Before we get started, a few words on buying shrimp. While fresh seafood is obviously superior to frozen, I always buy frozen shrimp. Fact is, unless you live on the coast, its near impossible to find truly fresh shrimp. The fresh shrimp you see in the seafood case at the supermarket is typically thawed frozen shrimp, and you never know how long its been sitting out.

Almost all shrimp are cleaned and flash frozen shortly after being caught, so for the freshest shrimp, youre better off buying frozen and defrosting it yourself. For this recipe, I buy extra-large frozen shrimp labeled shell split and deveined. Come dinnertime, all I have to do is run the shrimp under warm water to quickly defrost and then peel.

Flavor Variations To This Recipe

  • Spicy – BBQ Sauce is generally a bit sweet. So If you like it spicy, add a bit of Cayenne in the Shrimp Kabob marinade to make it spicy!
  • Other Meat – Besides Shrimp you can use this same recipe to make Grilled Chicken Kabobs or Grilled Steak Kabobs. Cubed Pork Tenderloin is also a great alternative.
  • Veggies – Of course Peppers and Onions are an obvious choice. But you can add any veggies of your choice like Zucchini, Yellow Squash, Tomatoes, to English Cucumbers.
  • Fruits – You can even add diced Pineapples or Mangoes to give these Shrimp Skewers a tropical taste!

Makes 4 Appetizers Or 2 Entrees

  • 2 pounds head-on shrimp, large
  • 2 tablespoons Creole Seafood Seasoning
  • 1 tablespoon olive oil
  • 1 large head garlic, cloves peeled and minced
  • 2 tablespoons chopped fresh rosemary
  • 3 tablespoons Worcestershire sauce
  • 1 lemon, juice removed, quartered
  • Salt and pepper to taste
  • 1 stick butter, room temperature

Pre-heat large sauté pan over high heat.

Season shrimp with ½ of Creole Seafood Seasoning and lightly toss.

Preheat a large skillet over high heat, put the oil in the pan, and heat until the oil begins to smoke. Place garlic and rosemary in pan and stir to brown garlic. Be very careful not to burn.

Add shrimp and carefully stir.

Add Worcestershire, hot sauce, lemon juice and lemon quarters.

Deglaze with beer, stirring to release any bits clinging to the bottom, and boil the mixture to reduce while shaking the pan. Allow shrimp to cook 2 to 2 ½ minutes and add remaining Seafood Seasoning and salt and pepper to taste. When shrimp are finished cooking, the liquid will have a sauce consistency. Reduce heat to medium high and add butter. Sauté until butter is emulsified and sauce is thick. Adjust seasoning. Remove lemon quarters. Serve with French bread, lots of napkins, and fingerbowls. Garnish each serving with a lemon piece.

Extremely Short Grill Time

You need to make sure that your grill time is extremely short. Grilling shrimp is super quick, even in comparison to some other grilled foods such as chicken, burgers, and vegetables.

As this recipe suggests, you are to place the shrimp on skewers, as this will make it easier to turn the shrimp over in large numbers.

However, you can also grill your shrimp without skewers, so this is to say, this is based on your preference.

  • Remove shells and devein shrimp. You can leave the tails if you like, I generally remove them.
  • Toss shrimp with olive oil, salt and pepper
  • Prepare your grill. You are going to want a low fire. Shrimp cook really fast, I’m talking in just a few minutes.
  • If you are using jumbo shrimp, you can skip the skewers but if you have smaller shrimp, thread them onto pre-soaked bamboo skewers.
  • Add your shrimp to the grill and start brushing with barbecue sauce.
  • Flip shrimp over and brush with more barbecue sauce, coating them well. Repeat 1-2 more times.
  • Shrimp should be cooked through in about 3-4 minutes.

Solution #: Get Dry To Stay Moist

We like moist food. We want our shrimp to be juicy. But there’s a difference between surface moisture and internal moisture. Internal moisture is what we’re really after. For the exterior, we actually want the exact opposite. Browning reactions can’t take place until surface moisture has evaporated, and it takes an awful lot of energy to evaporate that moisture. When you place a damp skewer full of shrimp on the grill, for at least the first several minutes, you’re waiting for surface moisture to evaporate. All the while, the interiors of those shrimp are getting hotter and hotter, thus expelling more moisture, which then has to be evaporated again, thus exacerbating the problem.

Fact is, if you want shrimp that stay moist inside, they have to start dry outside. Carefully blotting them with paper towels helps, but there’s an even better solution. After skewering my shrimp, I lay the skewers over the edges of a baking dish so that the shrimp are completely elevated. I then place the whole thing, uncovered, in the refrigerator for an hour. Good air circulation means the shrimp dry out rapidly.

When I’m ready to grill, I brush the shrimp with some olive oil and place them over the highest possible heat, pressing down on them slightly to ensure good contact with the grill grates.

If preparing the marinade ahead of time, dont toss in the shrimp until 20 minutes before ready to cook to ensure they are not over-marinated !

  • Combine everything in a bowl and marinate 20 minutes.
  • Preheat the grill to medium heat.
  • Thread the shrimp on the skewers and grill 2 to 3 minutes each side. Remove from skewers and place in a serving bowl.

    If you grill often, I highly recommend investing in a set of metal skewers. Theyre easy to clean and can be used over and over again. If you use wooden skewers, youll need to soak them in water for 30 minutes before threading the shrimp onto them. If you dont soak them, the skewers may catch on fire on the grill.

    You can use any barbecue sauce youd like for this recipe, but my personal favorite is this one. If you want your grilled barbecue shrimp to be gluten-free or refined sugar-free, double check the ingredients on your barbecue sauce before using it.

    Lastly, grilled shrimp is best enjoyed right away. Seafood in general doesnt reheat well, so if you wind up with leftovers you might want to enjoy it cold .

    What Goes Well With Bbq Shrimp

    Step 1. Boil the potatoes in salted water until tender.

    Step 2. Add the potatoes to skewers.

    Step 3. Follow the potatoes with a piece of sausage, corn, and then the shrimp.

    Step 4. Heat your grill to medium-high.

  • 1/2 cup dry white wine
