Pork Chop Dry Rub For Grilling

What Makes This Recipe The Best

How To Dry Rub and Grill Pork Chops

What sets this Grilled Pork Chops recipe apart from the rest is the homemade spice rub and homemade barbecue sauce. Ive scaled down both the rub and barbecue sauce from my other recipes because you dont mess with perfection, and I added a brine for optimal tenderness. The dynamic spice rub is made with smoked paprika, chili powder, garlic powder, onion powder, chipotle pepper, salt and pepper. The seasonings envelop the pork in a smoky, earthy, robust, crust with just the right kick of heat that creates a caramelized seasoned crust once grilled.

And then theres the homemade barbecue sauce. Here are just a few comments regarding its deliciousness :

Absolutely incredible!! My husband is a huge BBQ rib fan. Hes been to rib competitions always looking for the best BBQ sauce. He was blown away. I havent even finished digesting and felt the need to leave this comment asap. Lol thank you... Danielle

.is the best BBQ Sauce I have ever had and I will be making my own from here on out. I was skeptical reading all the posts about how good it was and I now know why. Absolutely amazing Terry

How To Cook Bone In Pork Chops In Oven:

If the weather does not suit for grilling, cook the pork chops in the oven. Coat in oil and seasoning as normal.

Bake at 350 degrees for 25 minutes. We prefer to set the oven to 350 degrees because it helps to seal in the juices as opposed to a higher oven temperature.

The internal temperature of the pork should be 145 degrees. Boneless pork chops take about 5 minutes less to cook if you decide to use those.

How To Make Grilled Pork Chops

  • Start by placing your pork chops on a plate and pat them dry all over with a paper towel. Really take your time here.
  • Once dry, rub olive oil all over using your hands. Make sure to coat them well on both sides.
  • In a small bowl mix 1 tsp paprika, 1 tsp dried onion, 1/2 tsp dried garlic, sea salt and pepper to taste. Use a spoon to combine well.
  • Sprinkle half of the seasoning on one side of the pork chops and rub it in, then place them in a deep marinating dish. Sprinkle the rest of the seasoning on the other side of the pork chops, rub it in and cover your dish with cling film or a plate. Make sure it doesnt touch the top of the pork chops. Refrigerate anywhere from 1-8 hours to marinate. 8 hours or overnight will give the best flavor.
  • Preheat the grill to 450F. Once hot, grill the pork chops for 5-8 minutes on one side, then flip and grill 5-8 minutes on the other side. Keep the lid closed while grilling to maintain the heat. The pork chops are cooked to perfection when the internal temperature reaches 145F. Use a meat thermometer for this and remove them from the grill as soon as youre about to reach that temperature, otherwise the pork will overcook and become super dry.
  • Let the pork chops rest for about 5 minutes before cutting to finish cooking and set the juices. When done, serve them on a plate with your favorite side dish and enjoy!
  • Whats The Deal With Brining Pork Chops

    Grilled Pork Chops with Basil

Its a good rule of thumb to always brine pork chops before grilling. Because pork chops are fairly lean, submerging them in a brine does two things. First, it keeps the meat moist by introducing extra moisture, which provides a little insurance in case the meat gets a little overcooked. Second, it evenly seasons the meat beyond just the surface.

The base of this easy brine is just cold water whisked with salt. I like to add some sugar to help with browning on the grill, and you can also throw in aromatics like citrus peel, peppercorns, or bay leaves . Diamond Crystal kosher salt is what I use in my brine, but if you want to use another kind of salt, I recommend using an equal weight, not volume, of salt since the size of the salt granules vary greatly across brands and weight is the most accurate measurement.

Brining doesnt have to be elaborate or take a long time. Since these are chops and not a big bird like a turkey, even brining for 30 minutes does wonders, and thats about how long itll take to heat up the grill. The chops can sit in the brine for up to two hours, but dont go beyond that or the texture of the meat can get spongy. You can even brine individually frozen pork chops just put them in the brine for the full two hours. Theyll be defrosted and ready to grill at that point.

Pork chops are pretty straightforward to cook on the grill, but I have a few tips for you that will help ensure your chops come off the grill perfectly cooked and totally juicy.

    • Utilize two-zone grilling. Use two-zone heat on your grill to achieve juicy, perfectly cooked pork chops with that slightly charred grilled flavor.
    • Make sure that the pepper is freshly cracked. When mixing up your grilled pork chop rub, try using freshly cracked black pepper for a brighter flavor.
    • Dont poke the meat! Dont stab your pork chop with a fork or cut into them while they are still cooking. Youll lose a lot of the juices out of the meat.

Cooking time: Do not overcook pork or it will become tough and dry. The USDA recommends cooking pork to an internal temperature of 145°F. Cooking to 145°F will result in clear or slightly pink tinted juices and meat that is tender and juicy.

Let it restbefore and after cooking: Take pork out of the refrigerator about 15 minutes before cooking. Bringing the meat to room temperature will help it cook more evenly.

Let cooked pork rest for at least 10 minutes before carving. This allows juices to be distributed throughout the meat and results in juicer pork.

Slice it right: Cutting pork the grain will produce slices with shorter fibers, resulting in more tender pieces.

Its not always as simple as a set cooking time when youre grilling pork. Some loin chop pork cuts can be an inch thick while others arent quite that much. They must be defrosted too. If not, follow how to cook frozen pork chops instructions.

The easiest way to figure out if your pork is done cooking is to cook it over medium-high heat and check the internal temperature before pulling it off the grill. The last thing you want to do is overcook this, it will dry out easily. Unlike a larger hunk of meat which you want pulled you dont want to cook this a really long time.

    How To Season Pork Chops

    Dry

Once you have your seasoning ready youre good to go on seasoning your pork chops.

Like with most types of seasoning or rubs, apply it to your raw defrosted meat liberally and evenly over all sides. Try to get into every area you can and dont be shy with it.

And yes, youll need to use your hands.

Once youve applied it be sure to rub it in firmly. Were trying to really work it into the flesh of the meat as best as possible.

Once thats done, you dont need to leave the meat out or store it in the refrigerator. Were pretty much ready to grill right away.

As a side note, if youre wanting to bake or pan fry this instead then this seasoning will still work just fine. If its not obvious, Im just completely biased towards grilling!

Set up your charcoal or gas grill for indirect grilling at a fairly low heat. Once ready, transfer your pork chops to the indirect zone of your grill, and slowly work to raising the temperature within your grill chamber.

The reason for this is to allow the seasoning itself to cook and form a slight coat on the surface of your pork chops. It will work better into the flesh of the pork too, giving you juicy, flavor-packed meat.

Our target internal temperature for pork is 145°F, so be sure to use a good grill meat thermometer to monitor this.

This should give you a beautifully sweet and spicy edge to your grilled pork chops, and give you a pork rub that you can come back to again and again.
