Not as non stick as Teflon but it is pretty darn good at allowing you to cook most types of food without needing to worry about food sticking. Many cast iron manufacturers now season their cast iron before they sell it so when you receive it you can immediately start cooking and dont need to worry about seasoning it yourself. If the manufacturer of your cast iron doesnt specifically state that its been pre-seasoned then youll want to do that before you cook.
The Proper Procedure For Drying A Cast Iron Pan
Since cast iron is highly susceptible to rust, its important to remember the following:
- Never let the pan drip dry.
- Never leave water sitting in the pan.
- Never store the pan with a lid sitting on top.
All of these actions can cause moisture to seep into the cast iron and can cause rusting. The best way to dry your cast iron is to ensure that all water is evaporated before storing it.
Once your pan is clean, place it on top of your stove or in your oven and turn up the heat. On average, the drying process can take up to an hour before all of the water is evaporated. Remove your pan from the oven and allow it to cool for a few minutes before seasoning.

Now, you have the option of rinsing the cast iron skillet out with water or just wipe it clean with a paper towel. The choice is yours. If you do decide to rinse the skillet out with water, you will need to make sure that you thoroughly dry it.
Just a few drops of water can cause a cast iron skillet to rust. You may want to consider adding a few drops of oil and rubbing the oil in using a paper towel.
Once you have done so, you will then need to put the pan into the oven until the oil begins to smoke. When the oil begins to smoke, it is time to take the pan out of the oven. This process will reseason the pan.
How To Season Cast Iron Cookware
The best way to season cast iron cookware is to apply a thin layer of flaxseed oil or similar edible high smoke point oil to the cooking surface. Wipe it clean with a paper towel. Dont worry, you wont be able to remove all of the oil. Place it in the oven on its highest setting, usually 500 degrees. Its best to place the cast iron in prior to the oven preheating so the cast iron can more slowly increase in temperature. Once the oil has burned off remove the skillet from the oven and allow to cool. Youll want to repeat this process a few times to build up a properly thick seasoning layer. After some use you may find the seasoning layer is beginning to fade and you will want to repeat this process a time or two to build the layer back up.

Cleaning With Boiling Water:
This kind of cookware can never be washed in the dishwasher. In most cases, all you need to clean your cast iron pan is hot water. Keep in mind that you can only use this technique;on a model that has high sides.;Dispose of some warm grease in the garbage.
To stop clogging, dont pour it down the pipe. Furthermore, since grease is a major toxin in running water, it is an environmentally undesirable solution. Fill the pan halfway with water and place it on the burner. Allow it to boil until the food particles begin to rise to the surface. Then scrape away the fried grease and food trapped between the ridges with a spatula. Before pouring dirty water down the drain, let the skillet;cool, then clean it with hot water and wipe away the leftover food with a paper towel.
How To Remove Rust From Cast Iron

Cleaning A Cast Iron Grill Pan With Soap And Water:
Using dish detergent and water may be the most common way to clean dirty cast iron grill cookware. It is also a good way to clean a pan that is dirty but doesnt have stubborn bits of burnt food stuck to it.
However, harsh soaps can affect the seasoning of your pan, so use this method sparingly and make sure you use a very mild detergent.

Limit Your Use Of Sugar
Sugar and hot cast iron dont always mix well. When using grill pans, wipe or brush off any sweet or sticky marinades from your food before you add it to the pan. On a regular grill, its normal to finish foods with a brush of sauce, but in a grill pan, it can be very tricky to avoid burning and sticking. If you do use sauce, keep your heat lower, and wait until the very end to add it.

After Cooking With Your Pan
Gently scrub the pan using mild dish soap, hot water, and a non-abrasive sponge or a scrub brush.
Rinse it clean and then dry it completely with a dish towel. You can also put it over low heat on the stovetop or in the oven to be sure all of the moisture evaporates. Its important to get your pan bone dry before storing it, otherwise it may rust.
After drying, coat the pan in a very thin layer of the same neutral oil that you use for seasoning the pan . Using a paper towel or clean rag, rub the oil all over the inside and outside of the pan .

1. Set your cast iron skillet in the sink and sprinkle a teaspoon or two of Kosher salt in the bottom.
2. Slice off the top of a raw potato. Make sure to leave enough of the potato so you can grab it easily. Use the cut end of your potato to scour the skillet, grinding the salt into any rusty or crusty spots. As you work, rinse off the skillet and add more salt if it requires more scrubbing.
