How to Cook Tri-Tip on the Grill

If you dont have a grill or the weather isnt cooperating, cook your tri-tip steak inside under the broiler. The broiler works the same way as the grill except the heat comes from above.

Preheat the broiler using the High setting on your oven. Position an oven rack three to four inches below the heat. Place the steak on a broiler pan and slide it onto the oven rack. Cook for four to five minutes per side, reducing the cooking time if your steaks are thinner than one inch thick.

Smoke The Tri Tip At Low Temperature

Place the tri tip on your pellet grill and put some smoke on it at a low temperature setting.

  • If you are using a Traeger Ironwood then you will be using the Super Smoke mode.
  • If you are using a Traeger Pro 585 or a Silverton 620 that does not have Super Smoke mode then set the grill to 180F.
  • If you are using a Pit Boss or Z Grills then you will be using the Smoke setting.

I like to use either Hickory or Pecan pellets when I smoke beef. Cherry pellets or any of the manufacturers Competition Blends would also be good choices.

If you are using a Pit Boss, Camp Chef, or any other pellet grill with Flame Broiling functionality then make sure the tri tip is not located over the fire pot as that location is usually a hot spot on these grills.

On Traeger and Z Grills that have a heat deflector over the fire pot the temperature distribution is usually better and hit spots are not a major concern.

Let the tri tip smoke at the low temperature setting for an hour.

After an hour, raise the temperature of the grill to 250F and cook the tri tip until an internal temperature of 130F is reached in the thickest part of the roast. This will take about 30-45 minutes.

Use a digital thermometer to measure the internal temperature. Dont guess.

When the steak is finished it will have a beautiful, flavorful crust and will be full of smoke flavor. That is some great eats!

How To Cook Tri Tip In Oven Or On A Grill

Its very simple: Rub the spices on the meat , place it in a large ziplock with some olive oil, and then marinate overnight, or at least several hours.

Fagundes is famous for their Santa Maria style dry rub seasoning. I know its a secret recipe, so I didnt bother asking for it, but after lots of research, Ive come up with something that tastes just right to me! Its so simple. Just a little salt and pepper and garlic, plus some other spices to enhance that garlicky combo. Its so good! And you dont even have to chop anything.

When you are ready to cook, you can do it the best way, which is on the grill, or the second best way, which is in the oven. Both ways you are going to get an amazingly tender tri tip, but you are only going to get that ultra-crispy black exterior from the grill. The smoke also adds flavor. The original Santa Maria tri tip is traditionally grilled over red oak wood, but I dont have any and Im guessing you dont either. I promise, a regular gas grill will work just fine! Charcoal would be great too if you have that.

If youre grilling without an instant-read thermometer, its time to elevate your grilling game and stop guessing about doneness. Great grilling or barbecue relies more on temperature than time. There are so many variables, any grilling recipe depending on time alone will always be a shot in the dark.

  • When the thicker, middle portion reaches medium-rare, the thinner ends will be closer to medium.

As you can see in the photo below, the temperature of the tapered ends is almost 10 degrees higher than the middle, taken at the same time.

Picking The Right Piece Of Meat

Prepping the perfect tri-top starts with the choice you make at the butchery or grocery store. The quality and freshness of the meat chosen will affect the final product. Look for red cuts , with noticeable streaks of fat running through the meat. These streaks are a good indicator of a well-marbled, flavorful cut. If the cut is closely trimmed, you can see these white streaks across the muscles within the grain of the meat.

Some tri-tip cuts are sold untrimmed, meaning that quite a thick layer of fat is left on the meat on one side. Try to find a steak that has a balanced fat to lean meat ratio. If the outside fat cap is thicker than 1/4-inch, trim it to a little less under the ¼-inch thickness. Also, depending on the size, you can trim more or less. The fat is what holds the flavors from a marinade or dry-rub, but too much of it is not good for your health. As soon as you get home, refrigerate your raw steak and keep it in plastic packaging to avoid any leakages.

You can smoke a tri tip on any kind of smoker you have available, however, you need to be able to maintain a pretty solid 225 degrees F for the second step of the process. I made this steak on my Camp Chef SmokePro pellet smoker, and had great results.

During this stage, the tri tip will slowly raise in temperature creating an even cook from edge to edge and help retain moisture inside of your meat. You want to pull your meat off the smoker when the meat is within 5-10 degrees of your final target temperature .

How To Slice A Tri Tip Roast

Tri tip is kind of weird because the grain runs in two different directions. You cant slice it in the same direction all the way across. Use the above photo as a guide. The black lines are where you should cut.

Tri tip should be cut against the grain, and that means your knife should be perpendicular to the lines you can see in the meat. The thick black line that Ive drawn above, where you see that thicker fat, is where you can cut the roast in half. Then slice each section of the tri tip against the grain. Thats why some of the photos on this post show small pieces of meat, and some show super long and thin slices, like this:

Grilling tri tip is a fairly easy process when all is said and done. All it takes is keeping an eye on the steaks and monitoring the internal temperature of the meat for doneness.

Before putting your tri tip cut on the grill, make sure to let it come to room temperature. This step helps ensure the steak cooks evenly and achieves the desired tender texture.

Once the meat is room temperature, its time to blend the spices. My favorite spice blend for tri-tip includes salt, black pepper, cayenne pepper, granulated garlic, granulated onion and just a little sugar to bring it all together.

Preheat your grill then rub your spices all over the steak. When coating the meat in your spice blend, do your best to get as much of the beef covered as you can. I usually end up having a little bit of the spice blend leftover, so dont worry if you wind up with extra.

You want to place your tri tip on the grill fat side down and let it cook for about 5 minutes on the first side. This may take more or less time once you see a dark brown crust develop youre ready to flip the meat.

The second side of the steak will take a little longer, about 8 minutes. After both sides are beautifully brown and crusted, take them off of the grill and let them continue cooking on indirect heat until they reach desired doneness.

When Im cooking a medium rare steak, I remove it from heat when its internal temperature has reached 130. This is where your meat thermometer will come in handy!

Have you ever had tri tip? If not you are missing out. Today I will show you how to cook tri tip on the grill or in the oven.

Tri tip is a triangular cut from the bottom sirloin, with 3 tips. Grilling it became a thing in the 50s in Santa Maria, California, and its getting more popular nationwide, but some still havent heard of it. Sometimes outside of California its called a triangle roast. If you ask your butcher for a tri tip roast and he gives you a blank stare, try calling it the California cut.

Its a unique cut that is part steak, part roast. When grilled, you get that perfectly tender, pink center with a browned-to-a-crisp, caramelized exterior, but it doesnt take as long to cook as a full roast. Its also cheaper than if you were to buy an equivalent amount of steak.

Tri tip is HUGE in my family. Weve eaten it for every Christmas dinner for as long as I can remember. My family was born and bred in California, so I had no idea it was a regional thing until I moved out of state as an adult, and realized people didnt know what cut of meat I was talking about.
