Monitor The Internal Temperature Of Your Halibut While It Cooks
Halibut is so easy to overcook that we recommend monitoring the fillet with a ThermapenÂ® Mk4 while it cooks. A few seconds too long and an otherwise perfect main course can be rendered unpalatable.
An instant-read thermometer, like the Thermapen Mk4, is ideal for checking your halibuts internal temperature as it sits on the grill. The Thermapens thin-tip probe is perfect for navigating the delicate flaky tissue characteristic of halibut.
As a general rule, fish takes a total of 10 minutes to cook per inch of thickness. This is just a guideline but can help you know what to expect. give half that time to each side of the filet, and monitor the temperature especially on the second side.

Fresh halibut is best during the spring and summer when its in season, between March and September. When selecting your fish, look for firm-textured flesh with a glossy and translucent appearance. Avoid cuts that look dry, dull, or have white spots on the flesh.
Halibut freezes well, so picking up frozen or previously frozen fish is okay. In fact, in some cases buying frozen may be the freshest option as the fish are often frozen on the boat right after theyre caught .

I try to grill some type of seafood once a week. Grilling seafood is easier than you think. Once you get a taste of it, youll be hooked! I always pass by the seafood counter at my local market to see what the catch of the day is.
Salmon is usually my go-to. It is readily available year round in most markets and can be purchased whole, cross cut steaks with the bone-in or boneless fillets. Salmon can be seasoned with a wide array of spices or rubs. Thats what I love most about it. One day Ill marinate steaks in a teriyaki recipe, and the next time, I will do a simple salt and pepper with lemon butter sauce.
Fresh halibut is another of my favorites. When in season, Im grilling it often. I like to season my halibut with olive oil, salt, pepper, garlic, and oregano. Once taken off the grill Ill squeeze fresh lemon over it.
You can even grill whole fish!! My local fishmonger from time to time gets whole fresh Mediterranean Sea bass. Each fish weighs about 1 to 1Â¼ pounds.

If steaks and burgers seem a little been there, done that, step out of your culinary comfort zone by grilling something your guests wont necessarily expectlike wild-caught Alaskan halibut!
Halibut is a delicious white-fleshed fish with a firm, meaty texture, which makes it a great alternative to grilling meat or chicken. The tender white meat has a somewhat sweet taste and therefore doesn’t need much seasoning. Not to mention, halibut is low in fat and rich in omega-3 fatty acids, making it a healthy choice when looking for a lighter meal.
Prepping Your Halibut

Fresh halibut fillets should seem translucent to light-green in color. Halibut skin is too tough to eat and is usually removed before or after cooking. The roe, liver, and cheeks of the halibut are all edible, and the bones are great for stock. Halibut cheeks, which are a delicacy, look like large scallops.
How Long To Barbecue Halibut
Cooking times vary based on the thickness of the halibut and if the meat is at room temperature before grilling. Almost all filets of this fish are between a 1/2 inch and 1 inch thick. Halibut should only be barbecued if it is at room temperature. It should be sitting out resting for at least one hour before barbecuing to get to room temperature.
For pieces that are 1 inch thick, barbecue them for 5 minutes per side. Almost all halibut filets will be finished cooking between 4 and 6 minutes each side. Be very careful to not leave the meat on the grill too long. This is where most people that are unfamiliar with this fish make a critical mistake by leaving it on the grill too long.
It should be noted that as halibut cooks it becomes flakey and can begin to fall apart. Use a fish spatula to flip the fish. Also, it’s difficult to get pretty grill marks or crosshatches on halibut since it’s only barbecued once per side. If you want to make pretty sear marks, you can try rotating the fish 90 degrees at the 2.5-minute mark. It looks a bit prettier this way, but it won’t change the way it tastes.

How long to bake halibut?
- Preheat oven to 400°F. In a large nonstick baking dish, add halibut skin side down and drizzle with oil. Top with garlic, parsley, lemon zest and 2 tbsp lemon juice, dividing evenly. Season with salt and pepper. Bake for 12 to 15 minutes, until halibut flakes easily when tested with a fork. Drizzle with remaining lemon juice and serve.
A 1-inch halibut steak will grill up in about 10 minutes over medium-high heat while thinner cuts and fillets can cook in as little time as 6 minutes. Turn just once during cooking to avoid having the halibut fall apart, and keep the heat at medium-high . Halibut is ready to eat when the meat is opaque through the middle.
