What Wood Pellets Pair Well With Grilled Pizza

These are our favorite wood pellets for different grilled pizzas.

Wood pellets with a stronger flavor profile like hickory, work best with meatier pizzas like our sausage-topped Combination Pizza because they hold their own against the stronger flavors of the meat.

Milder wood pellets like alder are great for vegetarian options like our Baked Wood-Fired Pizza because you dont want the strong flavor of the wood pellets to overpower the more delicate flavors of your toppings.

Prepare The Toppings And Heat The Grill

As you wait for the dough to proof, now is a good time to prepare your favorite grilled pizza toppings.

You also want to heat your grill just as you would preheat an oven. Allow the grill to heat for 20 minutes to a temperature of 500 degrees Fahrenheit. Cooking pizza on the grill on high heat gives it a crispy bite on the outside and a nice chewiness inside. It also keeps the dough from sticking to the grates.

Three: Assemble The Pizza

All ingredients should be chopped, sliced and otherwise prepared before forming the pizza dough.

Shape the fresh pizza dough using plenty of flour to prevent sticking. You can use a rolling pin dusted with flour, but we prefer to simply use our hands to stretch and shape the dough. The more “relaxed” the dough becomes, the easier it is to shape. Leave the dough, covered, at room temperature for at least an hour before using it. We find that 10 to 12 ounces of dough is ideal for making pizzas using this technique. It is easier to make multiple small pizzas than it is one large pizza.The dough should be formed to a maximum of 1/4″ thick.

Sprinkle the pizza peel with corn meal or flour so that the pizza will slide off easily when you move it to the grill. We recommend a perforated metal pizza peel. Transfer the pizza dough to the pizza peel before assembling the pizza.

Add the ingredients, and be sure not to overload the pizza.

How To Cook Pizza On The Pellet Grill Without A Stone

If you dont have a pizza stone, you can either grill your pizza on a baking sheet or place the pizza directly on the grill grates. Some folks are concerned their dough will fall through the grill grates, but as long as you preheat your grill, youll be fine.

Just like with a pizza stone, you want the grill grates to be hot so the crust gets that quick burst of heat the moment it hits the grill. This will cause the crust to start cooking and firm up immediately.

However, even if you preheat your grill, loose dough could still fall through the grates. If your dough is a loose consistency, you might want to add flour or start over. Your pizza is going to have a host of other problems if your dough isnt right.

If youre using an open-flame grill instead of a Traeger, you will want to check the bottom of your crust from time-to-time to ensure it doesnt burn.

Without A Pizza Stone Pizza Cooking Method

Prepare the pizza dough so that it is ready to be baked, expand it and stretch it to your preferred thickness.

Set and preheat your grill to about 350 to 400 F but dont be afraid to modify the grills temperature to not burn the dough. The goal in this step is to lightly toast the bottom of the dough.

Once the pizza doughs bottom begins to brown, remove it from the grill and get your dough ready for toppings.

After adding your toppings, place the pizza in your grill and close the lid. Check the pizza cooking progress after 2 to 3 minutes. The pizzas bottom should start to crip and char but not burn, and the cheese on the pizza should start melting.

Once the cheese starts bubbling remove the pizza from the grill.

What Temperature Do You Cook Pizza On The Grill

Pizza dough cooks quickly, and your pizza will only need to be in the grill for a few minutes, depending on your grills temperature. The temperature to cook your pizza will vary depending on whether you are using a pizza stone or are cooking the pie directly on the grills grates.

However, if you are grilling your pizza directly on the grills grates, you should try temperatures between 350 to 400 degrees F. Pizza dough can cook dry and burn quickly. So it is best to slow down the grill to protect the bottom of your pizza but allow the cheeses and other topics to get to temperature and cook.

If you are using a baking stone, you can cook at a higher temperature and preheat the stone from 400 to 500 degrees.

Without A Pizza Stone

Before you get started, have a look at your grill grates and consider if your pizza is likely to collapse through the grates. While a droopy and overly crispy edge to your pizza isnt the end of the world, it is a bit disappointing, so if your grates are wide and you dont have a pizza stone, use a large baking sheet if you have one.

Once you know how youre going to cook the pizza, set your pellet grill to the highest temperature setting we need it hot for pizza! Wait for 15 minutes before you add the pizza, as you need the grates to be hot so your pizza doesnt sag.

Allow the pizza to cook for around 12 minutes, but keep an eye on it to ensure the crust doesnt burn. If youre cooking from frozen, follow the temperature and timing on the packaging.

How To Cook Pizza On A Gas Grill

Preheat your grill to LOW heat. I keep mine on the lowest setting. Youll also want to make sure that your grates are clean to help prevent sticking.

While your grill is heating up you will want to prepare your dough. On a floured surface roll/stretch out the pizza dough to the approximate size and shape of a standard sheet pan. A sheet pan will be your main mode of transportation for your pizza so youll want it to fit and I found that having it about the size of a sheet pan fits very nicely on a typical grill.

Lightly flour your sheet pan and transfer the rolled out pizza dough to the pan. Using a brush very lightly oil the entire top side of the pizza. Before you attempt to put your dough on the grill give the sheet pan a little shake to make sure that the dough isnt sticking to the sheet pan.

VERY CAREFULLY flip the oiled side of the pizza onto the grill. Use caution and I recommend oven mits/gloves. If your dough gets messed up, you do have a few moments to quickly strech it back out/ move it before it starts cooking BUT do so very carefully. Let dough cook for 4 minutes to form crust.

Alternatively if you dont want to flip your pizza onto the grill just carefully pick it up and lay it down oiled side down, whatever floats your boat, I have just found it faster to flip it on.

After you let the dough pre-cook into a crust carefully remove the pizza crust from the grill using spatulas or a pizza board to get it back onto the sheet pan.

To easily add your pizza dough onto the grill grates, simply take your parchment paper where the dough has been stretched out, and flip it over so that the dough lands safely onto the grate. Then, peel your parchment paper off of the back. This takes practice the first few times, but Ive found its the easiest way to do it!

How Long Do You Cook Pizza On A Traeger Grill

The length of time will depend on how well-done you like your pizza and how thick it is. A thinner crust will cook faster than a thicker one.

If you like your pizza well done, use an instant-read thermometer to check its temperature after about 10 minutes of cooking time then continue until it reaches that temperature. If you prefer softer crusts, cook for less time or until just barely cooked through.

How To Grill A Frozen Pizza On A Pellet Grill

Grilling a frozen pizza on a Traeger is as easy as baking it in an oven. To grill a frozen pizza, heat your grill to the recommended temperature according to the packaging, and grill until the crust is crispy and the cheese is melted. Because a Traeger doesnt have open flame like a gas or charcoal grill, you don’t have to worry about the crust burning. Simply set a temperature and cook, just like you would with your indoor oven.
