How to Make a Better Grilled Cheese

Your toast has a layer of black, but beneath it, youre convinced youll find a perfect shade of golden brown. So grab a four-sided cheese grater, says Baldini, and a bowl. In a gentle, circular motion, rub the blackened side of the toast across the grater and let the burned pieces fall into a bowl.

Ways To Make Your Grilled Cheese Better Than Anyone Else’s

Theres more to grilled cheese than just bread and cheese.

Get the right bread. Almost any bread can work for a grilled cheese, but start out with bread that complements the remaining ingredients and doesnt have too many holes. If youre going for a sweet chèvre and jam grilled cheese, go for a few slices of country bread.

Step outside of your cheese comfort zone. Not that theres anything wrong with slices of American cheese product, but sample different options like Havarti, Brie, and even manchego.

Choose cheese that will melt. Hard cheese , most fresh crumbly cheese , and other kinds of cheese just refuse to melt. Pro tip: grated cheese melts faster and more evenly than slices of cheese.

Youre not searing steaks here: grilled cheese should be cooked slowly at low temperatures so that they get evenly heated, right down to the core. By keeping your stoves flame just above its lowest setting for a longer period of time, youre not only more likely to get a completely melted layer of cheese, but youll also avoid charring the bread until its black.

Low heat especially helps with thicker sandwiches that take longer to heat through, like these hefty grilled cheeses with massive chunks of juicy Buffalo chicken . Get our Buffalo Chicken Grilled Cheese recipe.

Pick A Healthier Bread

The traditional white bread used to craft grilled cheese sandwiches lacks fiber and can taste a little bland. For a healthier substitute, choose a whole grain bread.

Whole grain breads include the bran, endosperm, and germ, so you get extra nutrients from the wheat. Some multigrain bread also include seeds, such as sunflower seeds and flaxseeds.

The whole grains and seeds give a nuttier flavor and heartier texture but they also deliver added fiber.

Slapping a hunk of butter in your pan or slathering your bread with mayo are common ways to prepare grilled cheese. Lots of butter and mayo adds extra calories and saturated fat.

To lower your saturated fat intake, try using avocado oil or olive oil in your pan instead of butter.

The Best Tip For A Perfect Grilled Cheese

How to Make Grilled Cheese

My friends, this is a must. I make grilled cheese without butter! Swap out the butter on the outside of the sandwich for mayonnaise. Cook mayonnaise side down in the pan.

Your grilled cheese will come out perfectly golden with a crust that doesnt get soggy and is not greasy!

If the pan is too hot, the cheese wont melt before the outside is cooked. If you notice the cheese taking awhile, cover it with a lid. The steam will help melt the cheese so it cooks evenly!

Tips For The Best Grilled Cheese

  • Low heat it takes a little patience to make the perfect grilled cheese. Keep your heat on low to give the cheese time to fully melt while the bread gets golden and crisp. If browning too fast, turn the heat down.
  • Butter generously the amount of butter may seem like a lot, but it is important for a crispy exterior.
  • Use thick-sliced bread we love using Texas toast because its sliced about twice as thick as normal sandwich bread. You want bread that is about 3/4 to 1 thick, but also avoid bread that is too thick or your cheese wont melt properly. Using bread that is too thin will produce a flimsy and sometimes soggy sandwich.

Be Choosy With Cheese

Choosing flavorful cheeses like Gruyère, sharp cheddar, Gouda, and havarti bring a richer, distinct flavor to your grilled cheese. You also may find yourself using less cheese, since their flavors are bolder than that of American cheese.

Using less cheese means fewer calories for your sandwich, but it doesnt mean you have to lose that cheesy goodness and flavor.

How Much Cheese To Use

I find that using at least 2 thick slices, about to ¼-inch max, of sharp cheddar provides just the right ratio of cheese-to-bread. If the slices are any thicker, itll affect the melt time. If using a block of cheese, you can grate or shred it to make an even layer, although it will melt quicker than slices.

When placing the cheese on top of the unbuttered side of the bread, leave a little bit of space along the edges so the cheese doesnt spew over, unless you like a little bit of fried cheese on the edges.

Fluffy Mighty White or the fuller texture of artisan sourdough? Taleggio, Teifi or prepacked slices? And what is the best way to cook your sandwich: grill, griddle, frying pan or toastie machine?

Before you dive below the line to scoff at the cheek of publishing a recipe for something as basic as a simple cheese toastie, consider this. Any idiot with a frying pan can make a grilled cheese sandwich but how many are worthy of the enormous calorie load they pack? This is one recipe that deserves to be perfect after all, if you eat too many of the things, life really will be too short to bother with a bad cheese sandwich.

For a start, as the good people of Twitter kindly inform me, the relationship between a cheese toastie and a grilled cheese sandwich is analogous, as Id assumed, to that between macaroni cheese and mac and cheese the latter being the bigger, brasher American version of our own, humbler family favourite. No, as Lynne Clark of the Greedy Piglet blog informed me, a grilled cheese sandwich is buttered on the outside and cooked in a pan, and the toastie is buttered on the inside and, well, toasted. As I dont own any variety of sandwich toaster for the sake of my health, this piece will concentrate on the fried variety .

Dont Skimp On The Butter

You need enough butter to achieve the crackly-crisp, buttery, golden exterior that we all crave. If you always keep a stick of butter on the counter, you can simply spread the softened butter generously over the outside pieces of bread. If you dont , you can melt a pat of butter in the skillet before you add the bread.

What Pan To Use

I prefer to use my cast iron skillet as it maintains a consistent heat better and gives a superior crispy surface. A nonstick skillet works well and prevents sticking if using sweeter types of bread. In either case, you want to use very moderate heat for making the sandwiches, about medium-low or low if the bread is toasting too quickly.

Pantry Staples Like Tomato Or Bacon Jams Are Delicious In Grilled Cheese

Many people might have jams floating around in their pantries without knowing how to utilize them. To add a ton of flavor to a simple grilled cheese, adding ingredients like chutney, pepper jelly, tomato jam, or bacon jam can totally change the flavor profile.

“Any jam, any chutney, even dijon mustard, almost any condiment will lend itself to a grilled cheese sandwich,” Werlin said.

“If you’ve got sweet or savory condiments like pepper jelly or onion relish sitting in the back of your fridge, those work great in a grilled cheese,” Gibson said.

Bell peppers can be used in a number of different recipes, so they’ll never go to waste in your fridge. However, if you’re using them in a grilled cheese sandwich, Laura Werlin recommends cooking them a little bit before adding them.

“Bell peppers should be a little bit softer when you put them in, so you might want to roast them,” she said.

“The key with vegetables is getting the water out, otherwise you end up with a watery grilled cheese,” Heidi Gibson told Insider.
