- 24 hours before youre leaving for your trip, par-boil the ribs for 20 minutes in a large pot on your stove-top
- Transfer the ribs to a couple of zip lock bags and add the marinade. I like to double bag them just to make sure they stay sealed. Or you can place them in a disposable roasting dish. Which ever method works best for you for transporting.

The best part of cooking country-style pork ribs is that you can make extra and save the leftovers. We love to freeze our leftovers for easy ingredients on late nights or for a quick reheated meal. The leftovers and the flavors of this recipe lend themselves well to creating other dinners such as quick tacos, sloppy joe, and stir-fried rice.
If you decide to freeze your leftovers, we recommend setting your freezer to 0 degrees Fahrenheit and using a vacuum sealer to remove all the air from the package. This increases its shelf life and helps keep the fresh taste when reheated or incorporated into other meals. We like to use the Foodsaver bags and their product to do this. Especially because it can be reheated in the same bag used to freeze. By using a Foodsaver product we can freeze our meal ingredients for up to a year. If you dont have a Foodsaver product or similar, you can also use a ziplock bag making sure to remove as much air as possible when sealing. We would just recommend using your leftovers in less than 2 months.

How To Grill Country Ribs

Theyre also a fairly inexpensive cut, so they are great if youre grilling for a crowd.
The ribs should be cooked over a medium heat grill, around 350-400F for 7-10 minutes a side, depending on how thick they are.
Typically country ribs are often best to do low and slow, but keeping your grill temperature lower and cooking them for a little longer will help develop a nice crust on the outside and help keep the inside nice and tender.
The best way to tell if your country-style ribs are done is with an instant-read thermometer.
Youll want to remove them from the grill when they register 140-145F. Let them rest for at least 5 minutes before serving, so that they can get up to 145-150F, which is the recommended internal temperature for cooking pork.Remember, when cooking pork, a blush of pink is ok in the middle of the meat. You dont want to dry the meat out, and this is how you know you will have flavorful, juicy, and tender pork.
So Whats A Country Style Rib
True Country Style Ribs are cut from the blade end of the loin, close to the pork shoulder. They are meatier than other ribs, like baby backs or spare ribs and contain no rib bones, so they are all meat.
Some are often times cut from the pork shoulder but in traditional circles these are known as fake ones.
With the Mediterranean influence on these Grilled Country Style Ribs I opted to have a Shirazi Salad with Chickpeas.
Light, super easy to make and perfect for a picnic, BBQ or mid-week dinner.
What to do with any leftovers?
If there are any leftover ribs, I typically make my BBQ Pork with Cheesy Grits. Leftover pork ribs get shredded and simmered in your favorite BBQ sauce and top creamy, cheesy grits for a Southern inspired dinner thats sure to satisfy.

Choosing The Grilling Method
There are a few different tactics that you can use when making grilled country style ribs.
The method that I used in this recipe is a low and slow cooking style. This is great for ensuring that the meat turns out nice and tender.
At the same time, it does mean that you have to cook the pork ribs for longer.
Your other option is to crank the grill up to medium heat or 350 F. This is great for getting nice and crispy layer.
Here, you should let the meat cook for about 5 minutes flip it over and cook for 5 minutes more. Then flip the ribs over and baste. Wait for 5 minutes, flip, and baste.
If you are looking for the best of both worlds, then you can start by cranking up the temperature to 350 F on the grill.
Let the pork ribs cook on each side for about 5 minutes. Then, turn the heat down and cook for longer at a lower temperature.
Start basting about 30 minutes before the meat is done.
Prepare The Country Style Ribs For The Smoker
Country style pork ribs have a ton of internal marbling so they do not need to be brined in order to stay juicy when they get smoked.
I typically really on just a dry rub, smoke and barbecue sauce to flavor the pork but, if you have some extra time and want to add another layer of flavor then you can always soak the meat in this awesome pork steak marinade.
- 1/2 cup kosher salt
If you do decide to marinate the meat then let it soak in the refrigerator for at least one hour and up to four hours. After the meat marinates pat it dry with paper towels.
The most important part of prepping this cut is to remember that that country style ribs are created by running a Boston butt through a band saw. As a result there are often small bone fragments and dislodged fat deposits on the surface of the meat.
Do everyone a favor. Take a paper towel and wipe down both side of the meat to get rid of any bits and pieces left behind by the band saw.
When it comes to seasoning the meat I like to go with something on the sweeter side. You can use our Award Winning Rib Rub if you are looking for a homemade dry rub. You could also use this All Purpose Rub.

If you have a decent barbecue store near you then I suggest picking up some Meat Mitch pork rub.
Season the ribs liberally with your rub and let the meat site for at least 15 minutes to give the rub time to start melting into the meat.
You want the surface of the meat to look damp when it goes onto the smoker.

Can You Make Country Style Ribs In The Slow Cooker
While we always use the oven-baked version, you could make these boneless ribs in a crockpot too.
To do so, make the sauce according to the original recipe but reduce the vinegar to 1/2 cup. . Place the ribs in the slow cooker, cover with the sauce, and cook for 6-8 hours on low until they are fall off the bone tender.
After you remove the ribs from the slow cooker, pour the sauce into a saucepan. The sauce is thinner cooked in the slow cooker, so you may need to cook it down a little.
