Don’t feel like babysitting your vegetables on the grill? Try cooking them in packets instead. This method works great for dense vegetables like potatoes, sweet potatoes, or other root vegetables. Simply place a 24-inch-long piece of foil on the counter and lightly coat with nonstick cooking spray. Arrange thinly-sliced vegetables on a single layer, slightly overlapping, on the foil. Leave a two-inch border on all sides. Fold foil over and pinch the edges together, making a packet. Place the packet on the grill. Cover the grill and cook until the vegetables are tender . When you open a packet to check doneness, be careful of steam.
Advice For Serving Roasted Vegetables
Serving roasted vegetables is very simple. Youll want to add a bit of salt and some pepper to the vegetables before you eat them.
Some people also choose to add certain herbs and spices to the vegetables to make things a bit more interesting. You dont have to do this, but it could improve the experience depending on what you like.
Its best to season the veggies before you take them out of the pan if possible. Throw in the seasoning that you wish to use and then toss the vegetables along with the oil.
Once this is done, youll be able to remove the vegetables and put them on a plate or in a bowl to be served. Discard the oil in the pan properly and then you can go sit down to eat.

|2 zucchini, thinly sliced|
|2 red onions, thinly sliced|
|1 yellow onion, thinly sliced|
|1/2 lb mushroom, sliced|
|2 ripe tomatoes, cored, chopped|
|1/3 cup pitted olive, halved|
|4 naan bread or 4 pita bread rounds|
|2 tablespoons shaved parmesan cheese or 2 tablespoons crumbled goat cheese|
- Prepare a grill for high heat. Place eggplants, zucchini, onions and mushrooms in a large bowl. Pour oil over vegetables toss to coat. Place vegetables on a large piece of heavy duty foil with edges folded up to hold in juices.
- Transfer vegetables carefully to the grill. Cover grill and cook for 20 minutes. Add tomatoes to veggie mixture. Cook, stirring occasionally, until vegetables are tender, about 8 more minutes. Carefully slide a large cookie sheet under the foil to remove the vegetables from grill. Add olives to vegetables season with pepper to taste and set aside.
- Brush naan or pita with olive oil. Grill bread, turning once, 1 minute. Place naan or pita on plates top with vegetables. Top with Parmesan or goat cheese.

Can You Use A Grill
Many people wonder whether you can use a grill to roast vegetables or not. Technically, the answer would be no because grilling is a different cooking method.
However, you can get very similar results if you use your grill to prepare vegetables. If you only have access to an outdoor grill, then you can still make tasty vegetables that will turn out very similar to roasted veggies.
You can heat up your grill and then place vegetables on a sheet tray of some sort. Line the sheet tray with parchment paper so that it will be very easy to clean things up when youre done.

Can You Use Olive Oil Ninja Foodi Grill
Ninja specifically states to NOT cook any foods in the Ninja Foodi Grill with olive oil. If you marinate your foods I would suggest to just pat them dry a little bit before you put them into the Foodi Grill, its just better to be safer than sorry, and its less wear and tear on your Foodi Grill over time.

Its a lot more affordable than buying an oven for young college students. In fact, some of the most common owners of portable stoves are college students who live in dorm rooms.

How To Fire Roast Vegetables On The Grill
Step 1: Heat up the Bbq grill to medium high-high.
Step 2: Select the veggies you would like to fire-roast, wash and dry them, then put a very light coat of oil on over the top. We use sunflower, safflower or olive oil as they have a medium smoke point. Or even easier, use a liquid oil spray.
Step 3: Place veggies on the grill. Let them sit until you begin to see char marks.
Step 4: Turn or rotate vegetables to their different sides until all sides are charred. The whole piece does not need to be completely black, dont overcook it. What you are looking for in peppers is black char marks or a blistered skin. In tomatoes, its a slight char with blistered, split, orange tinged skin. Onions, look for a nice char as basically you are just caramelizing it for sweetness and flavor.
The roasting process takes between 7-10 minutes usually depending on how hot your grill is. Once satisfied with char, remove veggies from grill.
Tips For Grilled Veggies
- Cut each variety of vegetable into evenly sized pieces so that they cook at the same rate.
- Some vegetables take longer to grill than others denser vegetables such as carrots and potatoes need more time on the grill.
- You can grill your vegetables directly on the grates, use a grilling basket, or skewer your veggies to make kabobs
- I like to finish my vegetables with a sprinkling of parsley. If you dont have parsley on hand, other great options include green onions, thyme, basil or dill.
- This recipe calls for dried Italian seasoning, which is located in the spice aisle of most grocery stores. This seasoning is a blend of dried basil, oregano, parsley and garlic powder. If you cant find Italian seasoning, you can make your own by combining the dried herbs and garlic powder in equal amounts.
