A brine produced from scratch: Pork chops are tenderized and kept moist and juicy by a simple brine made with water, kosher salt, sugar, and a couple of garlic cloves, which can be prepared in minutes and kept warm in the refrigerator.

    Although thermometers are the best way to determine if your pork is done cooking, you can gauge the doneness of pork by the color of the juices that come out of it when you poke a hole in it with a knife or fork. If the juices that come out of the pork run clear or are very faintly pink, the pork is done cooking.

    Brine Your Pork Chops For The Juiciest Results

    One of the best things you can do to increase juiciness when cooking lean meats like pork chops is brining. Brining meats helps to break down the proteins in their muscle fibers, preventing them from squeezing and drying out during cooking. The salt in the brine dissolves some of the proteins, forming a gel capable of holding on to more water. With more water and the protein structure of the meat altered, the meat will be juicier and more tender.

    Plus, you can help impart a little bit of flavor to the chops by brining them, so its a real win/win.

    When making the brine, I find it expedient to make it using only half the water, then adding ice to cool it and bring it to a proper dilution. Just be sure to use your Thermapen to check the temp of the brine before adding the chops. Food safety practices say that meat can be in the range between 40°F and 70°F for four hours. Getting the brine on the cool side before you put it in the fridge will ensure that you arent hanging out in that zone for too long.

    Note: After you brine your chops but before you cook them, dry them well with some paper towels. A wet surface will not brown, and youll pump too much heat into the meat as you try to cook off that water. Starting with meat that has been dried off will help you get better browning without overcooking.

    How To Grill Pork Chops On A Gas Grill

  • Preheat grill to about 450° surface temperature.
  • Use boneless or bone-in pork chops about 1-inch thick. Trim fat if thicker than ¼ inch. Brine, if you have time. It is OK to use thinner or thicker, but it will affect cooking times.
  • Season to your taste.
  • Grill to an internal temperature of 145°about 12-14 minutes.
  • Rest for a few minutes off the heat before serving.

    Thick pork chops typically take about 20 minutes to grill to perfection – 8 minutes of searing over direct heat, plus 12 minutes of finishing over indirect heat. Its easy to check the temp of the thicker chops with a thermometer, and we think its a good practice.

    Is It Possible For Pork Chops To Be Pink

    Sure, you can use a poke test or a skewer to see if the fluids flow clear, but these methods dont guarantee that your meat is cooked to a safe temperature.

    Slice into the meat after it has rested for at least 5 minutes it should be pale white with a tinge of pink. At 145F, your pork is at a medium rare temperature, therefore the colour doesnt mean anything. If youd expect pink in a medium-rare steak, dont be startled if you see it in your pork chops!

    If the pink colour bothers you, cook it until it reaches 155 degrees Fahrenheit. Itll still taste good, but it wont be as juicy. If you cook it any longer than this, youll need a decent sauce to cover up the dry pieces.

  • Combine all of the barbecue sauce ingredients on the stove in a medium pan over medium heat.
  • Bring ingredients to a boil and then reduce heat to low and simmer for 5 minutes, stirring while simmering.
  • Reduce and set aside.
  • Preheat the grill to medium heat and oil the grates.
  • Season the pork chops on both sides with salt and pepper.
  • Put the pork chops on the grill, cooking for 2-3 minutes on the first side, then turn them over and brush some BBQ sauce on the tops and sides. Cook for 5-7 minutes.
  • Flip the pork chops again, brushing the BBQ sauce all over the tops and sides again. Cook for another 5-7 minutes.
  • Once the pork chops are done , take the pork chops off the grill.
  • Allow the meat to rest on a plate or cutting board, covered, for 5 minutes before serving.
  • Serve the juicy grilled pork chops with the remaining BBQ sauce if desired.

    Because the grilling time for bone-in pork chops varies depending on thickness, its best to judge by temperature rather than time. When I tested this recipe, I used thick cut pork chops that were approximately 1 1/2 inches thick, and it took about 15 minutes for them to achieve 120 degrees F over indirect heat, after which I finished with a 5 minute sear over medium high heat.

    Should I Grill My Pork Chops With The Bone In

    You can choose to cook your pork chops with the bone or without provided you give the chops ample time to cook to the right internal temperature, it wont make a huge difference to the finished result.
