How Do You Know When Your Beef Ribs Are Done Grilling
To check if your beef ribs have cooked through on the grill, you can remove an individual piece and try to break it once it is slightly cool to the touch be careful not to burn your fingers!
The meat will break easily. If it takes too much effort and doesn’t break apart easily, it means that it needs to cook longer.
Another way to check if your ribs have cooked entirely is by pressing a fork, knife, or skewer through them.
The utensil should go through the meat quite easily without effort however, the rib meat shouldn’t fall off the bone unless that’s how you like it.
Should I Wrap Beef Back Ribs When Smoking
There are two sides to wrapping ribs in foil or butcher paper. The paper can limit the amount of smoke that goes into the meat. This is good in that it also helps you control the color and the flavor of the meat. Wrapping in butchers paper, also known as parchment paper, also helps to seal in moisture and keep the ribs tender.
The other reason why you need to be wrapping up your ribs is that it helps speed up the process by isolating the temperatures. However, it is essential to make sure that you wrap them at the right time.
Check The Internal Temperature Of The Ribs
These ribs will take a minimum of 5 hours to cook in most cases. After the first three hours, it is necessary to check on the internal temperature of the ribs. Using a meat thermometer, check the thickest section of meat on the ribs. These ribs should be 200°F when they are done cooking. Allow the ribs to continue to cook until the preferred temperature is achieved.

What Should I Look For When Purchasing
Sometimes you will see the surface of the bone poking through the top of the meat. This is not what you want to purchase, as there will be very little to eat after cooking.
Look for slightly meatier beef back ribs where you cant see much, or any, of the bones showing through.
Most grocery stores will carry these beef ribs, or you can also look to online retailers which will generally carry a higher quality.
Pro Tip: Make In Advance
If youre a first timer or worried about cook timing for a scheduled meal , make it earlier in the day or even the day beforeor the day before! As with all slow cooked things , the flavour gets better with time and its really straightforward to reheat.
That makes this a sensational dinner party option! It plates up really elegantly, posh restaurant style and I have options below for fine-dining type sides instead of the hearty finger-licking type sides pictured
Heres a close up look at the homemade Barbecue Sauce you end up with in the pan. The beauty of this method of cooking is that the juices from the ribs mix in with the sauce, so youre essentially making it with the ultimate money-cant-buy beef stock!
ANOTHER PRO TIP: For a posh restaurant experience, strain the sauce to make it silky smooth. I do this for VIPs only.

Whats The Difference Between Beef Short Ribs And Beef Back Ribs
This question is asked often and its a simple one. Beef back ribs are cut from the upper portion of the rib near the spine. They have a slight curve to them and the meat from those ribs comes from between the bones, and its scarce. Its tasty for sure, there just isnt much of it.
This is because the ribeye steaks are cut from this area and butchers go to great lengths to yield as much meat for the steak as possible. Typically, the beef back ribs you find in the store are simply an afterthought and youre mostly paying for bone.
From a value perspective, Ive rarely seen beef back ribs priced at a point that make them worth it.
Beef short ribs on the other hand, are cut from the same rib, but further down on the steer. The meat on these ribs comes from the top of the bone and is usually plentiful. Im the type of guy that can put down some food, and one rib is enough to have me tapping out.
Theres quite a bit of connective tissue that needs to be broken down on the short rib, so for this rib recipe, plan on letting them go low and slow for several hours until the meat is probe tender.
That usually means an internal temperature of about 205 °F. Generally speaking, you can count on about 8 hours of cook time to get these tender. Ill say it again, its worth the wait.

Easy Traeger Ribs Beef Recipe
Although this Traeger Beef Back Ribs recipe does take a long time to smoke it is probably one of the easiest smoker recipes. Its about as close to set it and forget it, as youre likely to get in terms of smoking meat.
Beef back ribs pack a bold flavour as is so you dont need to do too much to let those beefy flavours shine on through.
You simply dust the beef ribs with Traeger Beef Rub, insert a meat probe and smoke slow and low on your pellet grill over apple pellets at 225F until the internal temperature of the ribs is 205F.
This will take 8-10 hours give or take.
If you are concerned about the meat drying out, spritz it occassionally with beef broth/stock and/or apple juice.
A large cut of meat such as beef back ribs is unlikely to dry out at this low temperature, however.
How Long Should You Cook Beef Ribs On The Grill
As mentioned, beef ribs require a long time on the grill to thoroughly cook through and still be tender, juicy, and flavorful.
The ribs can take up to 1½-2 hours until they are fully tender. It will depend on the heat of your grill. Remember, slow and consistent works best.
With the beef ribs cooking for such a long time, it is necessary to continue basting it through the process.
Beef ribs are most delicious when they have sauce left on them.
As the late food and beverage specialist Tony Roma’s saying goes, “happiness is best served slow-smoked and sauced.”

Making Beef Ribs On A Pellet Grill
Step 1: Start your pellet grill and set temperature for 250 °F. I like to use oak or hickory pellets for beef short ribs but use your favorite.
Step 2: While the grill is preheating, trim off any excess fat on the beef short ribs. There usually isnt much, but if there is, just clean it up with a sharp boning knife so they look like this:
Step 3: Whisk together all ingredients for the rub in a bowl. Generously coat the beef short ribs with the rub, ensuring you coat the sides. Dont worry about getting the bone side of the ribs. Youre not eating that side where the membrane is, so seasoning it is a waste.
TIP: Unlike pork ribs where the membrane should be removed, on beef short ribs leave the membrane in place to hold them together while youre smoking the ribs.
Step 4: Place ribs on a wire cooling rack inside of a cookie sheet. This allows for easy cleanup and prevents your grill from getting filthy with the dripping rendered fat. Place the ribs on the smoker, and close the lid.
Step 5: Mix beef broth, hot sauce, and soy sauce and pour into a spritz bottle. After the ribs have been on the smoker for one hour, give them a light misting of the liquid. This moisture helps the ribs take on some smoke and builds an incredible bark. Repeat every hour for the first four hours.
Step 8: Remove beef short ribs from grill, cover with aluminum foil and wrap in an old towel. Let ribs rest for at least an hour, but preferably 90 minutes, before opening up and slicing.
How To Grill Beef Ribs In Foil
While many people like to grill beef ribs directly over an open flame, some genuinely prefer to use foil packets instead.
Grilling beef ribs in foil would follow a similar process as doing it without foil.
The difference is that you will need to place the marinated beef ribs on a reasonably sized piece of foil that will fold over and seal tightly.
You will then place the foil pack on the grill on indirect heat. The foil will trap steam and help the ribs cook much quicker without drying it out.
The meat will retain all its juices by absorbing it back while cooking, and you will end up with the most delicious, tender, and flavorful grilled beef ribs.

Time To Grill The Beef Ribs
Place your beef ribs bone-side down on the grill opposite to the heat source if you have two burners and in the center if you have three.
Allow ribs to cook undisturbed with the lid closed for 30 minutes. This keeps both heat and smoke inside the grill. Adjust your grill so the temperature stays between 200 and 225 degrees Fahrenheit.
Grilling Boneless Ribs
The method to grilling boneless short ribs, for example, is the same as for bone-in beef ribs. Apply your rub to all sides of the meat.
Cook with indirect heat at 225 degrees Fahrenheit with your wood chunks and drip pan set up. Count on approximately four hours per pound for the ribs to be ready to eat.
*Pro-tip Without the bone, you can grill a pound of boneless ribs for two hours or until it reaches a core temperature of 150 degrees Fahrenheit and it is similar to a steak.

Smoking The Beef Ribs
- Preheat your smoker to 275°F. Choose your wood wisely, I recommend something with medium flavor such as post oak or hickory, even a little mesquite added in tastes delicious.
- Smoke the ribs for 2 hours, undisturbed. Let the low and slow warm smoke bathe the meat, setting in the seasoning. These first 2 hours gives the meat a chance to firm up and soak in the smoke flavors while forming the beginning of a bark.
- Baste or spritz the ribs. Every 45-60 minutes, give them a little spray or mop. There is more detail below about this process.
