How to Grill Beef Short Ribs on a Gas Grill

When it comes to how long to grill ribs, the type of grill doesnt make a huge difference. In other words, you can expect your cooking time to remain the same whether youre using a charcoal grill, gas grill, kamado grill, or pellet grill.

That being said though, its more ideal to use grills that use charcoal or wood pellets as a fuel source. Wood pellets and charcoal both smoke when ignited, and the smoke will impart delicious smokey flavor into your ribs.

How To Cook Pork Ribs On The Grill

You start by rubbing racks of pork baby back ribs with an aromatic mix of paprika, chile powder, cumin, coriander, cayenne, salt, pepper and brown sugar. The ribs are then wrapped in foil and cooked covered on the grill over direct medium heat for 1 hour. I personally prefer using a charcoal grill, but you could easily make these on a gas grill. The key is to maintain a temperature of 350°F 400°F within the covered grill.

The ribs are then unwrapped and finished on the grill with the addition of hickory wood chips and store bought barbecue sauce. You baste and turn the ribs a few times over 10 12 minutes, resulting in saucy, smoky, charred ribs. So. Yum.

Tip: Use A Two Zone Grilling Set Up

You want to use a two zone grilling set up when grilling ribs, essentially turning your grill into a convection side cooker where your food is cooked with indirect heat.

Indirect heat cooking will lead to even, tender, and tasty results when it comes to low and slow cooking on a grill. Using direct heat will mean that you run the risk of over cooking the outer layer of your ribs before the inside has had a chance to properly cook. The end result of that would be a charred outside and a tough, chewy inside.

You can read more about indirect heat grilling here, but essentially you should turn on the burners on only one side of your grill, and place your food on the other side of the grill to cook.

Afterward, place the wrapped ribs onto the grill on the side where there is indirect heat. Close the lid again and increase the temperature to around 375°F. This temperature is enough to let the apple juice boil to tenderize the ribs.

Keep the ribs in the grill for thirty minutes before you lower the heat. Then, you can unwrap the ribs and test if they are already tender and flexible. Hold the rack of ribs at one end and figure out if it is already flexible.

If you notice that any sides have not entirely browned, you can wrap the ribs back inside the foil and allow them to grill for another ten to fifteen minutes using indirect heat at around 250°F to 265°F. Tender Ribs: How To Grill Them

Ribs are one of the best meats you can eat at a barbecue restaurant, but they take lots of time to make yourself, especially if you want them tender and juicy. Grilling your own ribs is not easy at all unless you know what type of meat to use for it and how long to cook them for.

Lets get started!

How To Boil Ribs

Boiling ribs or simmering ribs is one of the most straightforward was of precooking them for grilling. You can use any liquid to boil your ribs in and add as many seasonings as you want. Or, if you just want pure porky flavor, keep it simple with salt.

  • Add the ribs to a large stockpot and add enough cool water to cover.
  • At this point you can also add any seasonings or aromatics to your water. There are so many options here, and youre only limited by your culinary imagination. Think of it like making a flavorful soup. In fact, you can even keep the leftover liquid for making other dishes later.
  • Bring the pot to a boil, reduce the heat to low and cover. Simmer for about two hours, adding more water if needed.
  • Check the ribs for tenderness. You should be able to poke through the meat easily with a small knife or fork and reach the bone. If the meat isnt tender enough yet, cook for longer in 30-minute increments until it is.
  • You can speed up this process by using a pressure cooker or Instant Pot. Remember to use the natural pressure release method to prevent shredding the meat.

    How To Grill Pork Ribs

Before grilling pork ribs, its important to prep them before hand to get the most robust flavor thatll have your family and friends wanting more. I described this in the section above but Ill reiterate here.

First, wash the slab of pork spare ribs under cold water then pat dry with paper towels. If youre into removing the membrane from the backside, take a paring knife to lift the membrane from one edge of the backside and gently pull it back and discard. You may want to use a paper towel to grip the membrane more easily. Although some people take a few extra minutes to remove the membrane, I do not find it necessary. At this point, use a knife to remove any excess fat and discard.

Season both sides of the slab of ribs with kosher salt and a generous amount of dry rub then gently press the seasoning with your hands into the ribs. Place the slab of ribs onto a roasting pan or baking sheet and cover with plastic wrap and allow the ribs to marinate for at least 1 hour up to 24 hours in the fridge. Remove the ribs from the fridge and allow them to come to room temperature.

Preheat your charcoal grill then position the slab of ribs onto the grill grates and close the lid. After 30 minutes, turn the slab of ribs over to grill the other side for 30 to 45 minutes. By this time, the ribs should be a beautiful brown color and no longer pink.

How To Cook Pork Ribs On A Charcoal Grill

Smoking with charcoal is tricky. The main difficulty is maintaining a low temperature. Most charcoal grills are designed to give you a hot fire for cooking burgers and steaks, not for hours and hours of cooking.

You also have to set up your charcoal grill for indirect heat that means the charcoals stay on one side of the grill, and the ribs stay on the other.

Measuring and arranging the charcoal briquettes is key. If you add the same amount of charcoal you would for cooking burgers, the grill will be way too hot. Also, if you light all of the charcoal at once, it may not stay hot long enough to smoke your ribs. One recent innovation to help solve this problem is the snake method, where you arrange the briquettes in a line that slowly ignites as you smoke.

You won’t be able to regulate the temperature at the touch of a button. If the fire dies out, you’ll need to open the charcoal grill and add more briquettes. In a worst-case scenario, you’ll need to take the ribs out and relight completely. In both cases, the meat will cool down, drastically increasing your cook time.

How Long To Grill St Louis Style Ribs

St. Louis style pork ribs come from the sparerib portion of the pig, which is cut just below the baby back section of the rib cage. Spareribs have the rib tip section attached, whereas St. Louis style has the rib tip section chopped off.

This cut of ribs is naturally larger and tougher compared to baby backs, and tastes meatier and can be much more flavorful. Since they are larger and tougher, they require a little bit more time on the grill to finish.

    The Slow Way :

For proper low and slow grill cooking, set your grills temperature to 225°F and place the ribs on the indirect side to cook for about 5 to 6 hours.

    The Fast Way:

If youre in a rush for St. Louis style ribs, set your grills temperature to 325°F and grill the ribs on the indirect side for approximately 2 to 3 hours.
