If you have a 3-burner gas grill, turn the outer burners on and leave the middle burner off. Adjust the dials, until the grill temperature is 250F degrees. That will probably be somewhere between medium and low. Add Cowboy Apple Wood Chips in a smoke box on the grill over the direct heat . The heat of the grill should ignite them. Preparing The Gas Grill
Once trimmed and scored, its time to prepare the gas grill. Light the burners on one side of the grill and set to medium-high heat. We want to maintain a cooking temperature of about 275°F. Leave the other half of the burners off as that will be the cooking area for the ham. This technique is the two-zone cooking set up. Place 2 single filet wood chunks from SmokinLicious® directly on the heat shield of the lit burner. These will heat and release the smoke vapor and add flavor to our ham. Total time cooking the ham in this manner will be about 30 minutes. The ham is placed on the cold half of the grill with the flat side of the ham on the grate.
After 30 minutes, take two long sheets of heavy-duty foil and place the ham on the foil. Take your pre-made glaze and cover the ham with about half of the glaze mixture. Now, fold the foil around the ham sealing at the top. Place the foil-wrapped ham back on the cold side of the grill and insert a meat thermometer in the meat at least 1-inch away from the bone if you have a bone-in cut of ham. Let cook until the thermometer registers 130°F. Every 15 minutes, brush the ham with glaze dripping that have collected in the bottom of the foil. Once cooked to 130°F, remove the ham from the foil, drain the residual glaze back into a saucepan with remaining uncooked glaze you had reserved and allowed to heat on low.

However, there are several different types of ham to buy: boneless, bone-in butt, bone-in shank, or spiral cut. Cross boneless off the list for obvious reasons. Pass on the spiral cut, too. Why pay someone else to carve the ham and worse, set the stage for overcooking. This leaves bone-in from the butt or shank. While both are good, the butt end is more tender. The butt end it is.
Since the ham is already cooked, the grilling process is essentially a giant reheat. With a bone-in ham, its a process about impossible to mess up. Your holiday dinner is guaranteed to be a success.

Use A Low Temperature
Keep the ham moist and flavorful by keeping the temperature low. This is very important if you choose a sugar-based glaze for your ham. Sugar burns at 265 F and, if it burns, will ruin the crust on the surface of your ham. This is why we recommend setting your grill to a temperature of around 250 F.
Since this type of ham is ready to eat out of the package, there is no need to hit a specific temperature to make it safe. We are talking a typical ham here, not a fresh ham . If you have a “cook-before-eating” ham, then you must cook it to a minimum temperature of 160 F before taking it off the grill.
There are a few strategies you can use here to heat your ham. The traditional method is to roast the ham at 325 F for 15 to 20 minutes per pound for a whole ham and 18 to 25 minutes per pound for half hams. Keep this temperature lower and increase the time if you are heating a “ready-to-eat ham.” If the ham is a “cook-before-eating,” then it is best to start out with a higher temperature. At the lower temperature, the “ready-to-eat ham” will cook at about 20 minutes per pound.
Spiral cut hams cook faster since the heat will get in through the slices. For this ham, the cooking time will be around 15 minutes per pound. In order to heat the ham through and get a good sugary crust on the outside, you should plan on sticking to the time, but don’t be too concerned with the final internal temperature.
