Can You Freeze A Grilled Cheese Sandwich
Put each assembled sandwich into a labeled bag and remove air before closing. Place bags in a single layer on a flat baking pan or tray. Put pan in freezer for an hour or until sandwiches are firm. Place sandwiches in larger freezer bag, remove air before closing and store in freezer for up to 3 months.
How Much Cheese To Use
This is a very personal issue. Its possible to overdo it, but no one wants a skimpy grilled cheese, either. Theres plenty of space in the middle ground.
Two ounces of cheese per sandwich is a good rule of thumb, but a better rule of thumb is to eyeball it. Three ounces gives you a more decadent grilled cheese. Its your call!
Either way, grate as much cheese as you need to pile loosely on both slices of bread. A good, fluffy handful should do it.

Ruth Reichls Diva Of A Grilled Cheese
“Ruth Reichl has been publicly aligning herself with grilled cheese for a long time,” writes Genius Recipes columnist Kristen Miglore. This recipe uses the mayo trick: that is, a smear of mayonnaise on the outsides of the bread , which crisps up golden and delicious on the griddle. But don’t worry: There’s butter, too, inside the sandwich.

An Important Note About Baking Time
The time it takes to make grilled cheese in the oven depends on several factors, including the bread type , the thickness of the bread slices, and the temperature of the cheese, as well as the general quirks of your oven. Keep a close eye on the sandwiches the first few times you try this method until you learn the best timing for your oven and choice of bread.

Making More Than One Grilled Cheese At A Time
For me, its easier to use a 10-inch skillet and grill just one or two sandwiches at once. Unless you have an amazing stovetop with giant burners, its difficult to have even heat distribution across a very large skillet, leaving your sandwiches with pale patches.
Need to make a bunch of grilled cheese sandwiches all at once? Try it in the oven:
The sandwiches wont be quite the same, being baked rather than grilled, but theyll all be ready to serve at once.

Watch Closely & Stir Often
Melting cheese is not one of those set it and forget it cooking tasks. Whatever you do, dont leave the cheese unattended on your stove. If you do, it will likely burn and be ruined.
Stir the cheese frequently to keep it moving around the pot. This step will ensure the cheese is evenly melted through and prevent it from sticking to the pot and/or burning.
The Best Pan For Grilled Cheese
The pan is just as important, if not more so, than the bread and cheese. A flimsy skillet will grill your sandwich unevenly. A skillet thats too small makes it hard to maneuver the sandwich.
For one sandwich at a time, I like a 10-inch cast-iron skillet.
Grilled cheese sandwiches dont really stick to the pan, so if you dont have a nonstick pan, its fine. I prefer a cast-iron pan.

Common Mistakes That Ruin Your Grilled Cheese
The grilled cheese sandwich is a classic. Perfectly melted and rich cheese, sandwiched between two slices of golden, crispy, fatty bread its simple, comforting, and utterly timeless. It was one of the first things we learned to cook and one that we carried with us throughout the years.
But as basic as this sandwich is, there are a few hanging points that can stop you and the grilled cheese of your dreams. Dont let it happen to you.
To have a perfect grilled cheese sandwich you should avoid these mistakes
Melted Butter Is A Must
The key to an evenly-greased and toasted bread is to brush the top and bottom of the sandwich with melted butter. You can microwave the butter and easily brush the liquid on each slice. This allows you to control how much of the fat is applied so it doesnt get too soggy.
Do this step right before adding to the preheated pan. If you have salted butter, that would enhance the flavor further. The milk solids in the butter transform into nutty, deep golden brown hues when gently heated and this elevates the taste and texture.

What Pan To Use
I prefer to use my cast iron skillet as it maintains a consistent heat better and gives a superior crispy surface. A nonstick skillet works well and prevents sticking if using sweeter types of bread. In either case, you want to use very moderate heat for making the sandwiches, about medium-low or low if the bread is toasting too quickly.

Best Grilled Cheese Recipe
When done correctly, a classic grilled cheese sandwich has the perfect contrast between crunchy bread exterior and creamy melted cheese filling. Its one of those fast and easy meals to serve picky eaters. But when paired with a big bowl of tomato soup, its the ultimate adult comfort food.
To satisfy our immediate cravings, the misconception is to crank up the heat and get the cheese melted fast! However, its quite the opposite. To make sure the bread gets evenly toasted and the middle completely gooey, patience and low heat is the answer. Melted butter also helps with crispness, but not too much otherwise youll get greasy results. Ready to go over the science behind making this well-loved sandwich at home?

Start With Quality Ingredients
Use a hearty slice of bread, but not too thick. I find that 1″-1.5″ is best depending on the type of grilled cheese that I am making. Anything less than 1″ will make a flimsy, soggy grilled cheese and anything too thick will not allow the cheese to melt properly.
Thick-cut classic white bread that you find in the super market can work, but avoid Wonder Bread or similarly squishy bread. Some of my favorites include sourdough, brioche and farmer’s bread.
You may be tempted to grab those individually wrapped little processed orange cheese slices. They are quick and easy, but will not give you the best-tasting grilled cheese. Go for a block of natural cheese that tastes good and melts well.
My favorites are sharp cheddar, Gouda, Gruyere, and Havarti. Be sure to thinly slice or shred the cheese so that it melts evenly. DO NOT use pre-shredded cheese. It contains a coating that prevents the cheese shreds from sticking to each other, which is not ideal for melting.
