I thought I was so clever making a copycat of Nandos Peri Peri Sauce but it turns out, many people think theyve cracked it too! Im still loyal to mine though. One of my personal favourites. Make burgers or serve chicken as is!

Ingredients: fresh chilli, capsicum/bell peppers, garlic, vinegar, paprika, oregano, onion powder, sugar

Ideal for: Any cut of chicken suited to the marinade, but for burgers, skinless boneless chicken thighs are my first preference, followed by chicken breast.

What If Im Short On Time

If you can only marinate the chicken for 30 minutes, then marinate at room temperature to expedite the marinating process, however, dont marinate longer than 30 minutes at room temperature otherwise dangerous bacteria can grow and lead to foodborne illnesses. Brushing the reserved marinade on the cooked chicken will also help amplify the flavor if youre short on time.

How Long Should You Marinate Chicken Thighs

For the best results, . This particular marinade doesn’t have too much acid in it, so it won’t turn the meat mushy. Instead, the longer marinating time will develop the most flavor and will yield the most tender, juicy meat. You can also prep the marinade in the morning before you head off to work, so that when you walk in the door tired at the end of the day all of the work is done — just bake or grill and dinner is served!

Since there are days when we just don’t plan ahead enough for a long overnight marinade, it’s fine to soak the chicken for about 2-3 hours. The meat will still be delicious!

Grilling chicken is one of my favorite meats to grill. It is budget friendly and everyone loves it. We use many types if marinades which includes seasonings, Italian Dressing and BBQ sauces.

How To Check Temperature Accurately

I highly recommend investing in a meat thermometer otherwise there is no accurate way to check when your chicken is cooked without slicing and loosing valuable juices.

  • Chicken breasts: insert the thermometer into the thickest part of the chicken although hopefully you dont have one because your chicken has been pounded to an even thickness ).
  • Chicken thighs: insert the thermometer into the thickest part of the chicken without hitting any bones. Bones are a heat conductor and will register higher than the actual meat.

Boneless Chicken Thighs Vs Bone

Whether you use chicken thighs with or without the bones is really a matter of personal preference, and often depends on the recipe that you’re preparing. Bone-in, skin-on chicken thighs are ideal when you’re looking for fried chicken or roasted chicken with a crispy skin, or a slowly-braised or roasted dish that derives flavor from the fat and bones .

When marinating thighs for the grill or oven, we’re less concerned with the crispy skin, and more concerned with the moist, tender meat and the rich flavor. As a result, we prefer the ease of boneless, skinless chicken thighs here. That said, if you like the bone-in thighs, those will work as well — you just might need to increase the cooking time slightly.

What Temperature Should Chicken Be Cooked To

Chicken breasts and chicken tenders are done via any cooking method when they register 165 degrees F on an instant read thermometer.

Chicken thighs and legs are safe to eat when their internal temperature reaches 165 degrees F but they are juicier and more tender when cooked to 170-175 degrees. F. Chicken thighs contain more connective tissue than chicken breasts which takes longer to break down. Cooking them to a higher temperature will ensure that the dark meat becomes even more tender and juicy verses chewy and rubbery.

This easy grilled chicken marinade is made with a balance of savory, tangy ingredients and a unique spice blend for an oomph of effortless complex flavor. You will need:

  • Chicken: boneless chicken breasts pounded to an even thickness or chicken thighs.
  • Olive oil: use quality extra virgin olive oil for the best flavor.
  • Soy sauce: grounds the marinade it will not give the chicken an Asian vibe. Use reduced sodium soy sauce so we can control the salt.
  • Balsamic vinegar: adds a subtle, complex fruity, sweet tanginess. Use Balsamic Vinegar of Modena I.G.P. for the best flavor like this one. Grape must should always be the first ingredient followed only by vinegar.
  • Lemon juice: brightens the flavor profile. Freshly squeezed is best but you can get away with bottled because its just a splash.
  • Brown sugar: balances the soy, balsamic and lemon juice and helps caramelize the chicken as it cooks. Use light brown sugar for rich sweetness.

    How Long To Marinate Chicken:
