There are actually a few different ways to make grilled cheese in the oven using a sheet pan.
Anyhow, one method calls for using two half sheet pans, with the second pan placed on top of the sandwiches to speed up the cooking time. Give it a try if you like, but I didnt find this method to be very effective.
The grilled cheese sandwiches I made using this technique were unevenly browned and took about the same amount of time to cook. Plus, I was left with additional equipment to clean up and you know how much I haattteeee doing dishes.
The oven-baked grilled cheese method I use only dirties a single half sheet pan for 6 sandwiches. For each sandwich, simply spread the outsides of two pieces of bread with softened butter, layer with the desired number of slices of cheese on the inside, and place them on the baking sheet. Bake at 450 degrees for about 10 minutes, flipping the sandwiches halfway through cooking.

Soft and spreadable brie while delicious, can get a bit greasy when melted. The pan is just as important, if not more so, than the bread and cheese. A flimsy skillet will grill your sandwich unevenly. A skillet thats too small makes it hard to maneuver the sandwich.
For one sandwich at a time, I like a 10-inch cast-iron skillet.
Grilled cheese sandwiches dont really stick to the pan, so if you dont have a nonstick pan, its fine. I prefer a cast-iron pan.

Can You Freeze Grilled Cheese
If you want to store grilled cheese sandwiches for longer than two or three days, you will need to freeze them.
If you think about it, a grilled cheese sandwich is not that different from a pizza only in the way it is prepared, and we freeze pizza all the time, so why not grilled cheese sandwiches?
When freezing foods, rather than using an airtight container, I often use Ziploc bags for storing food.
I do this because its much easier to evacuate as much air from the bag as possible before sealing it. The less air that gets to the sandwich, the better.
A simple way of extracting as much air as you can is to seal the bag completely but leave one corner unsealed so you can insert a straw.
Suck out as much air as you can, and as you extract the straw, complete the sealing of the bag. You can keep grilled cheese sandwiches in your freezer for up to three months.
But for the best flavor, one month is good.
Im a great advocate of using a vacuum sealer when storing food. Its the perfect way of extracting air and sealing. You should try it.
Theyre not that costly, and in my view, they are well worth it, especially if you tend to freeze a lot of cooked dishes.

Bread: I went to the bakery section of my grocery store and got a nice round Italian bread loaf. You want to use a real sturdy piece of bread for this so it holds up to the heat and flipping. In other words, dont break out the generic white bread for this recipe.
Cheese: Im going to use two types of cheese here. I want to incorporate a Monterey jack cheese in with the habanero cheddar to not only reduce some of the spice but also add a nice melting oozing consistency I love how Monterey jack cheese melts.
