How To Cook New York Steak On The Stove To Oven

How to grill the best New York Strip Steak of your LIFE!

No grill, no problem! For the pan-sear to oven method, make sure your butter is at room temperature so it melts easily. Heres how to cook a Strip Steak perfectly indoors:

  • Let the steaks rest at room temperature for at least 40 minutes before grilling. Use this time to trim the steaks of excess fat and season the steaks. Preheat the oven to 275 degrees F the last 10 minutes or so of resting.
  • Pat the steaks dry, rub them with a high smoking point oil, followed by the spice rub.
  • Make the compound butter while the steaks are resting. Mix all of the harissa butter ingredients together in a medium bowl- thats it! You dont need to form it into a log and refrigerate because we want the butter at room temperature so it melts upon contact with the sizzling skillet.
  • Preheat a cast-iron skilletfor several minutes over HIGH heat until smoking. Add 1 tablespoon vegetable oil.
  • Add the steaks to the hot skillet and let them sear until golden brown, about 3-4 minutes. DONT touch the steaks during this time so they can achieve the crispy, golden exterior.
  • Flip the steak add remove from heat. Add about ¾ of the compound butter and baste the steaks with the melted butter for 45 seconds.
  • Transfer the skillet to the oven and cook until an instant-read thermometer inserted into the thickest part reads 130 degrees F for medium-rare, about 5 to 7 minutes.
  • My Method For Grilling New York Strip Steaks

Sometimes Im in the mood for a really simple steak. Today was a salt and pepper day. I simply sprinkled salt and pepper on both sides of my huge steak.

Use a good quality Kosher salt and a coarse ground pepper. none of that table salt for a beautiful steak like this.

Once my grill was heated to the appropriate temperature I added my steak over direct heat. Make sure you have a probe thermometer on hand to monitor the temperature of the steaks throughout the grilling process.

What Are The Best Types Of Steaks For Grilling

Out of all proteins, steak is particularly well-suited to the grill. The high heat delivers a gorgeous sear, caramelizing the exterior and quickly heating the interior. That said, each kind of steak requires a slightly different method.

This particular recipe works best with boneless strip steaks that are at least 1 inch thick, but 1 1/2 inches is even better. Strip steaks are a great starter steak because they are well-marbled, meaning theyll cook up juicy every time, but not be full of fat that you have to worry about flare-ups. Plus, theres no bone to work around.

    • For the perfect medium-rare strip steak, grill for 9-12 minutes for a 1-inch steak, and 12-14 minutes for a 1½ inch steak, turning about 1 minute before the halfway point. A meat thermometer should read 130°F.
    • Rest your steaks for 5 minutes before serving, covering lightly with foil. The temperature of the meat will continue to rise about 5°F during this time . The final temperature will read 135°F.
    • Resting steak is also important because the heat of cooking pulls the juices in the meat toward the surface if you slice into it immediately after cooking, those flavorful juices will end up on your plate, not in your steak. Allowing your steak to rest will give the juices time to sink back in and throughout the meat, keeping it moist and flavorful.

How Do I Season A Steak For The Grill

How to Grill the Perfect New York Strip Steak Omaha Steaks

The best grilled steaks are seasoned two ways: with salt, before cooking, and with butter, added to the steaks while they rest.

Youll start by generously seasoning each steak on all sides with kosher salt before you even light the grill. Plan on at least 1/2 teaspoon per half pound of steak. For thick strip steaks that weigh in about 12 ounces each, thats roughly 3/4 teaspoon per steak, but dont fuss too much over exact measurements just salt generously. Once salted, return the steaks to the fridge, uncovered, for at least 2 hours or overnight if needed. As they sit, the salt permeates the steak, making them juicy. It also draws some of the proteins and sugars to the surface of the steak, giving it that crave-worthy crust youre after.

How To Grill The Perfect Ny Strip Steak

    Serves: 2 | Prep Time: 15 minutes | Cook Time: 5 Minutes

    Ingredients2 tbsp compound butter

Step 1: Place the steaks and compound butter on the counter and allow them to come up to room temperature for about an hour.

Step 2: Light grill and set up for high direct heat. Youll want to get the coals as hot and as close to the cooking grate as possible. If using a gas grill, allow the grill to preheat with the lid closed for at least 15 minutes.

Step 3: Evenly coat strip steaks with olive oil and season them liberally with coarse sea salt. Put two pats of compound butter on each plate and set aside.

*Tip I dont recommend putting pepper on at this point as the extreme heat will burn it, producing a bitter flavor. I also dont recommend using a premixed rub as many of them contain sugar which will also burn. Trust me on this one, just use the salt and let the meat shine through.

Step 4: Place steaks directly over hot coals and flip every 20 seconds. With each flip, place the steaks in a different spot on the grill grate. This allows the best searing to take place through conductive heat. The steaks below have been on the grill for about 2.5 minutes total, and you can already see that nice crust forming.

Step 5: After about five minutes of total cook time, use a reliable quick read meat thermometer to check the internal temperature of the steak. Remove steaks from the grill when the internal temperature reaches 115° F for a medium rare steak.

  • Take the chill off the steaks. About an hour before grilling, remove the steaks from the fridge. This window between the chill of the fridge and the screaming-hot grill makes for a better sear and a more evenly cooked steak. This is also the best time to lightly brush the steaks with a tiny bit of oil.
  • Get the grill nice and hot. High heat gives the steaks their characteristic grill marks and tender-crisp exterior. Let the grill preheat for at least 20 minutes before grilling the steaks.
  • Sear the steaks. Place the steaks directly over the hottest area of the grill. If your grill has a hot spot thats where you should sear them. Place them on the grill for at least 3 minutes before flipping. Sear for another 3 minutes.
  • Check the steaks temperature. When youre happy with the sear on your steaks, begin checking the internal temperature with a probe thermometer inserted into the thickest part of the steak. Youre looking for:
    • 125°F for rare
    • 130 to 135°F for medium-rare
    • 140°F for medium

Your steak should be medium-rare after about eight minutes total cook time. If you feel like your steak is getting too browned, reduce the heat to medium.

How Many Times Do You Flip A Steak On The Grill

Around The World Restaurant: Easy Grilled Indoors New York ...

Do not flip the steak more than once.

If you flip the steak more than once, that means that the grill has something wrong in it or you did not properly prepare it so it does not have the finish you want.

See, you only touch the steak three times, once when you put it on the grill, the second time is when you flip the steak, and the third and last time is when you get it out of the grill when done with cooking.

Flipping the steak frequently will disrupt the cooking process as you let the heat get out of the meat.

That means that it will take more time for the steak to cook if you flip it too often.

What Is The Strip Or Back Of Better New York

The biggest difference between a rib and a NY strip is that the rib has more internal marbling or fat. The New York Strip has a thick strip of fat that runs down one side that you cant really eat. Ribeye is a good choice if you are looking for a tender steak, with a lot of flavor and a buttery, smooth texture.

One you have the technique down for cooking New York Strip Steaks, you can go rogue and create all sorts of variations. Here are a few to try:

    • Use garlic butter. Swap the harissa butter for 3 tablespoons room temperature butter and 3 smashed garlic cloves. Add them when the recipe calls for harissa butter.
    • Use herb compound butter. Swap the harissa butter for a simple compound butter made with butter, 1 tablespoon herbs such as any combo of chives, parsley, thyme, oregano etc., 1 teaspoon lemon zest and 1 teaspoon Dijon mustard.
    • Add dipping sauce. Instead of the harissa butter, pair the steak with barbecue sauce, horseradish sauce, Béarnaise sauce, mushroom sauce, peppercorn sauce, red wine sauce, balsamic reduction, mustard sauce, blue cheese sauce, chimichurri, salsa verde and of course, good old steak sauce.
    • Use different seasoning. I am obsessed with this spice rub, but you can also experiment with different seasonings like the one I use in mysirloin steak, barbecue brisket and ribs recipe, or Fajita seasonings, or Asian inspired seasonings such as Chinese 5 Spice, ginger and garlic.
    • Use different types of wood. If you have a charcoal grill, you can add different kinds of wood to the fire to contribute smokiness and enhance the overall flavor of the grilled steak.

New York Strip Vs Other Steak Cuts

    • Which is better, New York Strip or Ribeye? New York Strip is one of the tastiest steaks you can find, just not quite as tasty as succulent, smooth Ribeye. New York Steak has less marbled fat than Ribeye, which means its slightly less tender, smooth and rich tasting. New York Strip is still an excellent choice at a lower price point and healthier because it has less fat.
    • Which is better, filet mignon or NY strip? This comes down to personal preference. New York Strip Steak has richer marbling which means it is richer and deeper in flavor. If you prefer a thick, softer cut of beef thats not quite as beefy, filet mignon is the answer.
    • Which is better, New York Strip or Top Sirloin? Top sirloin steak is often called the weeknight steak because its tender and flavorful, just not as tender and flavorful as NY Strip, but is affordable enough to enjoy any night of the week. Top sirloin is less expensive than NY Strip because it doesnt have as much marbling, but it still has enough to provide big beefy flavor.

    How It Is Done

Most experts recommend that you take the striploin steak out of the refrigerator for about a half an hour before cooking. Rub some extra virgin olive oil over its surface and season with a generous sprinkling of salt and black pepper. When ready to cook, place the skillet over high heat for a minute or two before adding the steak. Cook for three minutes on each side for rare, four minutes for medium, and five to six minutes for well done.

If you choose to cook your striploin steak in a skillet, consider cooking the external layer of fat first. This should be done over very high heat so that the natural juices of the meat run out into the skillet. From there, you can cook both sides of the steak in the juices, which will be effortlessly absorbed by the meat for maximum flavour.
