And the frying is easy. Thinly slice your veg, or keep your steak at whatever thickness you want it, and brush it with a high smoking point oil. The benefit of a griddle pan is you don’t need to oil the whole pan, just the food, leading to a less greasy end product.

You’ll need to preheat your pan, which takes up to five minutes for a cast iron, a little less for nonstick, on a medium-high heat. This ensures the whole surface is equally hot, meaning the food will cook evenly and your char marks will be more appealing. In general, I found centimetre-thin slices of aubergine and courgette cooked well in 2.5 minutes on each side, while a relatively thin steak only needs around 1.5-2 minutes on each side.

Don’t move the food around, as this will cancel out the sear marks. Trust yourself, and turn it halfway through cooking. A nice technique with steak is to rotate it 45 degrees on the same side to achieve alluring criss-cross marks, though this doesn’t add anything to the actual flavour.
