Its a combination of sweet from the brown sugar, earthy spice from New Mexico Chile Powder and the strong chocolate flavor from the cocoa powder. Lets take a look at this grilled pork chop seasoning.

  • 1 Tablespoon unsweetened cocoa powder
  • 1 Tablespoon New Mexico Red Chile Powder
  • 1 Tablespoon light brown sugar

Once the pork chops have been brined, simply pat them dry then press them into the rub mixture and using your hands rub the mixture over the meat to coat the chops. Shake off any excess rub and youre ready to grill.

How To Grill Boneless Pork Chops

  • Preheat the grill
  • While the grill is preheating, mix the rub ingredients together.
  • Sprinkle the chops with the dry rub and massage into meat dont forget, both sides!
  • Allow the pork chops to rest for 5 minutes.
  • Place on grill and grill 6-8 minutes per side.
  • Remove from grill when pork reaches and internal temp of 145 degrees.
  • Cover with foil, let rest 5-10 minutes serve and enjoy!
  • I know youre thinking. but Julie, is it really necessary to allow the grilled pork chops to rest before serving? Yes!! If you want tender, juicy chops allow them to rest covered in foil! Allowing the meat to rest will let the fibers of the meat relax.

    Carryover Cooking & Pull Temp

    To estimate what temperature to pull the meat from the grill, we need to understand the carryover cooking we expect. The rise in temperature after cooking is affected by two main factors:

  • The intensity of the heat energy in the cooking method. A high-temperature cooking methodlike grillingcauses the heat energy to move very quickly through the meat. Not only will the heat be moving through the meat quickly, but there will be more of it in the near the surface to distribute through the whole piece. Cooking over high heat means more carryover.
  • The mass of the meat being cooked. Since a pork chop is much smaller than a cut like a shoulder roast, there is less meat for the carryover cooking to heat up, so it tends to have a less significant effect.
  • With the combination of a high heat cooking method and a smaller cut of meat, the temperature increase we see during the rest will be quick but still fairly high. After testing multiple chops, we consistently saw an 11-13°F rise in temperature. The best pull temp with our grill was about 133°F . Given the many variables involved with carryover cooking, however, were recommending a pull temp of 135°F to ensure proper doneness.

    How To Serve And Store Leftovers

    Brined Pork Chops With Grilled Stone Fruit

    For the brine:

    • 1/4 cup firmly packed brown sugar
    • 1 tsp. dried thyme
    • 1 tsp. juniper berries
    • 1/8 tsp. red pepper flakes
    • 2 Tbs. kosher salt
    • 1 Tbs. freshly ground black pepper
    • 6 bone-in pork chops, each at least 1 inch thick
    • 6 ripe but slightly firm plums, peaches or nectarines, halved and pitted
    • Canola oil for brushing

    To make the brine, in a large bowl, combine the water, vinegar, brown sugar, thyme, juniper berries, red pepper flakes, salt and black pepper. Stir until the sugar and salt dissolve.

    Place the pork chops in a large sealable plastic bag and pour in the brine. Seal the bag closed, squish the brine around the chops and refrigerate overnight.

    At least 30 minutes before you plan to begin grilling, remove the chops from the refrigerator. Discard the brine, rinse the chops briefly in cold water and pat dry with paper towels.

    Prepare a charcoal or gas grill for indirect grilling over medium heat the temperature inside the grill should be 350° to 375°F. If using charcoal, bank the lit coals on either side of the grill bed, leaving a strip in the center without heat, and place a drip pan in the center. If using gas, preheat the burners, then turn off 1 or more of the burners to create a cooler zone. Brush and oil the grill grate.

The layer of fat around the chops exterior shrinks faster than the meat inside, squeezing it and causing it to buckle. Score the fat in two or three places with a sharp knife.
