And when seasoned and cooked correctly, even my recipe for basic sauce-less grilled chicken breasts can taste flavorful and juicy every time.

Most chicken eaters prefer the white meat of chicken breasts. So for chicken thats cooked quick, I use basic, skinless, boneless chicken breasts. Of course you can use this same cooking method for skin-on, bone-in BBQ chicken breasts, or for legs and thighs too. The technique is the same, the cooking times will vary.

Larger chicken breasts do not always translate to better chicken. Bigger breasts take longer to cook, and cook unevenly or overcook. Look for chicken breasts that are between 6 to 9 ounces per piece. How To Make Grilled Bbq Chicken Thighs:

Place the chicken thighs into a large bowl. Sprinkle the garlic powder, onion powder, paprika, salt, and pepper over the thighs. Toss to coat the chicken in the spices. Cover with plastic wrap and place in the fridge to marinate for 2 hours or use immediately.

Preheat the grill to medium heat and oil the grates. Once the grill is hot, place the chicken thighs, skin side down. Do not touch it for 7 minutes, or you can move them at a 45-degree angle to form diamond grill marks halfway through.

Flip the thighs over and let cook for 3 minutes. Brush the chicken on the side facing up lightly with bbq sauce, cook for an additional 3 minutes.

Flip the chicken again, and brush lightly with more bbq sauce on this side. Cook for 2 minutes. Flip one last time, and brush again with bbq sauce, the skin side should be up at this point. Continue to cook until an internal temperature reaches 165°F. About 20 total minutes on the grill.

Your total grilling time for this recipe comes down to how long your chicken breasts take to get to the right internal temperature. When they reach an internal temperature of 155°F on an instant-read thermometer inserted in the thickest part of the breast, take them off the grill. Cover in foil and let rest for 5 to 10 minutes. The breasts will continue to cook and reach the recommended 165°F internal temperature.

Generally, it will take about 40-60 minutes. The key is to cook your chicken leg quarters over the most direct heat on your grill.

Any chicken you cook should have the internal temperature reach 165 degrees F before removing it from the grill. It is also important to let your chicken rest for 5 minutes before digging in. If you do not have an instant read meat thermometer, another way to tell if the chicken is done is whether or not the juices run clear when you cut into the meat.

  • Line your baking sheet with foil. BBQ chicken is messy and sticky prepping the pan with foil makes for way easier cleanup.

  • Meanwhile, reduce the sauce. Right after you get the chicken in the oven, pour a bottle of your favorite BBQ sauce into a saucepan and bring to a simmer. The sauce will take about 25 minutes to reduce by half and should sync up nicely with the cooking time of the chicken.
  • Crank up the heat to finish. Rather than turn on the broiler and risk burning the sauce in the final minutes, coat the chicken with the reduced sauce and turn up the ovens temperature. This makes for chicken that is sticky and burnished all over.

  • Brine the chicken. This is an optional step, but one that really helps keep the chicken juicy. Combine water and salt, then add chicken and let sit for 20-30 minutes.
  • Soak the wood chips. You dont want them to burn, so add the wood chips to a bowl and cover them with water. Let them sit while your chicken is brining.
  • Make the dry rub.
  • Discard brine and season chicken. Remove chicken from brine, rinse, and pat dry. Coat chicken with olive oil spray and sprinkle with rub.
  • Make a smoker box. Drain wood chips. Fill an aluminum foil pouch with drained wood chips, seal and poke a few holes in it to allow the smoke to come out.
  • Start the grill. Start grill on HIGH, place 1 pouch of wood chips directly over the heat until you see smoke coming through the holes of the foil pouch.
  • Grill chicken. Lower the heat to be about 350°F. Slide foil pouch over to the side, and add chicken. Cook about 9-10 minutes per side, with the lid closed.
  • Baste. Baste chicken with bbq sauce and cook another 2-3 minutes, flipping once more, until chicken is finished cooking.
  • Remove chicken from grill and brush with additional bbq sauce.
