Try mayonnaise in place of butter for frying grilled cheese or scrambling eggsor give mayo a starring role next time you make mashed potatoes or garlic bread. Just dont use olive oil to finish sauces or pureed soupsit wont add the same creamy mouthfeel youll get from swirling in a pat of butter.

Double Up On Your Fats

I know, its putting one more nail in the coffin of health for this meal. But the combination of oil and butter is key.

Grill That Bad Boy Low And Slow

If youre using an electric griddle, set the temperature to about 275 degrees. Or use a roomy saute pan over medium-low heat.

Place the sandwich on the preheated cooking surface and let it cook for about 5 minutes, checking occasionally to make sure its not burning . Its tempting, but dont press down on the sandwich! Unless you like your grilled cheese extra flat, in that case, go for it.

After the first five minutes, carefully flip the sandwich with a spatula and cook the other side for 5 minutes.

Flip and cook each side for a couple more minutes each. The bread should start to get golden brown and the cheese nice and melty.

After about 15 minutes of cooking over medium-low heat, increase the heat to medium and, turning every so often, watch the sandwich carefully until the bread is perfectly toasted a golden brown.

What Temperature Do You Cook A Quesadilla At

To cook a stovetop quesadilla, a medium temperature is ideal. That’s because a lower temperature will not make your quesadilla crispy enough to be really delicious. However, a high temperature is not ideal either. Too high and your tortillas will burn before the cheese has a chance to melt and the fillings can become properly hot.

My top choice is sharp cheddar cheese because its combination of firmness and flavor. This cheese has a solid structure that holds together and stretches nicely when heated, and during its aging process, it undergoes complex flavor development as it ripens. Other fallback options with similar firm characteristics are swiss cheese, gruyere, gouda, Monterey jack, pepper jack, and mozzarella.

Plastic wrapped American cheese is a convenient choice, although its flavor tends to be saltier. Kids usually dont mind, but this may turn off some adults. Soft and spreadable brie while delicious, can get a bit greasy when melted. For a stronger flavored sandwich, you can sprinkle on Parmesan or blue cheese in combination with one of the mild-flavored firm cheeses.

    Close the sandwich and continue grilling, flipping the sandwich with a turner as needed, until both sides are golden brown, another 2-3 minutes per side.

    Usually, the second side takes less time than the first. Press down on the sandwich gently but firmly with your turner to compact it a little, but dont smoosh it. You may need to turn the heat down to medium-low to keep the bread from charring.

    Peek in the sandwich to see if the cheese is fully melted. If the bread is grilled to your liking but the cheese needs more time, turn the heat down and grill it a few minutes longer.

    The easiest thing to do when making grilled cheese is to burn the bread, because its so easy to do. To avoid burning your bread, you have one of two options. The first is to slather the outside of both ends of your sandwich with butter, keep your stove heat set to medium and cook the sandwich, flipping every 30 seconds or so or until the cheese is melted and the middle is warm.

    However, this isnt always possible. Therefore, we recommend heating your oven to 350 degrees F, slathering the outside of 2 pieces of bread with butter, putting them butter side down on a baking sheet and topping those pieces of bread with all the fixings.

    8 slices sourdough bread
    3 tablespoons finely shredded Manchego or Parmesan cheese
    1/8 teaspoon onion powder
    1/2 cup shredded sharp white cheddar cheese
    1/2 cup shredded Monterey Jack cheese
    1/2 cup shredded Gruyere cheese
    4 ounces Brie cheese, rind removed and sliced

    Steps:

    • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes remove.
