Tips For Grilling The Perfect Steak

How to Grill Steak Perfectly Every Time
  • Season, then chill: I apply the same technique I use for getting crispy chicken and turkey skin to grilling this steak: season, then let it chill in the fridge uncovered for up to 48 hours. This essentially dry brines the steak while also letting it air-dry. This approach allows the surface moisture to evaporate while the seasoning has time to penetrate the meat resulting in deeply flavored steak that sears beautifully and develops a nice crust on the grill.
  • Start with clean grates: Just like you use a clean skillet with a little oil to cook dinner on the stovetop, you want to start with clean and oiled grill grates.
  • To flip or not to flip? Flip your steak to your hearts content. Harold McGee, food science writer and author of On Food and Cooking, discovered that frequent flipping creates a steak that cooks more evenly and quickly than those flipped only once.
  • Grilling directly on coals: Raichlen seemingly knows an infinite number of ways to grill meat, and theres one in his new book, Project Fire , that I particularly like: he cooks steak directly on hot coalsno grill grates necessary. I love the idea, and its on my list of things to try in the near future.

Charcoal or wood-fired grills are always the best choice for grilling steaks because of the additional flavor and charring they provide. If you have a charcoal grill, you also can add different kinds of wood to the fire to contribute smokiness and enhance the overall flavor of the meat.

Which Cut Of Steak Is Best For Grilling

When I first started working on this recipe, my top contenders for the steak were the ribeye , the rib steak , the porterhouse, and the T-bone.

Any of those cuts will taste great grilled due to the significant marbling of fat, which leaves the meat tender, and flavorful. Let’s take a closer look at each:

  • Ribeyes vs. Rib steaks: A ribeye has the bone taken out a rib steak, also known as a bone-in ribeye, is a ribeye with the bone in. Due to its extensive marbling, this cut cooks beautifully on the grill, bone in or out. Trim the thick fat from the outside edgeleaving it on will cause flame flare-ups that can give your steak an unpleasant burnt flavor. Don’t worry, trimming it off won’t result in lost flavor!
  • T-Bones vs. Porterhouses: People often confuse these two cuts, which is understandable because both cuts come from the loin and both have a T-shaped bone with meat on both sides. But porterhouses are larger and actually have more of the tenderloin than the T-bone. The U.S. Department of Agriculture’s Institutional Meat Purchase Specifications say the tenderloin of a porterhouse must be at least 1 1/4 inches thick at its widest, while that of a T-bone must be at least 1/2-inch.

Ultimately, I chose to use ribeye steak for its flavor, size, and the lack of bone — I wanted to slice and serve this steak family-style, and the fact that it doesn’t have a bone makes that easier.

How To Cook Ribeye Steak In The Oven

  • Be sure your steak is completely thawed.
  • Bring the meat to room temperature. Remove your steak from the refrigerator 30-40 minutes before cooking.
  • Set oven for broil and preheat 10 minutes.
  • Season steaks as desired we recommend Kansas City Steak Original Steak Seasoning.
  • Place steaks on the rack of a broiler pan. Position broiler pan in oven so that the surface of the beef is 3 to 4 inches from the heat. Broil to desired doneness, according to the times listed below.
  • For the perfect medium-rare steak, broil in the oven for 10-12 minutes for a 1-inch steak, and 12-15 minutes for a 1½ inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F.
  • Rest your steaks for 5 minutes before serving, covering lightly with foil. The temperature of the meat will continue to rise for as much as 5°F during this time . The final temperature will read 135°F.
  • Resting steak is also important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.

How Long Does It Take To Cook Steak On George Foreman Grill

Steaks come in a lot of variety T-bone, ribeye, tenderloin, sirloin, and some more. Cooking times vary depending on thickness and how do you prefer them.

Whichever you choose, always cook room-temperature steaks, dont grill it straight from the fridge. It takes about 30 minutes to let it come to room temperature.

The general rule of thumb is that for:

  • Rare steak its 4-6 minutes
  • For a medium-rare cook for 7-9 minutes
  • 11-15 minutes for medium
  • 13-17 minutes for a well-done steak.

Its certainly up to your preference, although the medium is considered the optimal serving for any type of steak.

Always use a well-preheated grill, and because its a contact grill, theres no need to flip the meat simply close the lid. Ribeye appears to be the finest choice for a George Foreman grill since it is so marbled, boneless, and juicy that it does not dry up readily.

How To Season Pork Steaks

How to Grill a Steak Cooked Medium | Tips to Grilling a Medium Cooked Steak #steak #medium

Pork shoulder steaks are a flavorful cut of meat on their own. They’re bone-in and full of rich pork shoulder meat. For that reason, they can be delicious on their own with just a bit of salt and pepper! But, I like to add a few simple spices to form an INCREDIBLE crust on the pork while it grills!

Once marinated, pat the pork steaks dry with a paper towel. This will prepare a nice, dry surface for your seasonings to adhere to. And, it will help you get a nice sear on the grill!

My favorite way to season pork shoulder steaks is with a combination of these four spices:

  • Brown Sugar
  • Garlic Powder
  • Onion Powder

I have recommended ratios for these spices in the recipe below, but please know that if you’re feeling lazy, you can just put a liberal shake of each over the top of the pork, and it’ll be amazing!

  • Rub the steak all over with a good lug of olive oil and a good pinch of sea salt and black pepper.
  • Add the steak to a hot pan, then cook for 6 minutes for medium-rare, or to your liking, turning every minute.
  • For more flavour, try one or a combination of the following
  • 12 . 2016 .

Rd Step: Mix The Spices And Ingredients

Mix all your preferred spices and olive oil in a bowl.

You can also remove the fat at this point, but for added flavor, its best to keep the fat. Once your steak has been set to room temperature, its time to give it some TLC .

Generously rub the mixture and make sure the meat is thoroughly coated. You dont want to waste all that goodness.

Once the seasoning is on, leave it for a couple of minutes just so the seasoning has enough time to seep into the meat.

Trust us, this step will seriously ENHANCE the flavor.

Whats Your Beef A Rundown On All The Different Types Of Steak

The good news is there are many names for the same cut. This is part of the confusion. But when you realize that in fact a Delmonico steak is the same as a strip steak, the long list of names is less daunting.

Lets start with one cow and work our way to the grill. The cow is divided into eight primal cuts: chuck, rib, short loin, sirloin, round, shank & brisket, plate and flank. Of these, all but the shank & brisket cut can be further cut into steaks.

As we know, not all steaks are equal. And an easy way to remember which cuts will be tender and which tough is to think about what a cow does all day. It eats. It walks. And yup, thats about it!

So, starting with the middle back where the muscles get no workout at all, these are your tender cuts: rib, sirloin, tenderloin. Move outwards and down to the working and moving parts of the animal and the meat will be leaner, muscled and tough: shank, chuck, brisket, round.

Now there are great ways to make all these cuts successful on the grill, but you need to know which method to use.

    What I Consider Medium Rare

How Long Do I Grill Steak. Best Perfectly Grilled Steak ...

Finally it is important to note that steak doneness is also an important variable. The rule of threes as I discuss is tuned to give you a medium rare steak.

Note that in the above cell phone picture that this ribeye is what I consider medium rare. Red almost pink throughout with no sign of gray.

So let’s put all these variables together and learn how to modify them as we need to. How does this apply to cooking a really thick steak?

Well the best example I can think of is a thick filet mignon medallion. These steaks are normally 2-3 inches thick. Will the rule of threes work? The answer is YES! But it is a “modified rule of threes.”

The one rule that I think should not be altered with the rule of threes is the three minutes of direct heat on each side of the steak.

When I cook over a high heat any more than 3 minutes on each side looks too burnt to me. Three minutes is just right for nice grill marks and a good char.

If the direct heat variables are locked this means that only the indirect times can be extended.

For a 2-3 inch steak the rule of threes will be modified to 3-3-4-4 or maybe even 3-3-5-5.

The extended indirect grilling time cooks the inside of the steak while not burning the surface of the steak.

Additional Tips On How Long To Grill Steak:

  • For best results, we recommend defrosting beef in the refrigerator, not at room temperature.
  • Dry your steaks thoroughly with a paper towel before grilling. Your goal in grilling is to grill the steak not evaporate any water moisture thats on the exterior of the beef. If youre going to use your own rub or traditional salt-and-pepper, thats even better and the moisture will evaporate with the rub.
  • Preheat your grill about 20 minutes before you start cooking. You want your grill to be hot so that when you place the meat on the grill rack it will sear on contact, not stick.Tip: If you dont know your grills temperature, you can use your hand to help gauge the heat. Place your open palm about 5 inches above the grill rack and start to count the number of seconds you can hold your hand in that place before moving your hand. If the fire is hot, youll move your hand in 2 seconds. You will be able to keep your hand there for about 5 seconds if its medium heat. If its a low temperature, you will move your hand in about 10 seconds.
  • Remove the steaks from the grill when they reach your desired temperature. Use a meat thermometer! Its the only real way to tell if meat is done.
  • Your steaks will continue to cook after you take them off the grill.
  • Make sure you let the meat rest. Not resting meat is one of the biggest mistakes people make with steak. If you dont let meat rest and you cut into it immediately, your plate will be full of steak juice and your steak will be drier.

You cant beat the flavor of a ribeye. If youre not familiar with how to cook this cut of beef, its simple on a gas grill. Follow the steps below to cook the perfect ribeye at your next backyard barbecue.

Ribeye steaks are one of the most flavorful cuts of meat because of their marbling, or fat content. The more marbling, the higher the USDA grades the steak. Prime is the highest rating, followed by Choice and then Select. Our experts recommend buying ribeyes that 1.25 inches thick with marbling throughout. Anything much thicker or thinner could make cooking more difficult, and the fat enhances the flavor.

Filet mignon is one of the thickest cuts of steak you can have, usually ranging from two to three inches thick.

For a medium rare cook, you should plan on a grill time between 5-6 minutes on each side. A medium cooked filet mignon will likely take closer to 6-8 minutes on each side. You may also need to move your filets to indirect heat and close the grill lid for a few more minutes to make sure the inside cooks to your desired temperature.

    1. Season the meat and allow it to rest before grilling!

You can use a wet marinade , or a simple dry seasoning to add flavor to your steak. Allow the steaks to rest at room temperature at least 15-20 minutes before grilling and season them about 10-15 minutes before grilling.

    2. Clean and oil your grill.

Turn your charcoal or gas grill to high and heat it for about 10-15 minutes before you start cooking. If you have a temperature gauge on your grill, look for it to reach about 450-500ºF. Otherwise, observe the coals or gas heat level to see if the coals are barely covered with ash or hold your hand over the heat and you shouldnt be able to handle it for more than about 3-4 seconds.

Use a grill brush to brush away any chunks of charred meat and drippings. To prevent the steak from sticking to the grill, soak a paper towel with some vegetable oil and use tongs to rub it gently over the grill rack.

    3. Sear and cook: only flip once!

The cook time of your steak will largely depend on the thickness of the steak. Heres a rough guide but use a thermometer for more accurate internal temperatures.

    • 1 inch thick : grill 3-7 minutes per side depending on desired doneness.
    • 1 ¼ inch thick : grill 8-10 minutes per side depending on desired doneness.

Only flip steaks one time during cooking.

    4. Use a thermometer to check for doneness.

    5. Let it rest.
