Is Grilled Chicken Better Than Broiled Chicken
Grilling and broiling are popular methods of preparing chicken. They both get high marks, but there are some things you should know about grilling vs. broiling. Chicken breasts can be difficult to grill because they tend to fall through the grill. But grilled chicken thighs are much easier. Plus, chicken thighs are a flavorful meat, so theyre perfect for barbecues and other grill events. Broiling is less time consuming than grilling, and it makes it easier to get every last bit of chicken meat. Broiling is also a good option if you dont have a grill.
Setting Up The Gas Grill
If you are going to use the gas grill this summer and have stored the appliance somewhere far, it is imperative to clean it before use. Ensure that the cooking grates are clean because rust in the grates and residue of previous grilling adventures can affect the food you are about to cook.
An essential aspect of grilling all foods is the temperature you grill the food at. The time the meal takes to grill invariably depends on the temperature you have set for heating it.
Like all other barbecue items, it is crucial to adjust the temperatures according to the needs of the chicken thighs. To make the perfect grilled chicken thighs, make sure that you have set the gas grill at medium-high flame this will give you a temperature within the 350 to 400 °F range.
Some grills are more comfortable to control than others, with outdoor temperatures playing a role as well. However, keep in mind that the average temperature required for pre-heating the gas grill is 350-400 °F this is regardless of grill type and the ease of use.
Garlic Chicken Thighs Marinade
I love marinades, and I believe they really help to add flavor to your meat. When you combine just the right ingredients in your marinade, they work together perfectly to create a balanced flavor profile and tenderize the meat before you get it on the grill.
All my marinades have the following 5 ingredients to create a perfectly balanced flavor:
- Acid- This element tenderizes the meat and adds that lip-smacking, come-back-for-another-bite flavor.
- Fat- Acts as a buffer between the acid and the meat to prevent the protein from breaking down.
- Salt- Every great marinade needs a savory element. Beyond flavor, salt acts on a deeper level helping deliver flavor to the interior of the meat itself.
- Sugar- Creates balanced flavors on your taste buds. Also acts as salt to convey flavor into the meat on a molecular level.
- Herbs and Spices- Punches up the overall wow factor of your marinade. Fresh herbs, garlic, onion, and chiles are all great options!
The marinade for these chicken thighs makes for the most amazing chicken ever. The chicken comes out crispy from the grill with a fresh herb flavor. The lemon and white wine add some brightness to the chicken and beautifully compliment the sharp garlic.

Grilling Tips For The Best Chicken Thighs
Wondering why you still cant get it right? Maybe these techniques will help:
- Buy good quality chicken. A healthy and hormone-free chicken will obviously taste MUCH BETTER than one thats pumped with chemicals. Go for all-natural and free-range options for amazing flavorno matter the cooking method.
- ALWAYS season your chicken well. Sprinkle on enough salt and pepper before grilling the chicken, so that its natural flavors become much more pronounced. When marinating, leave the sauce on for a few hours for the best results!
- Monitor the grill temperature. Some grills temperature readings arent so accurate, so pay attention to the heat. If your chicken is browning too quickly, decrease the flame!
- Keep a CLOSE eye on your chicken. If your grill is prone to flare-ups, move the chicken around so that it doesnt burn. Make sure its cooking evenly throughout the whole process!
- Use a meat thermometer. This handy kitchen tool is SO HELPFUL because it takes guesswork out of the equation. Although you can slice the chicken to check for signs of pink, using a thermometer is more effective to determine doneness.
- Try basting LAST! Although you place marinated chicken directly on the grill, some sugary sauces burn FAST, giving your final dish an unpleasant taste. Try basting when the chickens almost cooked through to avoid this!

Why Are Boneless Skinless Chicken Thighs The Best Option For Grilling
It’s that dark meat! Chicken thighs consist of “dark meat” which is richer in flavor and naturally stays moister than “light meat” when subjected to the aggressively dry heat of a grill. Plus thighs are more forgiving you can get away with slightly overcooking them and still get juicy results.
Having the skin and bones removed prior to cooking eliminates a few tricky variables like worrying about cooking the skin to crisp perfection and getting the ideal internal temperature with bones to contend with.

For boneless thighs, Perry and Bonom prefer using marinades or pastes, and they advise that if there is an acid in your marinade , marinate your chicken for a minimum of 30 minutes and up to four hours. “After four hours the acid starts to break down the muscle and give the cooked chicken an unpleasant mealy texture,” they say. “But two to four hours will give you great flavor.”

For bone-in chicken legs, Perry and Bonom like using dry rubs to add flavor. “The gentler cook over indirect heat helps to keep the spices from burning,” Bonom says.

Its important to note what type of grill you are using also. Charcoal grills tend to cook hotter. If you are using a charcoal grill reduce the temperature by about 25°F.

How To Make The Best Grilled Chicken:
Add all of the ingredients to a large zip lock bag.
Seal the bag and shake it around until the chicken thighs are well-coated in oil and seasoning.
Refrigerate for at least 1 hour, ideally 8.
If you use a gas grill: Preheat the grill to medium-high heat .
If you use a charcoal grill: Prepare your coals in a charcoal chimney to heat the coals quickly. Once the coals are hot, arrange them either in the very center of the grill or off to one side , so that there is a cool part of the grill where you can cook on indirect heat. If you dont have a charcoal chimney, arrange the coals in a pile on one side of the grill.
Place the chicken thighs on the grill grate over direct heat and grill for 3 to 5 minutes, or until the skin turns golden brown. Flip and sear on the other side for 3 to 5 minutes, until golden-brown as well.
Move chicken pieces to unlit side of grill and cover the grill. Cook, flipping occasionally, until internal temperature reaches 165°F.
Use tongs to transfer the chicken to a cookie sheet or plate. Let chicken rest 5 to 10 minutes before serving. This allows the juices in the chicken to distribute throughout the meat, producing an even more tender result.
Serve with your choice of side dishes and enjoy!

I absolutely love marinating and cooking with beer. Ive made so many great recipes with it braised beef, beer chili, beer brats, beer dip, slow cooker beef tacos. Its such an easy way to add flavor to a recipe, and its naturally acidic so its perfect for tenderizing meat.
This marinade uses beer as its base, just like my grilled chicken drumsticks, Ive instead of lemon and rosemary, I used balsamic vinegar, Worcestershire sauce, BBQ dry rub. The flavor is intense, and so so good. I know youre going to love it.
If you dont want to use beer in this recipe, you could substitute it with a soda. Root beer or Dr. Pepper would be great with the rest of these ingredients. I think ginger ale would work really well, too.

Why Should You Preheat Your Grill Before Cooking Chicken Thighs
First, you should preheat your grill to the recommended temperature if youâre using a charcoal grill or a pellet smoker. Itâs always best to preheat your grill on high settings and gradually lower the temperature. Doing so will ensure that you get the right temperature from the start and that the cooking time remains the same as estimated. It is because charcoal grills and pellet smokers take longer to reach the desired temperature.
On the other hand, a gas grill doesnât take much time to prepare. However, it would be best if you also preheated a gas grill with its lid close to the desired temperature for more accuracy.
If you donât preheat your grill before putting your food onto the grill grates, the estimated cooking time can go irrelevant or altogether invalid. Consequently, you may end up undercooking your food and exposing yourself to food-borne illnesses.
