Shredded Or Sliced Cheese
Shredded or sliced are both awesome choices for a great grilled cheese sandwich. Here are some tips for choosing which one will work best for you.
- Shredded cheese: If you like to combine more than one type of cheese, shredded cheese is your best bet. Youll have the ability to fine tune the ratios of each one to your liking. The amount of cheese used will depend on the size of the bread. For a standard loaf of sandwich bread, use & frac13 ½ cup of shredded cheese per sandwich.
- Sliced cheese: If you are only using one type of cheese, 1 oz. of sliced cheese is perfect. Two slices around 2mm thick seem to be ideal. Request a number 2 thickness if you are getting cheese from the deli counter.
Adjust the amount of cheese used per sandwich to your liking. The amounts suggested are good starting points!

The Open Face Technique
For years, I assembled the sandwich and then grilled it. But recently I came across a new technique I like a lot better. Lets call it: Open-face grilling.
Open-face grilling allows the cheese to melt more thoroughly. The tradeoff is you can only make one sandwich at a time. But if its perfection you want, this is your method.
- Put both slices of bread in the skillet butter-side-down
- Arrange half the cheese over each slice. Once its halfway melted, invert one slice onto the other.
- Press down lightly with a spatula .
- Finish grilling as needed until the cheese is melted and both sides of the bread are golden brown.
Open-face grilling makes it easy to insert accouterments like tomato slices or chutney midway through grilling. The partially melted cheese bonds to the filling and keeps it from sliding around.
If you prefer a technique that allows you to grill two sandwiches at once, our very own Elise Bauer has a splendid tutorial on her assembly method.

This Toaster Oven Grilled Cheese Sandwich is a no brainer. Itll be your new go-to lunch, of that, were certain!
This toaster oven grilled cheese sandwich is pure comfort food. Its perfect for an easy office lunch, late night snack, or whenever youve got a gooey melty cheese craving!
Is there anything better than a grilled cheese sandwich?
The combination of buttery toasted bread and melty cheese is so comforting. Each bite feels like a warm hug. And some days, friend, you just NEED a good cheesy hug!
While I usually keep my grilled cheese sandwich simple, I do like to use quality ingredients:
- Hearty multigrain bread instead of stick-to-the-top-of-your-mouth squishy white bread. It gives the sandwich uber crispy edges and way more flavor.
- For the cheese, thickly sliced provolone works great. If an only cheese sandwich feels too indulgent add some roasted sweet potato rounds or garlicy toaster oven roasted broccoli. Broccoli + Cheese is always a delicious combo!
- Last and best of all, only real butter no margarine!
So, why use a toaster oven?
Whenever I make a grilled cheese sandwich on the stove I always burn my bread before the cheese can melt. Its my own fault. Im impatient and turn up the heat, even though I know better.

I start by adjusting the toaster ovens cooking rack to the bottom position aka the area closest to the heat.

Why Is My Cheddar Cheese Not Melting
As a cheese gets older, the protein strands start to break down, which makes it less likely to stretch. An aged cheddar cheese still has the same pH level and comparable levels of fat and moisturebut the protein strands have broken down. So when you heat it, the aged cheddar cheese will still melt.

And The Best Cheese For Grilled Cheese Is
Were partial to regular old cheddar cheesesharp or medium, depending on your preference but a great grilled cheese sandwich can be made out of lots of different cheeses, and our grilled cheese recipe will work with almost any cheese you favor. Here are a few great melters to try:
- Monterey Jack. This mild, creamy white cheese is an even better melter than cheddar, and is extra lovely mixed with a little sharp cheddar.
- Gruyère. Nutty and delightfully salty, Gruyère is an Alpine-style cheese that is widely available in the U.S. and makes for a richly flavorful grilled cheese.
- Raclette. Another gorgeous Alpine-style cheese that is quite literally made for melting. This washed-rind cheese is funkier than Gruyère and will definitely take your grilled cheese into grown-up territory.
- Blue / Chevré. Tangy chevré or sharp blue cheeses can be delicious additions to a grilled cheese, but we like to use them sparingly and coupled with mild, melty cheeses like Jack or cheddar.
Oven Grilled Cheese Tips:

- Broiler temperatures differ from oven to oven, so keep an eye on the sandwiches until you get the hang of your oven. Also, white bread tends to toast up faster than whole wheat or gluten-free.
- Youll need a cookie sheet for this recipe. I prefer a heavy, rimmed baking sheet like this.
- If you forget to leave out the butter to soften, microwave it in 5 second intervals, checking after each, until its just soft enough to spread.
- You can use any melty cheese you like. I prefer cheddar or an Alpine style cheese, such as Emmentaler, Gruyere or Comté, but American works as well!

How To Make Grilled Cheese In The Oven
There are actually a few different ways to make grilled cheese in the oven using a sheet pan.
Anyhow, one method calls for using two half sheet pans, with the second pan placed on top of the sandwiches to speed up the cooking time. Give it a try if you like, but I didnt find this method to be very effective.
The grilled cheese sandwiches I made using this technique were unevenly browned and took about the same amount of time to cook. Plus, I was left with additional equipment to clean up and you know how much I haattteeee doing dishes.
The oven-baked grilled cheese method I use only dirties a single half sheet pan for 6 sandwiches. For each sandwich, simply spread the outsides of two pieces of bread with softened butter, layer with the desired number of slices of cheese on the inside, and place them on the baking sheet. Bake at 450 degrees for about 10 minutes, flipping the sandwiches halfway through cooking.
TIP: Are you ready for me to really blow your mind? Pick up one of these XL baking sheets, and you can actually make TWELVE sandwiches at once!!!

Grilling The Sandwich On High Heat
When your stomach is growling with hunger, a grilled cheese may look like an easy to make option, but it needs some patience. Trying to make the sandwich faster by tossing it on a high flame will scorch the bread from outside and the cheese will also be undercooked inside.
To achieve the perfect results as you get at the restaurants, you will need to slow cook the grilled sandwich on a low flame. Keep the stovetop flame between low and medium for a perfectly cooked sandwich.

Frying In Extra Butter
If you like extra crispy bread and a little more grease, you can add some butter to the pan to fry the grilled cheese. Just watch for the browning of the butter solids, you dont want that to become burnt. If this happens, wipe the pan clean if needed, and in between batches when making more than two sandwiches.
Can You Make Grilled Cheese In The Toaster

Its hard to believe that a sandwich made of cheese, bread and butter can be any simpler to make, but trust us, its possible thats why we love this sandwich. And its all thanks to the toaster. If you forgo the frying pan and pop a grilled cheese in the toaster, you dont ever have to worry about burning it.

How Much Cheese Should I Use
I know its tempting, but try to stuff in too much cheese, and it will melt out over the sides and become a mess! I suggest using between 1/4-1/3 cup cheese per sandwich. It can handle slightly more, but I wouldnt recommend over 2/3 cup grated cheese per sandwich. If youre using slices, Id use two slices stacked on top of one another.
