trust yourself, and turn it halfway through cooking. A nice technique with steak is to rotate it 45 degrees on the same side to achieve alluring criss-cross marks, though this doesn’t add anything to the actual flavour.

Though our researchers came into testing as dedicated cast iron enthusiasts, by the time we cooked our last test meal, we knew to expect only fantastic results from this pan. There’s not much we’d change about this well-made grill pan from Danish manufacturer Scanpan. It’s made with a cast aluminum construction and a nonstick coating, free of PFOA and PFOS. Unlike most nonstick cookware, Scanpan’s nonstick coating is metal-utensil safe. The pan has narrower, closer-together grill ridges than most of the other pans we’ve seen, which sears and caramelizes more of the surface of the food that’s cooking, densely striping it with grill marks and imparting more of that delicious seared flavor.
The pan heats relatively quickly and uniformly, with no hot or cool spots, and the stainless steel handle stays cool and is comfortable to grip. This is an excellent question anyone should ask before purchasing a grill pan. While they are not prohibitively expensive, some of the pans do cost a significant amount of cash and you should do all the proper research before dropping it down.

Personally, I would always go with a chargrill marked steak than the one without them.
