  • Make the marinade: In a mixing bowl whisk together honey, soy sauce, olive oil, garlic cloves and red pepper flakes if using until well combined.
  • Pour marinade over shrimp, rest: Place shrimp in a gallon size resealable bag or a shallow dish. Pour marinade over shrimp, seal bag while removing excess air. Rub marinade over shrimp and transfer to refrigerator and let marinate 30 60 minutes.
  • Tip: if using wooden skewers soak in water at least 30 minutes so they dont burn up. While the shrimp is marinating throw them in water if you havent already.
  • Heat grill: Preheat a grill over medium-high heat to about 400 degrees.
  • Thread shrimp on skewers: Thread shrimp onto skewers running through top and bottom of the shrimp, and fitting about 5 6 on each.

Grated Vs Shredded Parmesan Cheese

For some reason, even after all this time of cooking for a living I have a hard time remembering the difference between shredded and grated Parmesan cheese. Heres what you need for this recipe:

  • Grated Parmesan cheese: This is the powdery cheese that looks like snow! You can use either the shaker can or the or the containers. This is what youll need in this recipe, because it integrates into the texture of the bread crumbs.
  • Shredded Parmesan cheese: Shredded Parmesan cheese looks like little sticks of Parmesan. Its great for garnishing salads and soups. You could use it here in a pinch, but it has a different look. See Roasted Zucchini and Squash.

# Achieving The Right Temperatures

To get the perfect outer crust on your grilled cheese sandwich, you need to ensure that you use the right temperature, as any less or more will yield an undesirable result. To test the temperature, put a little bit of margarine on the skillet. If it melts and bubbles, thats the perfect temperature.

Always remember to put the heat on low-medium and also pre-heat the pan before you put the sandwich on it to prevent any burning or sticking. Many people tend to increase the temperature to make the bread brown faster, but thats a practice that often leads to your sandwich burning on one side.

Keeping the temperature too low may also prevent the bread from browning at all. Make sure to maintain a constant and consistent temperature throughout to get the best results.

This Grilled Cheese Looked Delicious But The Crust Was A Bit Too Soft

The sandwich came off the griddle with a perfect, lightly golden exterior. I could see the inside was cheesy and soft.

The first bite of this sandwich was definitely a touch too soft and chewy inside, maybe because the dry sandwich was fresh on my mind

Because butter has a low smoking point, the bread became golden very quickly on this iteration. That meant that the cheese, although mostly melted, was still coagulated , which threw the texture off.

Overall, though, this was delicious. The inside was gooey and the exterior was crispy.

The Open Face Technique

For years, I assembled the sandwich and then grilled it. But recently I came across a new technique I like a lot better. Lets call it: Open-face grilling.

Open-face grilling allows the cheese to melt more thoroughly. The tradeoff is you can only make one sandwich at a time. But if its perfection you want, this is your method.

  • Put both slices of bread in the skillet butter-side-down
  • Arrange half the cheese over each slice. Once its halfway melted, invert one slice onto the other.
  • Press down lightly with a spatula .
  • Finish grilling as needed until the cheese is melted and both sides of the bread are golden brown.

Open-face grilling makes it easy to insert accouterments like tomato slices or chutney midway through grilling. The partially melted cheese bonds to the filling and keeps it from sliding around.

Ways To Make Your Grilled Cheese Better Than Anyone Else’s

Theres more to grilled cheese than just bread and cheese.

Get the right bread. Almost any bread can work for a grilled cheese, but start out with bread that complements the remaining ingredients and doesnt have too many holes. If youre going for a sweet chèvre and jam grilled cheese, go for a few slices of country bread.

Step outside of your cheese comfort zone. Not that theres anything wrong with slices of American cheese product, but sample different options like Havarti, Brie, and even manchego.

Choose cheese that will melt. Hard cheese , most fresh crumbly cheese , and other kinds of cheese just refuse to melt. Pro tip: grated cheese melts faster and more evenly than slices of cheese.
