Preheating is important because it allows your chicken wings to cook faster. It also prevents them from sticking on the grate. To cook chicken wings on a gas grill, set the burners to medium-high and close the lid. When the grill reaches 350°, adjust the burners as needed to maintain the temperature inside the grill. If your gas grill has multiple burners, its a good idea to set one of the exterior burners to low in case you need to move the wings to indirect heat.

To get crisp, well-rendered chicken wings with lightly charred skin, succulent, smoky meat and minimal flare-ups, we quick-brined the wings and tossed them in cornstarch and pepper. These steps helped the meat retain moisture and kept the wings from sticking to the grill.

We then cooked them right over a gentle medium-low fire. The moderate temperature minimized flare-ups and the direct heat accelerated the cooking process. Also, though we normally cook white chicken meat to 160 F, wings are chock-full of collagen, which begins to break down upwards of 170 F. Cooking the wings to 180 F produced meltingly tender wings.

I have been able cook a decent crispy grilled chicken wing on my charcoal grill, but the gas grill is better. The reason is direct heat. I usually set up my charcoal grill for indirect heat cooking wings. So when the fat renders out of a wing, it will fall onto bottom of the cool side of the grill and thats not what we want in this case.

A gas grill typically has radiant heat bars below the cooking surface to try and evenly distribute heat. So when those fat drippings fall on to the heat bars they will vaporize. Those vapors then come back up and adhere to the meat. That is what gives grilled food its grilled taste. Weber actually calls those radiant heat deflectors, flavor bars, for a reason.
