- Low heat it takes a little patience to make the perfect grilled cheese. Keep your heat on low to give the cheese time to fully melt while the bread gets golden and crisp. If browning too fast, turn the heat down.
- Butter generously the amount of butter may seem like a lot, but it is important for a crispy exterior.
- Use thick-sliced bread we love using Texas toast because its sliced about twice as thick as normal sandwich bread. You want bread that is about 3/4 to 1 thick, but also avoid bread that is too thick or your cheese wont melt properly. Using bread that is too thin will produce a flimsy and sometimes soggy sandwich.
What Pan To Use
I prefer to use my cast iron skillet as it maintains a consistent heat better and gives a superior crispy surface. A nonstick skillet works well and prevents sticking if using sweeter types of bread. In either case, you want to use very moderate heat for making the sandwiches, about medium-low or low if the bread is toasting too quickly.

Frying In Extra Butter
If you like extra crispy bread and a little more grease, you can add some butter to the pan to fry the grilled cheese. Just watch for the browning of the butter solids, you dont want that to become burnt. If this happens, wipe the pan clean if needed, and in between batches when making more than two sandwiches.

For one sandwich at a time, I like a 10-inch cast-iron skillet.

Oh the great debate. Should you add mayo to the outside of your bread or not? Honestly, its all about preference. I grew up keeping my grilled cheese sandwich super simple. Bread, butter, and cheeseno mayo.

I grew up eating grilled cheese sandwiches that consisted of a single slice of American cheese productyou know the ones, individually wrapped in plasticyeah those melted between two pieces of white bread. It doesnt get much more simple than that, and that comfort food was delicious alongside a bowl of tomato soup straight out of the can. I think those fond memories are mostly because I didnt know any better.
Today, Im talking not only about how to make grilled cheese, but how to make the most incredible grilled cheese sandwich youve ever eaten. This grilled cheese recipe uses three, ok technically four, different cheeses and a hefty dollop of maple bacon onion jam making it gourmet level. Definitely not the type of grilled cheese I grew up eating.
What might be more important than this recipe, is the technique I use to make grilled cheese. Youve probably seen these made by buttering one side of each slice of bread. I butter both sides of the bread, more on that later. You may have also seen this classic sandwich made with a thick slice of bread, think Texas toast style. I dont recommend that either and well get into why in the Tips section.
Best Cheeses For Adding A Punch Of Flavor To Grilled Cheese //
Roth Gouda is a great melting cheese as well, but also has a distinct flavor that can only be found in a Gouda cheese. Punch it up even more and use a Smoked Gouda. I love this with thin slices of apple and Dijon mustard.
Buttermilk Blue is creamy, tangy, and mellow. I love the unexpected punch of blue cheese in a grilled cheese sandwich. It is too much for me on its own in a sandwich but paired with Havarti, there is plenty of blue cheese kick that is mellowed out by the creamy cheese. For this sandwich, I like a thin layer of fig jam and some prosciutto slices on a fruited bread with some finely chopped rosemary inside.
Chèvre might not be the first cheese you think of in a grilled cheese, but believe me when I tell you, it works. This goats milk cheese is tangy, but also mild. This is particularly delicious on an open-faced grilled cheese. I like to melt Gouda on the bottom, spread Chèvre on top of that, sun-dried tomatoes, basil, and a handful of arugula. Its a knife and fork-er, but a perfect brunch sammie.
