What Is The Hot And Fast Method For Cooking Ribs

If you are new to smoking BBQ or havent tried this method there are important things to note before getting started. Hot and fast does not actually mean your grill should be blazing hot , but the temperature goal is much higher than what you would typically use to smoke meat.

Standard rib recipes typically sit between 225 F 250 F depending on the type of cook, the grill, and the griller. A hot and fast method is really all about keeping your smoker sitting at a 300 F for the entire cook. Believe it or not, that 50-75 F degree difference is a major game changer in the amount of time the ribs spend on the grill.

Rib cook times may vary slightly with this method, but typically my baby backs cook in 2.5 3.5 hours give or take. Below I will share more tips on how to know when your ribs are ready to be pulled from the grill.

Most of the time when people refer to ribs theyre referring to pork ribs.

Even though there are the popular beef short ribs and even other cuts of beef ribs, as well as lamb ribs, the vast majority of smoked barbecue ribs are pork. And there are three popular types of pork ribs you can buy:

  • Baby back ribs
  • Spareribs
  • Louis-style ribs
  • Learn how to tell your different pork ribs from each other in this video from the BBQGuys:

Baby backs refer to loin or pork loin back ribs. They are cut from where the rib meets the spine. The upper portion is named baby backs because theyre shorter in length compared to spares.

There are about 10 to 13 curved ribs from 3 to 6 inches in length. Theyre usually tender and lean.

St. Louis-style and spareribs are cut from the pork belly .

The slab shape is rectangular because the hard breastbone and cartilage are removed. Its flatter in shape compared to the baby back ribs and theyre easier to brown because they contain a higher amount of fat.

Theyre moist, juicy and very flavorful if cooked properly.

All pork ribs require low and slow cooking, otherwise theyll be hard and chewy.

Does it make a difference to the cooking time which cut you choose?

Yes, if you cook spares instead of baby backs, you will need to add more cooking time because baby backs are smaller compared to spares.

For example, if you cook both at 225 °F:

  • Baby backs 4 to 5½ hours
  • Louis-style / spares 5 to 6½ hours

Understanding The Difference Between Ready And Done

When it comes to good pork ribs there is ready and done. Just because theyre cooked doesnt mean they are at their best for eating.

Ready means that the internal temperature of the meat is a minimum of 145 °F , they are cooked and the meat is safe to eat, but you probably wont like it. The meat will be very tough.

Done means the ribs have had a chance to gain a higher temperature of around 190 °F to 205 °F . Getting to this temp melts the fat and collagens that makes them tough, and instead makes them moist, tender and delicious.

Ribs are cooked using a technique called dry-aging. This process involves exposing the ribs to smoke from wood chips. The smoke penetrates the meat and gives it a smoky flavor. Dry-aged ribs are usually served medium rare. Restaurants use a special oven called a smoker to achieve this effect. The oven heats the air around the meat, creating smoke. These disposable pans should be around one half the size of your grill. One pan will serve as the drip pan that holds the charcoal in place and prevents drippings from getting into the fire. Another pan must be full of water to help moisturize the grill and regulate the temperature.

There Is A Distinct Difference Between Grilling And Barbecuing

The main difference? Time. Barbecuing is a long, slow process over low heat, producing deliciously tender, juicy meat from cuts that may be tough and dry when cooked more quickly. Grilling is reserved for chicken breasts and burgers, which are cooked over high heat for a short period of time.

Now, I understand that I am lucky to live in the great state of Texas where we know good barbecue from bad and most people have the luxury of space to hold at the very least a charcoal grill. Which is what we have in our backyard, alongside the trusty gas grill.

While it might be ideal to BBQ ribs in a smoker, those are a little harder to come by, even for Texans. The amount of use a smoker would get in our backyard just doesn’t justify the cost or amount of space it would take up. So the charcoal grill will do just fine. And that’s how we made these delicious baby back ribs.

I say ‘we’ because I am not the resident griller in the Table household. That job is for Mr. Table. He enjoys drinking a cold beer, manning the fire and cooking meat all day. And he’s good at it. So in this case, I’m just here to prep the food and explain what’s happening.

How Do I Add A Smoke Flavor To My Ribs

You can get a perfectly smoked flavor with a gas grill! When we want to add a nice smoke flavor, we use a smoke box that sits right on your grill grate while your food cooks.

You will use wood chips or pieces that come in a variety of choices. With St Louis style ribs we really like the apple wood chips, but you experiment and try different flavors!

Heat the smoke box up on the grill grates Using long tongs, open the box and add the wood chips. Alternately you can heat the box with the wood chips in it to not burn yourself.

Once the grill has smoke coming out of it, lower the temperature of the burner that the box is on. Add the ribs and cook as directed. If you are cooking indirect heat, put the box over the middle burner that will be off when cooking the ribs.

How Do I Prep My Ribs

    How to Grill Ribs Fast

Depending on where you buy your ribs and your comfort level, you can ask your butcher to prep your ribs for you. I personally enjoy processing my own, but do what works for you here!

Start by patting your ribs dry and removing moisture from all over the meat. I peel off the back membrane and look to see if the ends are too thin and need to be trimmed at all to create an even cook. Trim and remove any silver skin and feel around the sides of the ribs for any smaller bone fragments and trim those as needed.

For dry rub ribs, I typically go with mustard as a binding agent for the dry rub. Spread on a very thin layer both on the top, sides, and under the ribs on the bone side as well. You can use your favorite store bought rub or make your own. If you want a good keto all purpose rub then try this recipe as well. Spices like chili powder, paprika, and cayenne pepper will give it some flavor, color, and a little kick.

Sprinkle a nice layer of rub all over your meat and let it rest. Dont actually rub the rub in , but pat it on if needed. I like to let mine sit while the grill preheats for at least 30 minutes to get the rub soaked in and sweating.
