What Kind Of Marinade Should I Use

Im using TLish dressing and marinade. Im slightly obsessed with these. Okay, moderately to highly obsessed. You can get them at Publix and all of the flavors I have tried are amazing. You want a vinaigrette type dressing for this. Look for one that specifically says vinaigrette or marinade on it and youre good. Any of the TLish flavors work great as marinades.

If you have a glass stovetop or smooth stovetop surfaceyou need to know that I do, too, and I am using this pan. Why? Its flat on the bottom so it will work just fine. Whenever I see a cast iron skillet or pan that is the first thing I look for, if its flat all on the bottom, I know Im good.

Add Butter For More Flavor

Butter is optional, but its such a good idea! After flipping, I add a tablespoon. Let the fat melt, then baste with it. The process coats the surface to prevent the meat from drying out. Throw in some sprigs of rosemary or thyme to infuse fresh herb aromatics into the dish.

When the milk solids brown, they add more color and a nutty flavor that sticks to the meat. Its delicious! I wait until after the initial sear because I dont want the water in the butter to interfere with browning or the solids to burn. You can skip this step, but Im a big fan of the extra flavor it creates.

Prepare and pat chicken dry with a kitchen towel.

Season with salt, paprika, parsley, black pepper, stock cube.

If you have time, cover with clingfilm and put in the fridge to marinate. If not move to the next step.

Place a skillet or non stick pan over medium heat, then add oil in the pan.

Arrange the chicken breasts in the pan and leave to sear for 5 – 7 minutes untouched until golden, crispy and no longer sticking to the pan then turn to the other side.

If you can’t easily flip the chicken breast, it’s not ready.

Cook the other side for another 5-7 minutes till cooked, crispy skin and not sticking to the pan.

If youre not sure chicken is cooked and for food safety compliance, check that the internal temperature of the chicken is atleast 165F . To ensure this, check by using meat thermomether.

Transfer to a plate and leave to rest for atleast 5 minutes before cutting into it.
