How Long To Cook Ribs On A Grill

Everyone likes to nib on a tasty rib! There are many recipes, from slow cooking and smoking to straight on grilling ribs, and the latter turned out to be the favorite of many. The main reason is, of course, the chance to get into it without having to worry about grease and rules in general. There is no special fork for ribs, and the whole grill cookout is interactive and fun for everyone, not just the cook.

In this guide, we will go through the most important info you need to get to that delicious and fun experience of eating nicely cooked ribs. People often think that grilling is easy, especially when it comes to larger pieces of meat, but that kind of attitude will only leave you with a chewy or charcoal-like meal, which no one likes. Not to mention the time invested, let alone the money for the meat and everything in between.

How to (Gas) Grill The Best Pork Ribs

1.;Prepare the grill for direct cooking over medium heat .

2. In a small bowl mix the rub ingredients.

3. Remove the membrane from the back of each rack of ribs. Cut each rack crosswise in the middle to create two smaller racks.

4. Season each half rack evenly with the rub. Using eight 18-by-24-inch sheets of heavy-duty aluminum foil, double wrap each half rack in its own packet.

5. Brush the cooking grates clean. Place the ribs on the grill over direct medium heat and cook for 1 hour, with the lid closed, occasionally turning the packets over for even cooking, making sure not to pierce the foil.

6. Remove the packets of ribs from the grill and let rest for about 10 minutes. Carefully open the foil packets, remove the ribs, and discard the rendered fat and foil.

7. Drain and add the wood chips directly onto burning coals or to the smoker box of a gas grill, following manufacturers instructions. When the wood begins to smoke, return the ribs to the grill, bone side down. Grill over direct medium heat, with the lid closed as much as possible, until they are sizzling and lightly charred, 10 to 12 minutes, turning and basting once or twice with the sauce. Remove from the grill and let rest for about 5 minutes. Cut into individual ribs and serve warm with any remaining sauce.

There Is A Distinct Difference Between Grilling And Barbecuing

The main difference? Time. Barbecuing is a long, slow process over low heat, producing deliciously tender, juicy meat from cuts that may be tough and dry when cooked more quickly. Grilling is reserved for chicken breasts and burgers, which are cooked over high heat for a short period of time.;

Now, I understand that I am lucky to live in the great state of Texas where we know good barbecue from bad and most people have the luxury of space to hold at the very least a charcoal grill. Which is what we have in our backyard, alongside the trusty gas grill.

While it might be ideal to BBQ ribs in a smoker, those are a little harder to come by, even for Texans. The amount of use a smoker would get in our backyard just doesn’t justify the cost or amount of space it would take up. So the charcoal grill will do just fine. And that’s how we made these delicious baby back ribs.

I say ‘we’ because I am not the resident griller in the Table household. That job is for Mr. Table. He enjoys drinking a cold beer, manning the fire and cooking meat all day. And he’s good at it. So in this case, I’m just here to prep the food and explain what’s happening.

Are Grilled Ribs The Same As Bbq Ribs

You may be wondering if grilling ribs is the same as barbecuing ribs. Technically, theyre two different types of ribs using very different techniques.

Barbecue comes from the Spanish word barbacoa, which originated with the Taino people one of the native inhabitants of the Caribbean islands before the arrival of Europeans. The Tainos would cook meat over smoking embers for a long period of time so that the meat would be infused with the smoke flavor and remain tender. That technique evolved to our modern form of American barbecue, but the essential technique has remained the same: you are basically smoking the meat over a very long period of time. While you can do this at home, it is a long, labor-intensive process that can sometimes take a full 24 hours and uses a lot of fuel. As well, you need special equipment to cook BBQ ribs.

Grilling, on the other hand, means to simply cook food over flames covered with a grate. You can grill pretty much anything very quickly. The only problem is that for tougher cuts of meat, like ribs, you need long, gentle cooking to get the meat tender. The solution for most home cooks is to boil, braise, or bake the ribs first until theyre tender and then grill them to get a nice smokey char. As long as you have a grill any type of grill you can grill ribs quite easily.

You’ll need around a 1/2 cup of rub for a rack of ribs. Apply your rib rub directly to the slab by seasoning the meat evenly on both sides. Let it rest on the rack for at least 30 minutes, then cook them on your wood-fired grill.

If you want succulent, fall-off-the-bone BBQ ribs then the only way to go is to bake them in the oven first, and then finish them off on the grill. Slathering them with a sticky, homemade BBQ sauce of course.

This 2-step process will assure the most fantastic sticky ribs that fall off the bone and will be talked about for weeks afterward! They are that good!;

Hours Of Low ‘n’ Slow

The “2” is for two hours of low ‘n’ slow cooking. You’ll raise the temperature slightly, helping the fat and connective tissues in the ribs break down, and adding flavor and juiciness.

  • Take the ribs off the grill and place them on a rimmed baking sheet.
  • Raise the grill temperature to 225 degrees Fahrenheit.
  • Tear off two long pieces of foil.
  • Place the ribs atop one sheet of foil.
  • Pull up the foil edges to prevent liquid from sneaking out.
  • Place the other sheet of foil over the ribs and crimp the edges of the two pieces of foil together tightly to prevent leakage.
  • Return the ribs to the grill and cook for another two hours.

Baby Bake Ribs Cooked In The Oven

To make these ribs in the oven, follow all the directions above for seasoning the ribs. Preheating the oven to 300 degrees and place the ribs on a foil-lined baking sheet – uncovered. Bake for 1 – ⅕ hours or until thoroughly cooked. Once tender, remove from the oven and turn on the broiler. If using BBQ sauce, coat and place under the broiler until the sauce is caramelized and crispy, but not burned! Do not walk away from the stove during this time. The ribs will burn in no time!

Variations For The Best Fall Off The Bone Bbq Ribs Recipe:

  • Serve these with or without sauce. This Carolina Gold BBQ Sauce is our favorite BBQ Sauce! The sauce goes on at the very last minute, if you put the sauce on too early, the sugar/ brown sugar will cause over-browning/burning.
  • Ive included a recipe for a tangy BBQ sauce that you can make while the ribs are cooking, but if you dont want to go to the effort, buy your favorite store-bought one and brush them on in the last 15 minutes of cooking so they get a nice char.
  • This recipe uses baby back ribs, but it will work with any kind of ribs although you will have to adjust the cooking times.

Cook Ribs Low And Slow

When you cook ribs in a smoker, they sit for a long period of time at a low temperature. To mimic this process, you will need to set the grill to a low temperature and cook your ribs for several hours. You want the inside of your grill to hold a temperature around 225;F/110 C for the entire cooking time, which means you need to check on the grill to make sure the temperature is maintained. While you’re checking the temp, take a look at the ribs; it is important to keep a close eye on your ribs because once the surface of the meat starts to burn there’s no going back.

If you are using wood chips, you will probably have to add more wood every hour. This is particularly important for the first 2 hours. Your ribs will be done when they become tender and the meat is loose around the bones, which can be 4 to 5 hours.

To speed up the process or to increase the tenderness of the ribs, you can pre-cook the rack. Ribs cooked on a barbecue smoker at a low temperature for several hours will be very tender. However, ribs cooked on a grill, especially a gas grill, will not be as tender, even when cooked indirectly. You can precook by either boiling the ribs for about 30 minutes or by placing them in a slow cooker. Once you are ready to grill, season the ribs and cook them indirectly until done. The disadvantage of this is that you can literally boil out the flavor of the meat and the ribs will not absorb the flavor of the smoke as well.

How To Check The Readiness Of The Ribs

Here are three quick methods you can use to check if the ribs are ready for munching!

  • The Twist Grab a rib in the middle of the rack, and pinch its tip. Use a small amount of force to twist the rib. If the meat starts to fall off, the ribs are done.
  • The Bend Take cooking tongs and grab the rack at the middle. Carefully lift it and watch the meat. If small rifts appear, and the meat breaks apart, the ribs are ready.
  • The good old Toothpick test This test is used in the kitchen a lot, and it applies here as well. Take a toothpick and poke the meat between the ribs. If the meat shows no resistance, the ribs are ready. Just make sure to poke around, and not in a single spot only.
  • How To Grill Ribs On Indirect Heat

    The final cooking method is to simply tenderize your ribs over the grates of your grill by cooking them for several hours over indirect heat. Heres how.

  • Preheat a grill to medium high and prepare for indirect grilling: For a gas grill, turn off one or two of the center burners and reduce the remaining burners to medium low. On a charcoal grill, bank the coals to the sides, leaving the center open; set up a drip pan to avoid flare-ups.
  • Oil the grill grates.
  • Place the ribs bone-side down, on the cooler part of the grill .
  • Cover and cook, rotating the ribs once, until the meat is tender and pulls away from the bones, about 2 hours.

    How To Prepare The Ribs

    The key to any good round of ribs is proper preparation. This stage can make or break the success of your meal and neglecting good prep will give you bland, inferior ribs. Simply throwing them as you bought them onto the grill isnt going to cut it.

    For your rib choice, I suggest going for pork. And then there are 2 varieties: Spare or baby back ribs.

    Personally, I prefer spare. Theyre cut from the belly-end of the ribs, so are much meatier. Baby back are a little shorter but still an excellent choice. Cooking time tends to be about 4-5 hours for spare and 3-4 for baby back.

    Its also important to bear in mind that your grill will dictate the size of the rack that you can cook at once. We want as much of the ribs to be exposed at once, so its not a good idea to pile them on top of each other. As a result, you will probably only be able to fit one rack of spareribs on the grill or two racks of baby back. Keep this in mind when preparing your ribs.

    You will then need to cut the ribs down to just the rib rack. If you havent done this before, check out my full guide on how to trim spare ribs.

    Start by removing the membrane from the rack. Not a lot of grillers do this, but doing so removes this thin skin off the back of the ribs, allowing them to be tender and packed full of flavor.
