Cook time depends on the size and shape of each vegetable, but Ill also add that most grills have hot spots that we can use to our advantage here. For example, you can place heartier vegetables that can handle high heat like peppers and onions near the back of the grill, where its often the hottest.

Grill the vegetables starting with the heartier peppers and onions first followed by the eggplant, squash, zucchini, mushrooms then quick cooking asparagus and finally, the tomatoes. Cook without disturbing for three to four minutes on the first side to get some grill marks, then continue to cook for the following total cook times :

  • Bell peppers and onions: Eight to 10 minutes
  • Yellow squash, zucchini, eggplant, and mushrooms: Seven to eight minutes
  • Asparagus, green onions, and tomatoes on the vine: Four to six minutes

Dont be afraid to move vegetables to a different area of the grill if they arent cooking fast enough or are getting too brown. Tongs and a thin metal spatula like a fish spatula work well together to help you move veggies around the grill.

Temperature Guide For The Grill

With a gas grill, the temperature dials are a good indication of how high or low the heat is. If you have a charcoal grill, how do you really know how hot medium-high heat is? There is a method to gauge temperature using only your hand. Carefully hold your hand just above the cooking grate and start counting the seconds until you cannot tolerate the heat . The longer you can hold your hand above the fire, the lower the heat. This technique can be used for gas and charcoal grills. The guidelines to follow are:

  • 5 Seconds = Low heat
  • 1 Second = Very high heat

The best thing you can do when cooking pork chops is to select the right cut of meat. Blade chops should be your first choice, rib chops second, and loin chops being the third best. Pork chops are best grilled with indirect fire, using a two-zone grill. You’re going to want to sear them on the hotter side of the grill and then once they’re well seared move them over to the cooler side of the grill and let the lower heat.

For a medium-rare pork chop, you want the internal temperature to be 135 F, and for a juicy and rosy medium pork chop, you’ll want the inside temperature to be at 145 F.

How Do You Know When Fish Is Done Cooking On The Grill

The best way to tell if your fish is done is by testing it with a fork at an angle, at the thickest point, and twist gently. When the fish is done, it will lose its translucent or raw appearance.

A good rule of thumb is to cook the fish to an internal temperature of 165F for at least 30 minutes. If you dont have a fish thermometer, you can use a kitchen scale to check the temperature.

If youre using a scale, be sure to use it in a well-ventilated area, away from heat sources such as a stove or oven.

How Much Charcoal Should I Use

When working with charcoal, the basic rule is the more coal you use, the hotter your fire. A good rule of thumb is about 30 briquettes for smaller or portable grills and 50 to 75 briquettes for larger barrel and Kettleman grills. Youll need more charcoal on cold, windy or rainy days.

You do not need very much charcoal when youre cooking food like burgers, hot dogs and brats that are better cooked at moderate heat. A single layer of coals across the bottom will work well. When youre searing steak, you need a hotter fire. You want to at least double the amount of charcoal, stacking it 2 to 3 high.

To keep temps low for slow cooking and smoking, use less coals and monitor the temperature. To maintain temp and keep the fire burning for a long cook, add coals, maybe 5 at a time every 30 minutes. If youre having trouble keeping your grills temperature above 200°F, throw a couple extra coals onto the fire.

The Three Main Temperature Ranges

Low & Slow –

When you want to cook low and slow, you should aim for a temperature of between 225 to 275 Degrees Fahrenheit. In order to reach a higher temperature you can adjust the vents to create more heat.

The best thing to do when you reach a temperature of 225 F is to open the top vent about two-thirds of the way open, and it should get you to 250 F. You can leave the vents alone as soon as you get to the temperature you want.

On a windy day, you might have to leave the vents closed slightly more so the wind doesn’t sneak in and prevent excess flames.

Mid-Heat Range –

The mid-heat temperature range is going to be between 375 to 450 Degrees Fahrenheit. This is a great temperature range if you want to add a nice sear to your food.

To achieve this range, leave your bottom vents about half-way open and leave your top vents open all the way .

You’ll have to make sure you have an idea of checking the grill temperature as it’s vital to know whenever you’re grilling. You can purchase high-quality grill thermometers if you need one.

High-Heat Range –

Use this range when you want to grill at temperatures of 450 Degrees Fahrenheit or higher. Leave both the top and bottom vents completely open for maximum heating results. To reduce the amount of heat you can adjust the top vent to between fully open and halfway closed.

Cons Of Stove Grilling

When youre firing up the pan grill, youll notice a few things happening. These may be a deal-breaker for some, or just a bit annoying for others.

You might think twice about stove grilling if:

  • Youre not okay with burnt smell and a bit of smoke in the kitchen
  • Cleaning the whole stove after grilling is too much, the pan can and will spit out some juices or cooking oil
  • You have large batches of food to grill, like for a party. Pans are too small for this.
  • You really want a smoky flavor to your grill, there wont be any

For me pan grilling isnt mush of an issue, but it really depends on what Im cooking.

For example some asparagus with a little olive oil wont be too big a deal, since its not really messy and wont leave that burnt smell.

But grilling meat really messes up the whole stove, and theres a full cleanup needed afterwards.

An outdoor grill is much more forgiving, in that its going to keep the mess contained and you can even put a lid on it.

If you put a lid on your grill pan, youll get soggy grilled food.

Charcoal is going to be the most different. If youre using coals deemed match light , you should be able to simply light them with a match. Otherwise, youll need to add some lighter fluid to your coals before you introduce a flame. Its important to heed any warnings on the charcoal and the lighter fluid when lighting your charcoal grill. Dont use too much lighter fluid, and light your coals immediately after applying the fluid to them.
