How Long Do Vegetables Take To Cook On The Grill
Cook time depends on the size and shape of each vegetable, but Ill also add that most grills have hot spots that we can use to our advantage here. For example, you can place heartier vegetables that can handle high heat like peppers and onions near the back of the grill, where its often the hottest.
Grill the vegetables starting with the heartier peppers and onions first followed by the eggplant, squash, zucchini, mushrooms then quick cooking asparagus and finally, the tomatoes. Cook without disturbing for three to four minutes on the first side to get some grill marks, then continue to cook for the following total cook times :
- Bell peppers and onions: Eight to 10 minutes
- Yellow squash, zucchini, eggplant, and mushrooms: Seven to eight minutes
- Asparagus, green onions, and tomatoes on the vine: Four to six minutes
Dont be afraid to move vegetables to a different area of the grill if they arent cooking fast enough or are getting too brown. Tongs and a thin metal spatula like a fish spatula work well together to help you move veggies around the grill.
Temperature Guide For The Grill
With a gas grill, the temperature dials are a good indication of how high or low the heat is. If you have a charcoal grill, how do you really know how hot medium-high heat is? There is a method to gauge temperature using only your hand. Carefully hold your hand just above the cooking grate and start counting the seconds until you cannot tolerate the heat . The longer you can hold your hand above the fire, the lower the heat. This technique can be used for gas and charcoal grills. The guidelines to follow are:
- 5 Seconds = Low heat
- 1 Second = Very high heat

- Preheat grill between 325 and 350 Degrees Fahrenheit
- Cook 2 – 7 minutes per side until internal temperature reaches 145 F
- Resting time 5-10 minutes
The best thing you can do when cooking pork chops is to select the right cut of meat. Blade chops should be your first choice, rib chops second, and loin chops being the third best. Try to get the center-cut if possible. Try to get a one and a half inch thick cut of meat, and it will do superb on the grill.
There are two different ways to brine your pork chops dry and wet brine. We recommend using dry brine. A dry brine is simple all you do is sprinkle some salt all over the meat and let it rest long enough for the salt to penetrate the meat and work its magic. You can brine the pork chops in a little as an hour before grilling or up to a full day.
Pork chops are best grilled with indirect fire, using a two-zone grill. You’re going to want to sear them on the hotter side of the grill and then once they’re well seared move them over to the cooler side of the grill and let the lower heat.
For a medium-rare pork chop, you want the internal temperature to be 135 F, and for a juicy and rosy medium pork chop, you’ll want the inside temperature to be at 145 F.

A Grate For Your Grill
The gas-versus-charcoal grilling debate will never die, but you can skip it entirely with a set of GrillGrates. The extra flavor you get from charcoal comes primarily from the rendered fat dripping off your food, hitting the coals below, and becoming smoke, which then flavors your food. GrillGrates’ grill gives you the same effect without the charcoal, trapping juices in its deep grooves where they burn off and flavor your food. They also prevent flare-ups, even when cooking flare-prone foods like bratwurst. They can replace your existing grates or just cover them.

An Oil Mister Or Anything That Oils Your Grates
Karmel is very against oiling your grates: The instant any vegetable or protein hits a heated surface, it sticks, she explains. But as it cooks, it releases itself unless youre moving too fast, or you oiled your grill. Dont do either of those things! Stick to her rule of oiling your food, not your grill, and practice some patience.

The Best Grill Tools Weve Tested
The popularity of the Weber kettle grill has invited a lot of third-party innovationsessentially, ways to “hack your Weber” to add even more versatility. One such item is hardly a necessity, but we can see why its a favorite among charcoal enthusiasts.
The Slow N Sear Deluxe turns any 22-inch kettle grill into a more capable and versatile smoker, and makes indirect cooking and high-heat searing simple. This half-moon charcoal basket, which has an integral reservoir that holds 1 quart of water, fits flush against the side of the grill, so its easily accessible from the hinged cooking grate. We tested the Slow N Sear using fast and slow indirect-cooking and smoking methods, and we also blackened vegetables for salsa over direct heat . You can find other, less expensive charcoal baskets, but none we researched offered the range of functionality of the Slow N Sear, which Craig Meathead Goldwynone of the leading voices in professional grillingcalls the single best accessory for the Weber kettle ever. The original version that we tested, the Slow N Sear Plus, has since been discontinued and replaced by the Slow N Sear Deluxe, which includes a removable water reservoir and differently shaped holes in the bottom grate that the company claims will make it more resistant to warping. We haven’t had the chance to test the new version yet, but it’s similar enough to the Plus that we think it should perform just as well.
Fastest Way To Keep Your Charcoal Grill Hot
Add coals regularly to keep your grill burning hot. Don’t wait until you’re almost out of briquettes to add more. Instead, add 5-10 pieces of charcoal when you have roughly half of your charcoals remaining, usually every 30 minutes or so.
HOT TIP: Wearing gloves while lighting charcoal will help protect your hands from the intense heat.

How Do You Know When Fish Is Done Cooking On The Grill
The best way to tell if your fish is done is by testing it with a fork at an angle, at the thickest point, and twist gently. When the fish is done, it will lose its translucent or raw appearance.
A good rule of thumb is to cook the fish to an internal temperature of 165F for at least 30 minutes. If you dont have a fish thermometer, you can use a kitchen scale to check the temperature.
If youre using a scale, be sure to use it in a well-ventilated area, away from heat sources such as a stove or oven.
How Much Charcoal Should I Use
When working with charcoal, the basic rule is the more coal you use, the hotter your fire. A good rule of thumb is about 30 briquettes for smaller or portable grills and 50 to 75 briquettes for larger barrel and Kettleman grills. Youll need more charcoal on cold, windy or rainy days.
You do not need very much charcoal when youre cooking food like burgers, hot dogs and brats that are better cooked at moderate heat. A single layer of coals across the bottom will work well. When youre searing steak, you need a hotter fire. You want to at least double the amount of charcoal, stacking it 2 to 3 high.
To keep temps low for slow cooking and smoking, use less coals and monitor the temperature. To maintain temp and keep the fire burning for a long cook, add coals, maybe 5 at a time every 30 minutes. If youre having trouble keeping your grills temperature above 200°F, throw a couple extra coals onto the fire.

The Three Main Temperature Ranges
Low & Slow –
When you want to cook low and slow, you should aim for a temperature of between 225 to 275 Degrees Fahrenheit. In order to reach a higher temperature you can adjust the vents to create more heat.
The best thing to do when you reach a temperature of 225 F is to open the top vent about two-thirds of the way open, and it should get you to 250 F. You can leave the vents alone as soon as you get to the temperature you want.
On a windy day, you might have to leave the vents closed slightly more so the wind doesn’t sneak in and prevent excess flames.
Mid-Heat Range –
The mid-heat temperature range is going to be between 375 to 450 Degrees Fahrenheit. This is a great temperature range if you want to add a nice sear to your food.
To achieve this range, leave your bottom vents about half-way open and leave your top vents open all the way .
You’ll have to make sure you have an idea of checking the grill temperature as it’s vital to know whenever you’re grilling. You can purchase high-quality grill thermometers if you need one.
High-Heat Range –
Use this range when you want to grill at temperatures of 450 Degrees Fahrenheit or higher. Leave both the top and bottom vents completely open for maximum heating results. To reduce the amount of heat you can adjust the top vent to between fully open and halfway closed.
Cooking Surface Of The Grill Pan
Cast-iron grill pans are either pre-seasoned or coated with enamel.
A seasoned interior of a cast iron grill pan lasts relatively long and can easily be re-seasoned. Moreover, the enamel coating offers a much better release and is also easier to clean.
If you are choosing a stainless steel grill pan, you need to know that they are fairly difficult to clean. This is because the oil scorches and settles between the ridges, making it hard to access.
Another option you have is to opt for aluminum or stainless steel with a nonstick coating. However, this type of grill pan might not give you the perfect caramelized grill marks youre looking for.

A Vegetable Pan Or Basket
Theres no need to make grilling veggies any more complicated than it needs to be. According to Karmel, vegetables should go straight on the grill grates. Youll get better flavor and caramelization this way. Just look at the shape of your food, and remember to put it against your grill grates, she says. So if youre cooking up green beans or asparagus, which I love to do on the grill, place them perpendicular. When its time to turn them, just pick up those must-have tongs.
Cons Of Stove Grilling
When youre firing up the pan grill, youll notice a few things happening. These may be a deal-breaker for some, or just a bit annoying for others.
You might think twice about stove grilling if:
- Youre not okay with burnt smell and a bit of smoke in the kitchen
- Cleaning the whole stove after grilling is too much, the pan can and will spit out some juices or cooking oil
- You have large batches of food to grill, like for a party. Pans are too small for this.
- You really want a smoky flavor to your grill, there wont be any
For me pan grilling isnt mush of an issue, but it really depends on what Im cooking.
For example some asparagus with a little olive oil wont be too big a deal, since its not really messy and wont leave that burnt smell.
But grilling meat really messes up the whole stove, and theres a full cleanup needed afterwards.
An outdoor grill is much more forgiving, in that its going to keep the mess contained and you can even put a lid on it.
If you put a lid on your grill pan, youll get soggy grilled food.

How To Start A Charcoal Grill
Charcoal is going to be the most different. If youre using coals deemed match light , you should be able to simply light them with a match. Otherwise, youll need to add some lighter fluid to your coals before you introduce a flame. Its important to heed any warnings on the charcoal and the lighter fluid when lighting your charcoal grill. Dont use too much lighter fluid, and light your coals immediately after applying the fluid to them. Once the coals have a light gray ash to them, theyre ready to be spread around, and youre ready to cook.
What Is A Charcoal Grill
Before knowing what youll need to get started, its helpful to learn the exact definition of a charcoal grill. As the name suggests, a charcoal grill is an outdoor cooking appliance that uses charcoal as its primary heating element. A charcoal grill is primarily intended for outdoor use if you are wondering if you can grill in the microwave oven.
Some charcoal grills come with electric starting kits, so you wont need lighter fluid.

Hoa And Condo Restrictions
If you are planning to purchase a grill to use on your balcony, in a shared space, or in an area where there are HOA rules, be careful.
Sometimes, these rules limit what you can and cannot use in the space. In these instances, you may consider portable grills for tailgating and camping.
Due to the dangers of using a large grill, many areas restrict how large a grill can be or what type of fuel can be used. These rules exist to lower the risk of injury around a large grill.
Before you make any decisions or large purchases, double-check that your new grill will be allowed.
What To Serve With Grilled Chicken
Grilled chicken is a healthy, delicious main course to serve by itself-but there are tons of ways to dress it up, too. You can put grilled chicken in just about anything: sliced on top of salads, stuffed into sandwiches, shredded for chicken soups or skewered on a kabob. Or top the dish off with a heaping pile of grilled veggies and youve got yourself dinner!

Rule #8 The Grills Lid Test
The first thing you need to test is the lids weight the heavier the better In high quality BBQs, the grill cover will cover and sit well on the bottom of the grill, the higher the weight of the lid, the higher its quality and the better the heat inside the grill and save you energy.
You also need a lid that closes fairly tight for smoking. Alas, lids do not seal tightly due to laws to prevent them from building up explosive gases.
How Many Burners Should A Grill Have
When using a gas grill, the structure will have a variety of burners that can each be set to a different temperature.
Depending on the type and lineup of the burners you have, you can use them to create different heat zones in the grill.
Grill burners may be aluminum burners, cast-iron burners, stainless-steel burners, or brass burners.
There are also infrared and sear burners, which are specialty burner types. These are very popular with grill masters who like to cook steak.
