    Selecting The Best Shrimp

At the store, you will find a variety of shrimp ranging in size from extra small to extra colossal. Large and jumbo shrimp are the most common and economical and a great size for the grill.

When determining how much shrimp you’ll need, keep the count per pound in mind. You will get around 30 large shrimp per pound and about 20 jumbo shrimp per pound. If shrimp is your main dish, plan on 1/3- to 1/2-pound per person. If you choose to leave the shells on, make it 3/4-pound per person.

Raw shrimp is the best choice for the grill, though precooked shrimp will work. Due to safety and flavor concerns, do not refreeze shrimp that have been thawed out. Most likely, the shrimp on display in the grocer’s case was previously frozen. Unless you have live shrimp available, you’re better off with individually quick frozen shrimp.

Keep In Mind That Fresh Shrimp Is Highly Perishable

While fresh shrimp is definitely the way to go, it does have a shorter shelf life than frozen shrimp, so if you do find something truly fresh, then you need to use it quickly. Here are some guidelines when it comes to fresh shrimp:

    • Fresh shrimp without a shell last 6-9 months in a freezer
    • Fresh shrimp with the shell on last 2-3 days in a fridge
    • Fresh shrimp with the shell on last 9-12 months in a freezer

Proper storage is important. When you buy fresh shrimp, you need to put it in the fridge or freezer immediately to preserve it. Moreover, keeping it away from moisture is important, and if you plan on freezing it, make sure to use a container that is meant for the freezer.

Getting Shrimp Ready For The Grill

    How to Grill Shrimp

Thaw shrimp just before cooking. Its best to buy shrimp frozen, since their texture deteriorates quite quickly once thawed. The best way to do this is to put them in a colander and run cold water over them until thawed.

Devein or notits up to you. A lot of shrimp is sold already deveined, either deliberately or because the vein often comes out naturally when the heads are removed. The vein wont hurt you, but its sometimes unsightly and a bit gritty. If you want to devein your shrimp, try my easy method below.

Make your own easy-peel shrimp. If the shrimp havent already been slit down the back for faster peeling, you can do it yourself after theyre thawed. Hold a shrimp between your thumb and forefinger at the top of the shrimp and use kitchen shears to snip down the spine, stopping at the tail. At this point, you can easily remove the vein by picking it up in the middle and pulling it out with the tip of the shears or a paring knife.

    Put The Shrimp On Skewers

It’ll be a lot easier to grill your shrimp without it falling through the grill grates.

In order to help with the small size of the shrimp, you can thread shrimp onto skewers.

You can use metal skewers or wooden skewers, depending on your preference. Thread the shrimp on in a way that is uniform so they don’t fall off.

    Cleaning And Seasoning The Shrimp

  • 1Buy large frozen or fresh shrimp. Jumbo and larger variations of shrimp are the best for grilling because they wont fall through the grates of the grill and are easier to handle than smaller shrimp. Smaller shrimp are also more likely to overcook on the grill, which could lead to a rubbery or tough texture.XResearch source
  • Buy U/10 or U/20 shrimp. This means that there is either 10 or 20 shrimp per pound.
  • Cook fresh shrimp the same day that you purchase them or freeze them If you plan on making them later.
  • When you bring fresh shrimp home, keep them on a bed of ice so that they dont go bad.
  • 2Thaw the shrimp if they are frozen. You can leave the frozen shrimp in the refrigerator overnight, or rinse the shrimp under cold water for an hour. Once the shrimp are thawed, rinse them one last time under cold water and drain them in a colander. Then, use paper towels to pat them dry.XResearch source
  • When the shrimp are thawed, they should appear slightly translucent.XResearch source
  • 3Peel the shrimp if you have to devein them. Youll know you have to devein the shrimp if there is a black vein running down the back of the shrimp. Start at the top of the shrimp and cut through shrimps shell with a pair of scissors. You can cut all the way down the tail, or stop before the tail to keep it on. Peel away the excess shell and throw it away.XResearch source
  • If you keep the tail on, it can serve as your handle for dipping and eating the grilled seafood.

    Selecting Shrimp

Have you ever wondered what the deal is with shrimp sizing? Theyre available in jumbo, large, medium and small, and although these terms are frequently used on packaging, shrimp are officially sized per pound. A good rule of thumb: The fewer shrimp per pound, the larger the individual shrimp. Refer to the chart below for more detailed descriptions of each size category.

    Count
    Fewer than 10 per pound
U15 Fewer than 15 per pound
    16-20
    41-50 per pound Small

Our favorite size for grilling is large . Theyre big enough to not fall through the grill grates, yet small enough to be tender and juicy.

To Peel or Not to Peel

I always start by buying shell-on shrimp, even if Im going to peel them myself. Theyre less expensive, and I find that they taste better. Plus, I get to keep the shells to make seafood stock.

Sometimes the tails are left on peeled shrimp. This is a matter of preferenceit gives the shrimp a nicer appearance, but it can make them a bit messier to eat.

    How to Grill Shrimp

Properly storing your shrimp before, during, and after grilling is very important. Bacteria grows very quickly at temperatures between 40-140 degrees. You will always want to think about keeping your food either colder than 40 degrees or warmer than 140 degrees. Food should only be left at room temperatures for a maximum of 2 hours.

Grilled shrimp storage should follow these guidelines:

    • Tightly pack: Store shrimp in a shallow airtight container or heavy-duty aluminum foil or plastic wrap.
    • Refrigerator: 3-4 days cooked, 1-2 days raw
    • Freezer: 3 months cooked, 3-6 months raw
    • To re-heat cooked shrimp from frozen: Thaw in the refrigerator and then keep 3-4 days max before cooking. Do not re-freeze. If you thaw in the microwave or in cold water, it needs to be eaten right away, then discarded.
