How To Cook The Perfect Pork Chop On The Grill

Pork chops are perfect to cook on either a gas or charcoal grill. This method will take 2 1/2 hours from start to finish. The brining will take about two hours and cooking time takes about 30 minutes.

What you will need:

  • A grill
  • Fuel for the grill
  • A pork chop rub
  • A pork chop glaze
  • Aluminum foil
  • *Rib chops are a great option since they are the pork equivalent of a beef rib steak. The combination of meat and fat on a good section of bone make this the best pork chop. However, any pork chop will work perfectly for this method.

    Trim the pork chops of any large pieces of fat to reduce flare-ups while grilling. Do not remove all the fat, just the large sections.

    Make sure to fully read the directions before starting. While the pork chops are brining, make the spice rub and glaze so they are ready when needed.

    Consider Pork Chop Thickness And Your Grilling Technique

    The final internal temperature of the pork chop leads us to consider the thickness of the chop and how the Saber® grill can expertly address these different thicknesses.

    My first piece of advice is not to buy really thin pork chops. While the Saber has the heat intensity to give some char marks before the pork is overcooked, it is still hard to do. Cooking thin pork chops on other less heat intense grills is basically completely impossible.

    So, choose pork chops that are a good 1-inch or more thick. Give them all the heat that the Saber can throw at them. The result is that they will reach 145°F internally and have restaurant quality char marks and intense caramelization on the outside.

    At the same time, if you cook the grand-daddy of pork chopsthe double boned chopa slightly different cooking technique is needed. First brown all the sides of the chop on high heat. Let the Saber develop those dark, rich flavors! Then, use the Sabers precise heat controls and lower the grill temperature to let the inside of the double chop reach 145°F without charring the outside too much. The result can be simply extraordinary.

    Step : Brine Pork Chops

    • Make brine: mix warm water with salt in a gallon-size freezer bag until the kosher salt is dissolved. Whisk in vinegar, brown sugar and ice, followed by pork.
    • Brine pork: add the pork chops to the brine make sure all of the pork chops are completely submerged in the brine. If necessary, top the brine off with some water. It can be helpful to place the freezer bag in a narrow bowl of liquid measuring glass to push the brine up over the chops. Brine pork chops for 20 minutes or up to 4 hours.
    • Rinse pork: thoroughly rinse pork chops otherwise they will be too salty. Pat very dry.

    How To Prepare Pork Chops

    Just like when preparing steaks for the grill, pork chops are easy to prepare. There are two ways I recommend preparing your pork chops for the grill. The first way is with a dry rub or seasoning. This BBQ Rub is excellent and pairs perfectly with pork adding a delicious, smokey flavor. After coating one side of the pork chop, gently press the seasoning into the pork with your fingers or palm, dont rub it in. Rubbing seasonings into any cut of meat tends to make for an uneven coating, making each bite inconsistent in flavor.

    The other way is by marinading. Marinading is a great method for cheaper, thinner cuts of meats which pork chops tend to be. Try this All-Purpose Marinade when your looking for added flavor and tenderness. To do this, first place the pork chops in a Ziploc bag and pour the marinade over them. Next, let as much air out of the bag as possible to allow the marinade to coat the pork evenly. Finally, allow them to marinate between 30 minutes and 3 hours.

    Juicy Grilled Pork Chops With Beer

About 30 minutes is needed to bring to room temperature. This is a perfect time to let the seasonings to soak into the meat.
    • Pre-season: Generously coat both sides of pork with salt and black pepper, or other preferred seasonings. Ill recommend some of my favorites later in this post.
    • Preheat the grill: Preheat the gas grill to medium-high. The grill should be hot before you add the pork chops to prevent sticking and create a nice sear.
    • Dont overcook: As with all meats, cook just to the desired doneness.
    • Let rest before serving: Let cooked meats sit at room temp 3 to 5 minutes to hold in more juices.

    How To Reverse Sear Pork Chops On A Grill

    One popular way to get the most smoke flavor, the perfect cooking temperature, and those appetizing grill marks, is to reverse-sear the pork chops.

    Set the Traeger grill temperature to 275 degrees Fahrenheit and preheat, with the lid closed, for 10 to 15 minutes.

    Because of the lower temperature, you’ll more than double the cooking time. Cook at the same temp for 60 minutes .

    After you reach an hour, you should remove the pork chops from your grill and set your temperature to 500 degrees Fahrenheit. Once the grill is hot, place the pork chop back on the grill and sear for three minutes per side or until they reach an internal temperature of 145 degrees Fahrenheit . Then rest for at least three minutes and serve.

  • Rib Chop: This is the most desirable cut of pork chop. It comes from the rib section and has a large bone running along one side. This cut is very tender with a nice pork flavor.
  • Loin Chop: This pork chop cut has a t-bone in the middle. It has two different kinds of meat on it, with loin meat on one side, and tenderloin meat on the other side. These two meats cook at different rates so it is a more difficult cut to work with.
  • Boneless Chop: This is the most lean cut of pork. It is very easy to over cook this cut and dry it out as it has very little fat, connective tissue, and doesnt have any bones. This is the most commonly sold pork chop cut in the United States, but it is certainly not the most desirable because it is lean, and so easy to overcook.
  • Shoulder Chop: This is the least desirable cut of pork chop and is not commonly found in American grocery stores. They have lots of flavor, but also have a lot of gristle and bones. This cut of chop is best braised.

Stir until all the salt and sugar has dissolved, then remove from the heat and stir in 2 cups of cold water along with 2 cloves of garlic. Set the brine aside to cool, then pour it into a large, heavy-duty zip-top bag and add the pork chops. Remove as much air as possible and seal tightly. Refrigerate the chops for 1 hour, turning the bag over after 30 minutes.
  • Prepare the chops: Preheat a gas or charcoal grill to medium-high heat . Remove the chops from the brine and pat them dry on both sides with paper towels. Sprinkle about 1 teaspoon of the Smoky BBQ Rub on each side of the chops and rub it into the meat with the back of a spoon. Alternately, you can rub them with a little olive oil and season with a pinch of salt and some freshly ground black pepper. Because of the salt in the brine, be careful when seasoning the outside of the meat.
  • Grill the chops: Oil the grill grates thoroughly and add the chops. Grill for 4 minutes on the first side, turn and continue grilling until cooked through, 3 to 4 minutes additional. You can check for doneness with an instant-read thermometer and remove the chops from the grill when they reach 135 to 140°F . Allow the pork chops to rest for 5 minutes before serving.

    As we mentioned before, pork chops are very easy to overcook and dry out if not prepped and grilled properly. So when you are grilling pork chops using a two-zone method it is important to know when to cover them and when not to.

    When you are cooking your pork chops over indirect heat have the grill lid closed to help them cook evenly. Alternatively, if you are cooking over direct heat to sear the chops, do not have the lid of the grill closed. You only want the high heat to cook the bottom side when you are searing. If you cook over high heat with the grill lid closed you risk overcooking the meat quickly.

    Glazing a pork chop adds a sweet flavor to the surface, creates a light crust, and helps to keep the chop from drying out. Ideally, the glaze should be simple with a sweet element to enhance the final flavors.

    Making a glaze requires constant attention since sugars burn quickly. A simple glaze recipe includes:

  • 1 cup apple jelly
  • 1/4 cup dry white wine
  • 2 tablespoons Dijon mustard
  • Combine all ingredients in a saucepan and heat while stirring. The glaze should be completely blended before using on the pork chops.

  • Reduce and set aside.
  • Preheat the grill to medium heat and oil the grates.
  • Season the pork chops on both sides with salt and pepper.
  • Put the pork chops on the grill, cooking for 2-3 minutes on the first side, then turn them over and brush some BBQ sauce on the tops and sides. Cook for 5-7 minutes.
  • Flip the pork chops again, brushing the BBQ sauce all over the tops and sides again. Cook for another 5-7 minutes.
  • Once the pork chops are done , take the pork chops off the grill.
  • Allow the meat to rest on a plate or cutting board, covered, for 5 minutes before serving.
  • Serve the juicy grilled pork chops with the remaining BBQ sauce if desired.
