To get that collagen to liquify it has to go above 195. So treat it like a brisket, except the smaller size means not having to smoke for 12 hours. I did these in under 3.

Short ribs remind me of the fall, long braising, wine, onions and garlic. But prepared boneless, they are similar to a really great steak. Ive read that some believe that this is the best cut of beef for grilling. Here in our culture, we may think of short ribs as a lesser quality cut of meat in the sense meant only for braising. We may not think of it prepared in this way I did not. But, I am now converted.
What’s The Difference Between Beef Back Ribs And Short Ribs

Because of its high fat content, I treat my short ribs much like I would a high-end Japanese Wagyu-style steak. That is, whether you like your regular steaks rare or well done, I very strongly suggest cooking your short ribs to medium-rareabout 130°F . Any cooler than that and the intramuscular fat will remain solid and waxy, rather than unctuous and juicy. Much hotter and the fat will start leaking out copiously, making your ribs tough and dry.

That said, the reason you cook beef ribs all the way the through is so that you can get them falling off the bone and fork tender. Your ribs will probably still be tough if you cook them to pink-red.

How Long To Smoke Boneless Beef Short Ribs
Every cut of meat is different in how long it takes for it to fully cook in a smoker. These ribs took me around 8 hours from start to finish, but yours could take longer or shorter depending on the meat and your smoker.
Make sure you cook to temperature and not to time. Always check the temperature of your meat with a reliable meat thermometer to determine doneness. I also recommend you plan ahead and give yourself a little wiggle room with time just in case your meat is done sooner or later than you expect.
Bottom line: meat is done when its done. Keep an eye on the temperature and I promise itll be worth the wait.

Now time for the Andrias Steak Sauce:
I know some of you are wrinkling your nose right now. Dont think of that certain A-OK steak sauce. Think heaven. This stuff is not something you dip your steak in after you cook it because a steak needs no sauce after its cooked other than maybe a little compound butter melted on top. This is a basting and marinating sauce. Its absolutely amazing. I use it on everything from meatloaf, scallops to steaks. A poor, but somewhat adequate substitute, for Andrias is Worcestershire sauce and some granulated garlic.
I poured some on the plate and then dipped each side of the beef short ribs in the Andrias. Then I dropped the soon to be grilled beef short ribs into my smoker which was hovering right around 300 degrees:
How long does it take to get these short ribs to temp? Depends on how hot the fire is. I did them around 300 and it took close to 3 hours. If you were to do them at say 225, they would take significantly longer. The moral here is dont judge by time. Judge by temp. Get an instant read thermometer and stop taking the guess work out of your grilling. I cant tell you how much better my grilling has become since I got one.

How To Slice And Serve Boneless Beef Short Ribs
After letting the meat rest 10 minutes, we slice the short ribs thin against the grain.
What does this mean? Meat is made up of bundles of muscle fibers that run parallel to one another. The fibers form a pattern that is referred to as the grain it looks similar to wood grain.
Slicing against the grain means cutting the fibers into shorter pieces. This makes tougher cuts such as boneless short ribs more pleasant to eat because shorter lengths of muscle fibers are easier to chew.
Its easy to cut boneless short ribs against the grain because the muscle fibers tend to run diagonally. That means that as long as you slice the meat lengthwise, youll be cutting against the grain.

While you can turn out beef ribs from a gas grill that are just as delicious as the next persons, you will have to make a few adjustments. However, you cannot beat the convenience of a gas grill.
