How to Cook Pizza on a Gas Grill | Grillabilities from BBQGuys

Ingredients

  • 290 g whole wheat flour
  • 45 g cornmeal, finely ground
  • 3 g active dry yeast
  • 16 g kosher salt, preferably Diamond Crystal
  • 525 ml water, body temperature or a little below
  • Olive oil

Directions

  • Combine everything except water in a stand mixer and mix with a dough hook for 30 seconds to combine.
  • Turn off and add water. On low, mix for 2 minutes, then turn off and increase speed to medium and mix well for 3-4 more minutes or until dough pulls away from the bowl and is a complete ball of dough.
  • Lightly oil a bowl and add the dough and allow to rest on the counter for at least six hours and up to 12. As mentioned above, refrigerate overnight for use the next day if you are really into it.
  • Divide into four or five balls and they can be frozen at this point or cooked. To roll out, use a rolling pin.

    Ten Tips For Making A Kamado Pizza

    Start with a Clean Kamado Grill: The secret to getting stable and high temperatures is good airflow. Clean out any ash from your cooker. Make sure your baking stone and heat deflectors are clean and free of any food scraps from previous cooks. Leftover scraps can leave acrid smoke flavors on your food.

    Use Fresh Charcoal: Hardwood lump charcoal is the preferred fuel source for Kamado grills. Fresh charcoal will burn cleaner and hotter than charcoal that has been exposed to moisture and humidity.

    Preheat Your Kamado Grill: Allowing enough time for your grill, heat deflector, and pizza stone to come to temperature is very important. Kamado grills require time to come to temperature. But once the grill stabilizes, or becomes heat-soaked, it will stay at your desired temperature for quite some time. We recommend a full 90 minutes between lighting the charcoal and cooking your first pizza.

    Close the Lid: And keep it closed! Youve worked very hard to get the grill to your desired pizza cooking temperature, so dont leave the dome open for extended periods of time.

    Thin to Win: Pizzas cook pretty quicklymost of them are done in less than 20 minutes. Making sure meats, vegetables, and other toppings are sliced thinly before cooking allows them to cook evenly on the grill.

    One other benefit to cooking pizza on the Kamado grill is that its done outside. So if you get a taste for pizza on a hot summer day theres no need to fire up the oven and heat up the house.

    How To Grill Pizza

    Pizza on the Grill

    If you’re craving brick-oven crispy pizza crust, you can get the same results right at home with grilled pizza.

    fresh mozzarella, sliced thin and patted dry

    thinly sliced pepperoni or chorizo

    minced fresh rosemary

    shredded parmesan cheese

  • Sprinkle the back of a sheet pan with flour. Prepare toppings and pour a some vegetable oil into a small bowl. Have everything organized and ready to take outside.
  • Using your hands, press the dough out thin rectangle. Pull the dough up and sprinkle more flour underneath to keep the dough loose.
  • Prepare the grill for high direct heat. Using tongs, dip a folded paper towel in vegetable oil and rub on grates. Carefully slide pizza dough onto the grill. Close grill and cook for 2 3 minutes. Using tongs, lift dough and check to see if lightly brown.
  • Using tongs and a sheet pan, flip the pizza dough, so its grilled-side up. Brush pizza crust with olive oil and spread on pizza sauce. Top with mozzarella and pepperoni. Close grill and cook for another 2 3 minutes or until the bottom is a crispy brown and cheese melts. If the dough is browning but the toppings still need more time, lower the heat and let cook for an additional 2 minutes.
  • Transfer pizza to a cutting board. Sprinkle with rosemary and Parmesan cheese. Serve.

    Step By Step Instructions

    To make the pizza dough, whisk together half of the flour with the yeast, sugar, italian seasoning, and garlic powder. In a small bowl, stir together the warm water, olive oil, and salt. Pour the wet ingredients into the dry ingredients to form a thick paste.

    Slowly add the remaining flour, one half cup at a time until the dough forms a ball. Turn it out onto a floured surface and knead till smooth.

    Place the dough in an oiled bowl. Cover it and allow it to rise till doubled in size. Once risen, punch down the dough and divide into two equal pieces.

    Preheat the grill on high heat and then place the pizza stone on the grill. Allow it to heat up for at least 5 minutes and then lightly sprinkle it with cornmeal.

    Stretch out the pizza dough and lay it on the pizza stone. Gently press it onto the stone to cover it completely in an even layer and brush it lightly with olive oil. Close the grill and pre-cook the crust for about 5 minutes until it’s lightly browned on the bottom and the olive oil is bubbling on top.

    Using kitchen tongs, slide the crust off of the stone and directly onto the grill grates. Top the crust with the sauce and toppings and then close the grill to finish cooking.

    The pizza should take another 5-7 minutes to finish cooking. The crust should be browned on the bottom and the cheese should be slightly melted. Remove the pizza off of the grill and sprinkle it with any fresh toppings, like the oregano leaves. Repeat with any remaining pizza dough you have.

    Fire Up Your Pellet Grill And Heat Your Pizza Stone

    Its time to get your grill fired up and your pizza stone hot. For the most awesome grilled pizza of all time, youll need your smoker to be smokin hot. Use the control settings to set the temperature of your pellet grill between 480 and 500 degrees. Then, place your pizza stone directly in the center of the grill to allow it to begin heating up.     Remove Your Pizza From The Grill

    If you did your due diligence and sprinkled your peel and the pizza stone with cornmeal or semolina prior to baking, you should be able to easily slide your pizza peel under your cooked pizza in one smooth motion. However, sometimes things dont always work out as planned. If you find that your pizza is sticking to the stone, try using your peel to scrap the pizza off little by little. Be gentle, though. It may only be one small part of the crust that needs to be loosened. If youre using a gas grill and find yourself struggling, be sure to turn off your grill so you dont burn yourself. You may find it helpful to use a spatula or tongs to help slide your pizza onto the peel. Next, transfer your pizza onto a cutting board or serving plate and enjoy.

    If you find that more than one of your pizzas is sticking to the pizza stone despite sprinkling it with cornmeal, you can place your dough onto a lightly oiled square of aluminum foil and then transfer the whole thing to your preheated pizza stone. Never add oil directly onto your pizza stone, as this will prevent it from working properly.

    If you have a gas grill and a pizza stone, quickly create a pie your guests will love. Having a pizza stone will make a big difference. It will help cook your pizza evenly, and remove that worry of your the dough sticking to the grill grates.

    How To Cook Pizza On The Grill Without A Stone

    If you dont have a pizza stone, you can either grill your pizza on a baking sheet or place the pizza directly on the grill grates. Some folks are concerned their dough will fall through the grill grates, but as long as you preheat your grill, youll be fine.

    Just like with a pizza stone, you want the grill grates to be hot so the crust gets that quick burst of heat the moment it hits the grill. This will cause the crust to start cooking and firm up immediately.

    However, even if you preheat your grill, loose dough could still fall through the grates. If your dough is a loose consistency, you might want to add flour or start over. Your pizza is going to have a host of other problems if your dough isnt right.

    If youre using an open-flame grill instead of a Traeger, you will want to check the bottom of your crust from time-to-time to ensure it doesnt burn.

    Blackstone Griddles are a very versatile and you can even cook pizza on a blackstone griddle.

    You can make the perfect breakfast on them or you can learn how to cook pizza on a Blackstone Griddle to take advantage of the full potential of your blackstone griddle.

    This post is on how you can cook wonderful pizzas on your blackstone griddle and the different ways in which you can do it.

    The blackstone griddle has enough space for cooking large portions of food and enough heat to either sear or slow cook a recipe when needed.

    Cooking pizza in your own home is also great since you get to control everything.

    Milder wood pellets like alder are great for vegetarian options like our Baked Wood-Fired Pizza because you dont want the strong flavor of the wood pellets to overpower the more delicate flavors of your toppings.

    Cook Your Pizza And Serve

    Once your BBQ grill has reached about 400 degrees, use your pizza peel , and pick up your topped pizza and place it onto the pizza stone and close the lid. The trick here is to use enough cornmeal on the pizza peel to keep the dough from sticking, and to hold it an an angle and allowing the pizza to gently slide onto the pizza stone. You may want to have a friend handy with a spatula to give the pizza a nudge if it gets stuck. Once the pizza is centered as best you can on the stone close the grill’s lid. Keep a close eye on the temperature and adjust the gas flame to maintain it in a range of 400-450 degrees F. Your pizza should cook in about 10 minutes, more or less, or when the edges are golden brown.

    Why Cook Pellet Grill Pizza

    When it comes to making pizza, there are tons of different styles and methods that you can choose from. So why would you cook pizza on a pellet grill?

    The first and most important reason has to do with flavor. Since pellet grills are fueled by wood pellets made for grilling and smoking, you can achieve incredible wood fired flavors on a pellet grill pizza that you just wouldnt get by cooking it in a traditional oven. For my taste, nothing beats that extra layer of smokey flavor that absorbs into the crust when the pizza cooks in a smokey setting.

    Next, cooking pizza on the pellet grill is a pretty straightforward process, and you dont need any extra equipment. Some people prefer to invest in a pizza stone or a grill mat for your grill, just to make things a little bit easier but you dont have to if you dont want to. But you can definitely cook pizza directly on the grill grates if you prepare your crust the right way but more on that in a moment.

    Utilizing your pellet grill also eliminates the need to buy a specialty outdoor pizza oven to achieve wood fired flavor. Dont get me wrong, Im a huge fan of outdoor pizza ovens, but they can get expensive. So using your pellet grill means you get to keep a little bit of extra cash in your pocket.

    Last but not least, making pellet grill pizza is fun! You can create some really great pizza night memories with friends and family making pizza on the back patio.
