Youre doing it wrong – how to make the perfect grilled cheese sandwich

If youre using an electric griddle, set the temperature to about 275 degrees. Or use a roomy saute pan over medium-low heat.

Place the sandwich on the preheated cooking surface and let it cook for about 5 minutes, checking occasionally to make sure its not burning . Its tempting, but dont press down on the sandwich! Unless you like your grilled cheese extra flat, in that case, go for it.

After the first five minutes, carefully flip the sandwich with a spatula and cook the other side for 5 minutes.

Flip and cook each side for a couple more minutes each. The bread should start to get golden brown and the cheese nice and melty.

After about 15 minutes of cooking over medium-low heat, increase the heat to medium and, turning every so often, watch the sandwich carefully until the bread is perfectly toasted a golden brown.

Tips And Tricks For Upgrading

Tip 1: One concern that I’ve heard about is that the air fryer makes the top piece of bread fly off because of the intense air circulation that goes on inside the appliance. To avoid this, you can simply stab the grilled cheese with a tooth-pic and voila – problem solved!

Tip 2: Don’t use any metal utensils to flip your grilled cheese. The nonstick is super important for the air fryer basket so you don’t want to use anything that might damage it.

    Flip the sandwich over and repeat on the second side, cooking for 2-3 minutes to get the initial grill marks and then turning the sandwich 90 degrees to create hashmarks.

    For years, I assembled the sandwich and then grilled it. But recently I came across a new technique I like a lot better. Lets call it: Open-face grilling.

    Open-face grilling allows the cheese to melt more thoroughly. The tradeoff is you can only make one sandwich at a time. But if its perfection you want, this is your method.

    • Put both slices of bread in the skillet butter-side-down
    • Arrange half the cheese over each slice. Once its halfway melted, invert one slice onto the other.
    • Press down lightly with a spatula .
    • Finish grilling as needed until the cheese is melted and both sides of the bread are golden brown.

    Open-face grilling makes it easy to insert accouterments like tomato slices or chutney midway through grilling. The partially melted cheese bonds to the filling and keeps it from sliding around.

    Grilled Brie Cheese With Fruit Sandwich

    Ingredients:

    • 4 slices multi-grain & seed bread
    • 2 TBS of butter at room temperature
    • 16 thin slices of brie cheese
    • 8 thin slices of peaches or 12 slices of large strawberries*

    *If you dont have or want fresh fruit, use an apricot marmalade or blackberry jam.

    Total time: 8 minPrep time: 5 min Cook time: 3 min Serves: 2 people

    I start by adjusting the toaster ovens cooking rack to the bottom position aka the area closest to the heat.

    Next, place your baking pan on the rack and preheat the toaster oven on the Bake setting. By preheating the pan youre creating a mini griddle. This is your SECRET WEAPON for getting the bread crisped and golden.

    Then spread one side of each bread slice with butter. Mayo works great too, we used it for this Toasted Caprese Sandwich.

    To assemble your sandwich:

  • Place one piece of bread on a cutting board.
  • Top with whatever cheese and extra fillings your heart desires.
  • Cover with the remaining bread slice .
  • Once youre ready, remove the preheated pan using oven mitts or gloves. Watch out it will be very H-O-T.

    Plop your sandwich down in the middle of the pan and return it to the toaster oven. A quick four minutes later the bottom bread slice should be lightly browned .

    Now, youve got to flip it!

    Yep, like a traditional stove-top grilled cheese, you need to flip your sandwich. Otherwise, the other side wont brown.

    Carefully remove the hot pan again and flip your sandwich with a spatula. I dont know why flipping a sandwich gives me such anxiety but if youre like me, take a breath its going to be fine, youve got this.

    Pop the pan back in the toaster oven and three to four minutes later your sandwich will be perfectly toasted. Let it cool slightly, so you dont burn your tongue, and then dig in!
