The Best Way To Grill Corn On The Cob
I consulted “She-who-knows-everything-when-it-comes-to-home-cooking” who informed me that the best way to grill corn on the cob is to grill corn in the husk, directly on a hot grill.
The husks protect the corn on the cob from getting dried out, and the corn essentially steams in its own moisture while getting infused with smoky flavor from the charring corn husks. It’s also so easy! No need to even break off the silks. Just place the corn, as is, in husks, on a hot grill.
How To Shuck Corn
While there are many ways to properly shuck corn, some methods take a bit longer than others. The most efficient way to shuck corn is to separate the silky tassels at the top in half, and start peeling. Once you’ve torn the husks all the way down, simply rip them off the cob and dispose of them. Lastly, gently pull the remaining silky strings off the ear of corn and then you’re ready to start cooking it!
Grill Corn In The Husks
Pre-heat grill to 400 degrees and place corn in husks directly on grates. Leave corn on grill for three minutes per side, until the husks begin to turn light brown. Pull corn from the grill and let it cool before peeling the husks and serving.

Toppings For Grilled Corn
Heres the fun part: the toppings for this grilled corn in foil! Just the butter, salt and pepper in the recipe below is tasty enough. But if you want to get a little fancier, heres what we recommend:
- Fresh parsley, cilantro or chives. A little thinly sliced green herb looks lovely .
- Paprika or smoked paprika. A sprinkle of red adds color and flavor.
- Old Bay. This famous seasoning is perfect on corn .
- Mexican street corn . One of the very best ways to eat corn is as Mexican street corn : a creamy, spiced sauce, sprinkle of cheese, lime and cilantro. Its heavenly!
- Ranch. Try this ranch seasoning on corn: its surprisingly good!
- Greek seasoning. This Greek seasoning features basil, oregano, garlic powder and onion powder: perfect for sprinkling on corn.
Grill The Corn Until The Husks Blacken All Over
After preheating, place the ears directly on the hot grill. Cover and cook for 15 to 20 minutes, turning occasionally with tongs. The husks will blacken and char all over, but the kernels will be stay protected while they steam inside. Meanwhile, a delicious smokiness infuses the tender, sweet corn. If you like more char on the kernels, you can peel off a few of the outer layers before grilling.

How To Grill Corn On The Cob In Husks
With the husk on, not only does the corn get that classic cookout charred flavor, but it also gets a slightly smoky flavor from the husk. The kernels will get some color, too. Using a knife, cut off the tassel and tail of the corn. Remove any dry outer leaves from the husk. You don’t need to remove the silks from inside the husk. Place corn on the grill and cook for 15 minutes, rotating every 3 to 4 minutes.
How Do You Remove The Corn Husks
You might notice in this recipe, I shuck the corn before cooking, and that is because the husk is not needed to smoke corn.
To remove the husks, you are going to peel back the corn husks, and depending on how many you are making, this might take a while, so get comfortable.
Once you are done peeling everything back, throw it out!
Now you need to remove the silks or silk of the corn aka the stings. You can use a brush or your fingers. Either way, get all of it or as much off as possible.
When you are done, throw it all away so the only thing you have left is a nice piece of corn waiting to get smoked!

How To Store Corn On The Cob Before Cooking
If youre not going to be cooking the sweet corn the same day you pick it up, make sure to store it in the refrigerator or in a cooler to guarantee perfect corn on the cob each time. They are best when fresh off the corn stalk. If you see a roadside stand or farmers market, that is the place to go to get the freshest corn.
Buy in season. Even the corn at the grocery store is pretty fresh than other times of the year. And it is definitely less expensive. Just last week my local market had ears for 10 cents each.
Confession: Even though fresh is the best, I dont always run to the market each time I want corn on the cob, nor is it always available. So when the corn is selling at great prices Ill buy several ears to keep in the freezer.

3) Choose the ears with sticky brown silks and skip the ones with black dry silks.
4) Check the stalk to see if it is still moist.
5) Without totally peeling the corn, pull back the husks at the top of the ear to take a peek at the corn inside to make sure it looks good.

- Butter and salt: The classic melted butter and salt is always transcendental.
- Butter and Parmesan: Slather with butter, then add shredded Parmesan cheese and chopped fresh herbs like basil, thyme or oregano.
- Elote : One of our favorite ways to serve corn is as elote or Mexican street corn. The creamy, spiced sauce with cheese crumbles, lime and cilantro is out of this world.

For that still-juicy, just-grilled smokiness, prep your grill for medium-high heat. Lay your ears straight on the grill grates and cook corn, turning occasionally, until the outer leaves are evenly charred. Depending on your grill model, this should take around 16 to 20 minutes.
