How To Prep Shrimp For The Grill

Once youve got thawed shrimp you need to remove the shell tail and all and skewer it. There are couple of methods for peeling and deveining, but I find a pair of sharp kitchen shears the best tool for the job. If you run the blade through the top of the shell you can open up the shell and remove most of the vein at once.

How To Grill Clams

When buying clams, make sure all the shells seal tight. If you find one that does not, discard it. When youre ready to grill, heres what to do:

  • Grill cleaned clams over direct high heat for 5 minutes. Make sure the lid is down. After 5 minutes check the grill and remove any clams that have opened.
  • Grill clams for 2 to 3 more minutes, then check again. Replace the lid and check 2 to 3 minutes later, removing the remaining opened clams. If any have not opened, discard them.
  • Add smokiness if you want! From here, enjoy the clams immediately, or to add a layer of smokiness, return them to the grill under indirect low heat and smoke with apple or cherry wood for another 20 minutes.

    Scallops seared on a hot grill are second to none. Heres how to do it:

    Remember when Kenji published his article on how to grill perfect shrimp, in which he wrote that one of the best methods for ensuring tender grilled shrimp is to cook them in their shells? And then do you remember how he threw that option out the window just to be nice to those dainty folks among us who don’t like having to peel their shrimp and get their fingers messy? He spent so much time perfecting a shell-off method, which I’ll definitely be using in the future, from the baking soda and sugar dry-brine to the clever skewering arrangement that ensures juiciness.

    But, I, like Kenji, really, really love eating shell-on shrimp. I like them even more if they also have their heads still attached. Frankly, I like those heads as much, if not more, than I like the meaty tail. So I wanted to share one of my favorite shell-on grilled shrimp recipes, just so you guys have options. Shell-on, shell-off, we’ve got you covered.

    The best part is how easy a shell-on method isthose shells act as a temperature buffer, helping to prevent the shrimp from overcooking. Which means there’s very little to do beyond flavor them and grill them.

    My go-to shrimp marinade includes a splash of fish sauce, minced garlic, and ginger. For this recipe, I bumped up the aromatics with lemongrass and shallots, then added a burst of heat with chili flakes.

    A Few Tips For This Grilled Shrimp Recipe:

    • I dry brine the shrimp in advance to make sure they have a lovely salty flavor to the flesh, it doesnt take more than 20-30 minutes and is an easy way to quickly improve flavor.
    • Following advice from Serious Eats, I add a pinch of baking soda to the shrimp so they have a firm and snappy texture . It does turn the shells a little white, but the texture is SO worth it. So the final brine recipe is: 1 teaspoon of kosher salt and 1/4 teaspoon of baking soda per pound of shrimp.
    • The right knife can do wonders for butterflying the shell-on shrimp, and the best tool for this task is the Gerber Vital. Its got replaceable blades just like a scalpel, but theyre small enough to give you lots of control.

    Full-fat yogurt is the secret ingredient for flavorful grilled shrimp. The acidity of the yogurt gently tenderizes the shrimp before grilling and is an efficient vehicle for seasoning it with fresh herbs, garlic, and lemon juice. On the grill, the fat from the yogurt protects the shrimp from drying out.

    Solution #: Get Dry To Stay Moist

    We like moist food. We want our shrimp to be juicy. But there’s a difference between surface moisture and internal moisture. Internal moisture is what we’re really after. For the exterior, we actually want the exact opposite. Browning reactions can’t take place until surface moisture has evaporated, and it takes an awful lot of energy to evaporate that moisture. When you place a damp skewer full of shrimp on the grill, for at least the first several minutes, you’re waiting for surface moisture to evaporate. All the while, the interiors of those shrimp are getting hotter and hotter, thus expelling more moisture, which then has to be evaporated again, thus exacerbating the problem.

    Fact is, if you want shrimp that stay moist inside, they have to start dry outside. Carefully blotting them with paper towels helps, but there’s an even better solution. After skewering my shrimp, I lay the skewers over the edges of a baking dish so that the shrimp are completely elevated. I then place the whole thing, uncovered, in the refrigerator for an hour. Good air circulation means the shrimp dry out rapidly.

    When I’m ready to grill, I brush the shrimp with some olive oil and place them over the highest possible heat, pressing down on them slightly to ensure good contact with the grill grates.
