I realize that it is still winter, but Im one of those people that grills year round. Ive grilled in three feet of snow, in the pouring rain and of course when its gorgeous and sunny outside.

How To Grill Lamb Chops Step

  • remove the chops from the fridge and allow them to come to room temperature
  • while they are resting, brush with olive oil and sprinkle with spice mix, salt and pepper
  • allow to rest for 20-30 minutes
  • when you are ready to grill, get the grill screaming hot!
  • sear the chops 2-3 minutes on side one, flip and do the same for side two
  • remove from the grill immediately, place on a platter and cover with foil
  • allow them to rest for the juices to redistribute into the meat, this will keep them flavorful and juicy!
  • Loin chops and rib chops work great on the grill. This recipe uses rib chops. The end of the bone has been removed. However if you have the opportunity to buy full chops with the rib, get those! Many remove the fat from the ribs, I don’t! I recommend keeping the whole rib intact. Fat = flavor, plus the bone is easy to grab and makes for great finger food!

    Heat grill to high. Brush lamb chops with oil and season on both sides with salt and pepper and the herbes de Provence, pressing the herbs to adhere. Grill for 2 to 3 minutes per side or until slightly charred and cooked to medium-rare doneness. Serve 2 chops per person topped with some of the Tapenade Butter.

    Carryover Cooking And Resting Meat

    One thing that many home cooks dont realize is that meat continues to cook after you take it off of the heat. This is true for any method: oven, pan, grill, etc.

    This is called carryover cooking. When meat is removed from a heat source, it will continue to cook. The outside surface of the meat is hotter than the center.

    The heat from the surface will move to the center, raising its temperature by up to 10 15 degrees. Eventually, by letting the lamb chops rest, the temperature will be the same all the way through.

    You want to remove the lamb from the grill when it is just below your perfect temperature .

    So, for me, that would be 125° 130°F. When the meat hits that temp, remove it from the grill and allow it to rest for 5 minutes. The nice thing about this particular thermometer, it alerts you when when its time to take it off the heat.

    Lamb can be tough if it is overcooked, so keep an eye on the timer and your thermometer.

    Once your grill is preheated, and up to temp, its time to grill your lamb chops. Cook the chops for about 2-3 minutes per side. Your chops should be cooked to a perfect medium-rare. Your cook time may vary slightly. You are looking for an internal temperature of 132 135 degrees F.

    Remove the lamb chops from the grill. I like to sprinkle them with a little pinch of Kosher salt as they are resting. This bumps up the flavor of the lamb a bit more! Make sure that you allow them to rest for 3-5 minutes before serving.

    Serving Your Grilled Lamb Chops

    For an easy dinner, simply serve your grilled lamb with a fresh salad. Lamb goes so well with Greek flavors maybe try it with a tzatziki sauce for dipping or some crumbled feta over top.

    Mint jelly or mint pesto is a very traditional choice, but I think a quick squeeze of lemon juice really brightens up the taste of the lamb.     What Internal Temperature To Grill Lamb Chops To

    Lamb needs to be cooked to an internal temperature of 145ºF This will give you medium-rare chops, that are meltingly tender but do not leak blood all over your plate. If you wish to cook them to medium then go to an internal temperature of 160ºF. We don’t recommend any more cooked than this as the meat will get tough and chewy.

    This cut of meat is especially perfect when enhanced with bold flavours. In this recipe, we create a marinade that is a pungent, bold-flavoured paste with rosemary, garlic and kosher salt.     As I explain in the video, I had my butcher cut some very thick chops in half to give me smaller chops, about 1-inch thick. Cooking them on a hot grill for about 2 minutes per side does the trick. The loin chops come off the grill tender and juicy with medium-rare to medium doneness. Wait until you take your first bite! A good rule is to stay at the grill during the grilling process.

    Preparing Your Grilled Lamb Shoulder Chops

    For this lamb recipe, we recommend using lamb shoulder chops because they are so much meatier. You can purchase you chops in the grocery store already cut. We recommend purchasing a lamb rib roast. You will save money by cutting them into individual chops. Just use a very sharp knife. We believe this is the best way to get the freshest lamb chops possible. Pro Tip: Purchase a lamb roast with meaty, round ends and straight bones.

    If you prefer your lamb chops cooked until they are medium-rare, you will need to grill them for three to four minutes on each side. The internal temperature needs to reach 135 degrees Fahrenheit. For juicier meat, let your chops sit for about ten minutes before you serve them.

    The flavor of lamb chops is delicious all by themselves. You will not need to use a lot of seasoning. You can use a lamb marinade for BBQ or just a little pepper, salt and olive oil. We recommend adding some rosemary and garlic as well because they will enhance the flavor of your lamb chops. Pro Tip: Add some fresh oregano or thyme to really bring out the flavor of your lamb chops. You will need:

    • Eight lamb chops
    • Two tablespoons chopped fresh rosemary
    • Black pepper
    • One teaspoon kosher salt

    Lamb chops are tender and delicious. They are best cooked over a high heat, which means they cook fairly quickly. Its best to set a timer, so you dont overcook them, because they will become a bit tough.

    Think of a well done steak, its not easy to chew but a medium to medium rare steak is much more tender. Therefore, when youre cooking lamb t bones, you cant leave them unattended for too long. The good news is, youre not cooking them for very long anyway.

    Can I Use Any Other Type Of Lamb Chop

    You sure can. If you can’t find lamb lollipops then you can buy:

    • Lamb Cutlets
    • Lamb Sirloin Chops
    • Rack of Lamb

    The lamb cutlets or lamb rib chops will still have the handy lollipop stick style bone in them. Although it may not be trimmed of meat.

    The lamb loin chops and lamb sirloin chops don’t have the same style bone, but are still easy to cook and delicious to eat. They will need a couple of extra minutes per side.

    For the rack of lamb, you can use this to cut your own chops by using a sharp knife to cut between the bones.

    We don’t recommend Lamb Shoulder Chops for this recipe as they don’t get tender during the short of amount of cooking.

    It depends what sort of lamb chop you buy. I used lamb loin chops for this recipe, they are small thick chops with the bone wrapped around the edge like a t-bone steak so about 3-4 per person is sufficient.

    If you are using Lamb shoulder chops then usually one per person is enough, they are quite a bit bigger.
