Smoky Indoor Grilled Pork Chops

1 Prepare and marinate the pork chops. Pat pork chops dry with a paper towel to remove any excess moisture. Then brush them with avocado oil or olive oil lightly. Season with salt, pepper, and garlic powder. Set aside.

2 Prepare the grill. Heat up your gas grill to a temperature between 350-450 degrees F. Somewhere around 400F seems to work best, though the grill may fluctuate. Make sure the heat is stable before adding the pork chops.

3 Grill the pork chops. Because you greased the pork chops, there is no need to brush the grill grates with oil. Add seasoned pork chops to the hot grill over direct heat, then brush a generous amount of BBQ sauce on one side. Let them cook for 6 minutes, then flip over and brush the other side with BBQ sauce. Cook for another 6 minutes.

4 Tent & Serve. Remove from the grill and add a piece of foil on top. Let the pork chops rest for 5-8 minutes before slicing and serving. Top with additional BBQ sauce if desired.

  • Prepare a batch of the seasoning blend in advance, so that the pork chops only require a few minutes of actual hands-on prep before they go on the grill.

  • How to reheat grilled pork chops: Place the pork chops in a dish and cover with foil. Warm in a 350 degree F oven for 10-15 minutes, or just until heated through. Be careful not to overcook them, or they will become tough and dry.
  • You can grill pork chops from frozen, but you will need to increase the cooking time by about 50 percent. Again, use a meat thermometer to know when the pork is done.

Here are a few ideas for how to customize your rub:

  • Smoky: Substitute smoked paprika in place of regular paprika.
  • Spicy: Add 1/2 teaspoon cayenne pepper to rub mixture.
  • Sweet: Add 3 tablespoons brown sugar to rub mixture.

Step 1: Brine the pork.

To create the brine, combine salt, sugar and 2 cups water in a large saucepan. Cook and stir over medium heat. When the salt and sugar have completely dissolved, take the pan off the burners. Then cool the brine down to room temperature by adding 2 cups of ice water.

Place the pork chops in a large resealable plastic bag and carefully pour in the cooled brine. Seal the bag, pressing out as much air as possible. Gently turn it over a few times to coat the chops in the liquid. Place the brining bag in a 13×9-in. baking dish and refrigerate for 8 to 12 hours.

According to recent changes in the USDA guidelines, it is safe to eat pork cooked medium rare. Cook the pork chops to an internal temperature of 140°F and still barely pink inside, then rest for about 5 minutes for the residual heat will continue to cook and raise the internal temperature.

For thin cut, bone-in pork chops about 1/4 inch thick, cook over direct medium-high to high heat for a total of 3-5 minutes, with the lid closed, turning once.

For 1-inch thick boneless pork chops, cook for 8-12 minutes over direct heat turning every 3-4 minutes or until well grill marked with the lid closed. Add another 5 minutes resting time for the juices to set in the meat.

If cooked properly, the pork chops will release a bit of juice as they rest, a sign theyre still nice and juicy on the inside.

    These are both center cuts and the cooking time is the same for each. Boneless chops will be less juicy but have more meat per pound. A bone-in rib chop can have more flavor due to the extra fat.
