Grilling Veggies With Cast Iron Pans
If youre already a fan of cast iron cooking, youll be pleased to know that you can sauté veggies with cast iron pans. Set your grill to medium heat, and once it reaches the optimal temperature, place the cast iron pan on it to preheat for five to eight minutes. Add a few tablespoons of butter, toss in the veggies, and let them sauté until they reach your preferred tenderness.
Is It Healthy To Grill Vegetables
Yes. Grilled vegetables are healthy options you can always add to diversify your daily menu.
Our experts understand your concern since subjecting vegetables to unnecessary grilling does reduce some of the nutritional value.
Just avoid grilling them to a crisp. Not only are charred veggies unhealthy and possibly carcinogenic, but they’re distasteful as well.
How To Clean A Stove Top Grill Pan
First of all, do not put your pan in the dishwasher because it should be hand washed.
For grill pans with a non-stick coating, you can use warm water and mild dish soap to clean them. There is no need to use an abrasive sponge. You dont want to risk scratching the finish on the pan.
Its different with a cast iron grill pan. I like to put some water into the ban and let it come to a boil. That hot water will help loosen any food particles. Then, I turn off the heat and let the water cool off a little. As necessary, I take a silicone spatula and push off any stubborn food particles.
After that, let your cast iron grill pan cool off more before pouring out the water and rinsing it with hot water. Dry off the pan with a towel.
Also, you may need to season a cast iron pan from time to time.

Grilled Okra With Cajun Rmoulade
Serves 4 to 6.
Note: From Steven Raichlen, for the New York Times.
Vegetable oil, for the grill grates
1 lb. okra
3 tbsp. melted butter
Cajun or Creole seasoning or blackening spice mixture, for sprinkling
For the Cajun rémoulade:
3 tbsp. Creole or Dijon mustard
1 tbsp. prepared horseradish
1 tbsp. pickle juice, optional
1 tsp. Tabasco or other Louisiana-style hot sauce, or to taste
1 tsp. smoked paprika
1 tbsp. chopped fresh chives
Set up grill for direct grilling and heat your grill to high . Brush or scrape the grill grate clean and oil it with a tightly folded paper towel dipped in vegetable oil and drawn across the bars of the grate with tongs.
Meanwhile, trim the ends off the stems of the okra, but do not cut into the pods. Lay 4 to 6 okra pods side by side, alternating the positions of the heads and tails. Pin crosswise near the heads and tails with toothpicks or short metal or bamboo skewers to form rafts. If the bamboo skewers extend far beyond the okra, snip off the long ends of the skewers. Brush the okra rafts on both sides with melted butter and sprinkle with Cajun seasoning.
Make the rémoulade sauce: Place the mayonnaise in a mixing bowl and whisk in the mustard, horseradish, pickle juice , hot sauce, paprika, Cajun seasoning and chives. Transfer to 4 or 6 small serving bowls.

A little dripping oil might cause a quick flare-up on the grill just lower the lid briefly to extinguish it. 3. Learn your grills personality. One grills high is anothers medium. Learn where the hot and cool spots are and move the vegetables around to cook evenly. For nice grill marks, give them a quarter turn. 4. Cook peppers, onions, and corn together. They dont need to be turned frequently so you can keep the lid down longer. Grill zucchini and eggplant together they need to be checked more frequentlyevery minute or so. 5. Im not a fan of indoor grilling for meat or poultry. But quick cooking fish like shrimp is definitely worthy of this special pan.

How To Grill Just About Every Vegetable
The summer grilling season is upon us, and so are the vegetables. When it comes to cooking summer’s bounty, it is hard to surpass an open fire. Grilling maximizes a vegetable’s flavor with minimal effort and a decided measure of showmanship. No one gathers around a stove to watch you boil or steam broccoli. But sear that broccoli over a hot fire on the grill, and you both become stars of the show.
The ultimate reason to grill vegetables is taste: Fire almost always makes them taste better. The high, dry heat of the grill caramelizes a vegetable’s sugars, intensifying its sweetness. Grilling imparts a subtle but inimitable smoke flavor, which adds complexity and soulfulness to a vegetable’s already vibrant taste.
But which vegetable, and what is the best way to grill it? Here, the story becomes a bit more complicated, because while every vegetable can be grilled, not all should be cooked the same way.
The key is mastering two basic methods and a couple of easy techniques.

Grilled Pepper Eggplant & Onion Compote
After many summers of grilling for my family and friends, Ive developed a strategy that solves a problem and opens up a great opportunity to be creative at the same time. By grilling vegetables ahead of time, I free up the grill for the steaks or chicken or burgers at dinnertime. And give myself the chance to turn my grilled vegetables into terrific salads, side dishes, and saucesor just arrange them nicely on a platter. Luckily, grilled vegetables are delicious at room temperature they dont need to be served hot off the grill. And they keep well, too. Grill a few hoursor a day or twoahead.
Ive also finally made friends with the gas grill. Its not a perfect relationshipI still think everything tastes better cooked over a charcoal firebut it certainly is a convenient one. So Ive adapted my favorite recipes and my techniques for prepping and grilling to the gas grill. Ive discovered that using a gas grill on its highest setting with the lid down, gives excellent results.

How To Grill Vegetables
No matter what kind of vegggies you’re grilling, get tender, perfectly charred bites every time with these tips.
While grilling is traditionally considered a meat-lover’s domain, there’s good reason to add vegetables to the mix. Subtle charring and a touch of smoke bring out the best in summer’s bounty. But to get them just right, different veggies require slightly different methods. Most vegetables are suited for high, direct-heat cooking, while dense or larger veggies may require par-cooking or a lower temperature.
How Do You Keep Food Warm On The Grill
Keep cooked meats hot by setting them to the side of the grill rack, not directly over the coals where they could overcook. At home, the cooked meat can be kept hot in a warm oven (approximately 200 °F, in a chafing dish or slow cooker, or on a warming tray.

Should I Marinade My Vegetables Before Hand
I would recommend not marinading your vegetables. I find that adding a marinade thats made with citrus or vinegars will break down your vegetables instead of keeping them crisp. If you would like to prep your vegetables ahead of time, you could cut them one day before and season with olive oil, salt and pepper then store in a ziplock bag in the refrigerator.
