How To Grill Prime Rib

Rule #1: Use An Instant Read Thermometer Not A Leave

How to Grill Prime Rib Roast | Recipe

Leave-in thermometers offer convenience, but they’re inaccurate. The problem is that they’re made of metal, which ends up conducting heat into the meat in the region around the thermometer. This leads to falsely high readings. In my testing, I found that a leave-in thermometer will register about 5 degrees higher then an instant-read thermometer inserted into a similar part of the roast. Moral: you can use the leave-in as a general guide and an early alarm, but make sure to double-check with your instant-read.

How To Grill A Perfect Ribeye Steak On A Gas Grill

You cant beat the flavor of a ribeye. If youre not familiar with how to cook this cut of beef, its simple on a gas grill. Follow the steps below to cook the perfect ribeye at your next backyard barbecue.

Ribeye steaks are one of the most flavorful cuts of meat because of their marbling, or fat content. The more marbling, the higher the USDA grades the steak. Prime is the highest rating, followed by Choice and then Select. Our experts recommend buying ribeyes that 1.25 inches thick with marbling throughout. Anything much thicker or thinner could make cooking more difficult, and the fat enhances the flavor.

How To Prepare Your Prime Rib

You generally wont need to do much, if any, trimming, so simply trim any fat that is over an inch thick. If you do trim, make sure you always leave a quarter of an inch of fat, dont trim it off entirely.

If your cut is still bones-in, take them out and tie them to the base of the roast. This will provide you with the best flavor. To remove the bones, simply cut along the top of the bone and it should slide out. Then tie the bones onto the roast with wine at the base.

Next, marinate, inject, or rub your prime rib, as preferred. You dont need to marinate or inject your prime rib to see good results, since it will retain a lot of moisture naturally. For rubs, you can buy readymade rubs, use a recipe, or create your own if you know what you like!

Prime Rib Roast Cooking Internal Temperature Chart:

The chart below is only a guide. You must rely on an accurateMeat Thermometerand start taking temperatures about 45 minutes before the end of the estimated roast time. Reminder: Instant-read thermometers are not meant to be left in the roast during the cooking process.

What constitutes rare and medium-rare cooked meat?

To satisfy government home economists, the Beef Council says rare beef means an internal temperature of 140 degrees F. Well, that is ok if you like well-done and dry meat. If you like moist, rosy meat , rare begins at an internal temperature of 120 degrees F. and starts to become medium rare at 125 to 130 degrees F. To cook your meat properly, you must purchase and use a good instant-read digital meat thermometer.

This is the type of cooking and meat thermometer that I prefer and use in my cooking. I get many readers asking what cooking/meat thermometer that I prefer and use in my cooking and baking. I, personally, use the Thermapen Thermometer shown in the photo on the right. How to Grill Prime Rib Guide

A common question people ask is How much prime rib roast should I buy per person? A full prime rib roast is seven ribs, close to 15 to 18 pounds, and enough to feed a crowd of 14 or more people . The term standing means the bones are included in the roast, thus the roast can stand by itself. A prime rib roast comprises of seven ribs starting from the shoulder down the back to the loin.

Do not even bother with less than a three-rib roast, any less than that is not a roast but rather a thick steak and would be better treated as such. For a generous serving of roast, figure on two people per rib. That means if you plan to serve:

two people one rib roast

six people three rib roast

eight people four rib roast

ten people five rib roast

twelve people six rib roast

fourteen people seven rib roast

Rule #1: Use A Thermometer

Timing is at best a loose guide to when your meat will be ready. It can’t take into account variables like oven cycles, fat content, convection patterns, or nosy relatives poking their face in the oven every few minutes. A thermometer is the only way to guarantee perfectly cooked meat, and a good instant read is the best one for the job. Aim for 115 to 120°F for medium rare , or 125 to 130°F for medium . And remember, a roast will continue to rise by 5 to 10°F as it rests , so make sure to pull it out early to account for that!

What Temperature Should I Cook My Prime Rib On

Prime Rib on Gas Grill!

Among some of the worst methods Ive seen for cooking a prime rib, is to start cooking at like 500°. Thats usually followed by some unreasonable formula of cook time per pound of meat. I can assure you, cooking a prime rib this way will turn out a prime rib that looks like this:

Seriously, check out social media and other recipes for prime rib and youll see pictures just like the above. This high heat results in the outside of the roast being well-done, and it fades gradually to a medium-ish center. The best piece of the prime rib as you can see, is cooked to baseball glove level.

Most of these recipes also call for a drip pan to collect the beefs juices. Of course, when youre incinerating a roast at these high temps the meat is going to contract and squeeze out all those juices. Its nice to catch them for an au jus of course, but I want my juices in the meat, not collecting below the meat.

Anyway, I digress. Who wants to eat something like the above prime rib? Certainly not me. If youre about a roast that looks like the one pictured above, Id encourage you strongly to just save the money on the prime rib and instead just make yourself some chicken. Im kidding, of course, and if youre a well-done person, Im sure its not the first time youve heard this type of joke. So, in summary, keep those temps low and allow the prime rib roast to gradually and evenly come up to your desired temperature for doneness. For me, medium rare is perfect.

Resting The Prime Rib Roast

Grilled Prime Rib Roast

When the meat has reached the designated temperature, remove it from the grill and place it onto a cutting board or other flat surface. Tent loosely with aluminum foil and let it rest for at least 20 minutes if not an hour.

During this resting period, the meat fibers will relax and reabsorb some of their lost juices, leading to a more tender and flavorful meat. Additionally, this extra time allows the residual heat inside the roast to distribute evenly, raising the temperature by about 5 degrees and ending the cooking process.
