I use the same method for reheating roasted lamb chops that I do for reverse sear steak to preserve the pink center:
- Preheat the oven to a low temperature, such as 250 or 300 degrees F.
- Place the lamb chops in a baking dish and add a little broth to the bottom . Seal the top with foil.
- Heat in the oven for about 10 minutes, or until warm.

If you dont have a thermometer you can use the following guidelines for timing on a 1 1/2 lamb chop to achieve

Once the bottom has formed the brown crust, you need to continue flipping the chops until they reach an internal temperature of 145 degrees F in the center. You will need your kitchen thermometer for this, which you should insert into the thickest part of the meat.Temperatures of 145 degrees F will give you a medium-rare lamb chop. If you prefer to have a well-done lamb chop, aim for an internal temperature of 160-170 degrees F. Ideally, though, you dont want the meat well-done because it can dry out the lamb. Once you have achieved the desired internal temperature, leave the chops to cook for a further four to six minutes.
What Is A Lamb Loin Chop
A lamb loin chop is cut from the back waist of the lamb, and doesnt have a rib bone . Both loin chops and rib chops have tender meat which makes it great for things like searing, broiling and, of course, grilling.
This cut of meat is generally a bit meatier than rib chops, and they almost look like mini t-bone steaks.

What Does Lamb Taste Like
Lamb is a domestically raised sheep thats under the age of one year. This provides very tender meat with a very subtle gaminess compared to older sheep. Most lamb is grass-finished, which gives lamb its unique flavour. We would describe lamb taste as grassy, robust and pastoral. Also, if we compare it to beef, lamb is firm with a tender texture.
Moreover, the richness comes from the fat on the animal, so look for even distribution in the meat with some surrounding the edges of the chop.

What You Need To Make Pan Seared Lamb Chops
- Lamb chops:;I used bone-in lamb loin chops because they fit well in the pan although you could also use lamb rib chops if thats what you have available. If there is a thick layer of fat around your lamb chops, you may want to trim it before cooking since most of it wont render.
- Salt:;Coarse ground kosher is the way to go here.
- Freshly ground black pepper
- Olive oil:;A couple of tablespoons of good olive oil are added to the hot pan before the lamb chops.
- Butter:;The butter adds such wonderful flavor to the crust that develops on the lamb chops.
- Garlic:;Smash some fresh garlic cloves to add to the pan. They will flavor the butter that gets spooned over the top of the lamb chops towards the end of cooking.
- Fresh herbs:;These are optional, but I love adding a few sprigs or rosemary or thyme to the pan to add additional flavor to the pan sauce.

When you’re stumped for something easy to toss on the grill, think lamb loin chops.
These chops, not to be confused with the rib chop from the rack of lamb, are the porterhouse steak of the lamb. They even look like a tiny version of the porterhouse because there’s a T-shaped bone running down the middle of the chop. On one side of the bone is the fillet;;on the other;is the loin.;
The chops are tiny. Even with the bone, each weighs about 4 ounces and yields about 2 ounces of meat. Because of their size, lamb loin chops are ideal if you’re;watching portion sizes.;They’re also ideal for feeding a crowd. You can buy big packages of them at warehouse stores like Sams Club and Costco.;
Lamb loin chops are a bit less expensive than the luxurious rack of lamb. For imported lamb, used in today’s recipe, they’re;about $10 per pound. The rack runs about $15 per pound.
When I recently spotted a package of lamb loin chops at a local Sams Club, it occurred to me that it had been a while since I’d made them. The chops were nice and plump-looking, about 2 inches thick. Experience has taught me that when cooking;loin chops, thicker is better. If the chops are too thin, they;easily overcook. Lamb should never be cooked;more than medium.;
Because lamb loin chops are small, you can marinate them as little as an hour and up to overnight. I marinated them three hours, which was plenty of time.
