At $1,678, the Kamado Joe Classic III may have a steep price, but it delivers plenty for the money. That means lots of kamado grilling accessories that don’t come standard with other grills, including the Big Green Egg Kamado. This kamado grill and smoker performs well too. In our slow-and-low barbecue grill test, we adjust grills to 225 F and let go of the controls to see what happens. In this trial, the Kamado Joe Classic III demonstrated excellent temperature control.

The grill got a little hot in the first 30 minutes but then settled down at the 1-hour mark. From there, this ceramic grill coasted on cruise control, parking the needle between 253 F and 219 F for almost 3 hours. Only the Big Green Egg turned in a tighter temperature curve, humming along for hours within the smoking sweet spot.

One feature that really sets the Classic III apart is something called the SloRoller. Billed as a “hyperbolic smoke chamber” by Kamado Joe, it’s an hourglass-shaped metal contraption that sits over the fire. The apparatus functions as both a heat deflector and a convection aid. Essentially it stops radiant heat generated by the coals from striking food sitting above . This prevents the meat from drying out during long cooking times. According to Kamado Joe, it also encourages air circulation within the cooking chamber.

Setup Process: Easy But Requires Muscles

The Kamado Joe Classic II is available from online retailers such as Amazon and gets delivered by a third-party delivery company. It was packed on a sturdy wooden platform surrounded by thick, heavy-duty cardboard sides. Inside, all the pieces were nestled securely with cardboard and Styrofoam, and we were able to unpack each individual piece and carry it to the area where we planned to set up the grill. The hardest part was moving the kamado itself. Even empty it weighs a couple hundred pounds, and we had to carry it up a steep flight of stairs to get it on our back deck. Making things more tricky, the instructions say not to lift the kamado by its handle or the band that wraps around it. You can only grab it by the rear hinge and the open bottom vent. Luckily, we had furniture-moving straps that allowed us to carry it from the bottom.

How We Test Kamado Grills

Testing kamado grills is an intense experience for a griller. It requires playing with fire and high temperatures, though in a controlled, responsible way. The most critical element to kamado performance is heat, specifically temperature control and how well a grill holds to one temperature. To smoke meat low and slow, that magic number is 225 F. Good smokers, kamados or otherwise, will stick to this temp for as long as 12, 15 or 20 hours. This means the temperature gauge is key and so is the ability to control airflow via air vents or dampers.

We monitor the internal temperature of the kamado grills as they go.

To capture temperature data, we put a thermocouple on each kamado grill. Essentially a sensitive temperature sensor made of a probe and a connected wire, the thermocouple hangs suspended just 1 inch above the grill grate. It’s connected to a data logger and ultimately a computer that records changes in heat levels over time.

Then it’s time to fire up each grill.

We try to run temperature tests on all the grills simultaneously. We also use the same weight and brand of lump charcoal , often from the same bag. That’s true of fire starters too .

A stable heat level is key to good performance for a kamado smoker.

We carefully fiddle with the vents to get there. Lastly, we let go of the controls and observe.;

We smoke ribs along with other food for anecdotal tests.

Like most kamado grills, the Char-Griller AKORN is egg-shaped with a hinged lid and cooking grates. But unlike traditional kamados, it features a porcelain-coated steel body rather than a ceramic one.

We received a gray grill to test, but this model is also available in blue or red, if you prefer a splash of color. The bumpy metal exterior doesnt show smudges, which are inevitable when cooking outdoors, and the double-walled construction kept the exterior cool enough to touch so the grill is safe when kids or pets are playing in the yard.

The firebox is a separate piece that keeps the flames away from the body of the grill. The removable warming rack was perfect for warming buns; we were able to rotate it out of the way when fussing with food on the grill. Folding side shelves offer convenient prep space , while wheels allow for more mobility. We loved that a squishy gasket protects the bottom edge of the grills heavy top. It seals the grill well when the lid is closed, and it makes closing gentle and quiet.

Other: No Smoking Accessories

While this product is billed as a grill and smoker, the smoking setup instructions required the use of accessories that were not included with the grill. While we were able to substitute a deep dish pizza pan for the not-included drip pan, we decided to purchase the smoking stone that acts as a heat diffuser and holds the drip pan below the cooking grate.
