How To Sous Vide Black Cod
Sous vide is a water bath method to cook food in a low temperature for some period of time. Preparing a Sous Vide Black Cod is a slightly more technical matter. Youll need to season your fish and seal the pieces accordingly after deboning them.
Once youve sealed your seasoned fish, you can place it to cook in water that has been heated to 125 F beforehand for a period of 20 minutes. At this point, your fish is already cooked. That being said, we recommend you to finish it off on a pan, especially if it is a skin-on filet. Take out the Black Cod from the vacuum bag, heat some butter in a pan and lay down the fish, skin-side down on the pan. There you have it, your sous vide Black Cod is complete.

Instructions For Smoked Cod
After brining, rinsing, and seasoning your cod fillets, preheat your smoker or pellet grill to 225 degrees F. Place the cod fillets directly on the grill grates and close the smoker lid. You are going to smoke the fillets for about 60 minutes or until the internal temperature of the fish reaches 145 degrees F. It takes no time to smoke cod. The thin fillets make the cooking process go very quickly. The lower you can get the smoker’s temperature to go, the more smoky flavor you will achieve.
When the fillets are done, remove them from the smoker. If you aren’t serving the smoked cod immediately let the fish rest on a tray and tent it with foil. I like to serve smoked cod very simply with some freshly squeezed lemon juice. The tart citrus offers a bright fresh bite of acidity to the sweetly smoked fish. Serve it with a light salad or a side of veggies for a super healthy meal.

Why Cook Grilled Cod
Cod is an excellent starter fish to those who are new to eating fish in general. Its mild and does not taste overly fishy, the way more oily fish do.
Its mildness, however, means that its up to you, the cook, to amp up its flavor. It doesnt need much. Lemon and butter will do it, perhaps with some herbs if you are feeling fancy.

What Kind Of Pellets Should I Use
Im really of the semi-unpopular opinion that what pellets you use isnt really going to have that big of an impact on the end results. Maybe slightly on long smokes? How To Grill Tuna
On the meatier side, tuna is a winner on the grill, but it’s a pretty lean fish, so you have to make sure not to cook it for too long so it doesn’t dry out. Marinating the fish helps with moisture, as does avoiding cooking it past medium-rare. It’s important to buy high-quality fish, especially in a scenario like this one where you’re leaving the center somewhat raw. We like an Asian-inspired tuna marinade with soy sauce, sesame oil, grated ginger, and lime juice.

Best Pit Boss Pellets For Fish
One of the primary reasons people invest in a pellet grill is the ability to use different flavored hardwood pellets that give food a flavor unlike the typical gas or charcoal grills.
Choosing the right pellets comes down to preference and personal taste. However, when smoking delicate meat like fish, not all hardwood is created equally. Avoid strong aromas such as Pecan, or Hickory, as they can overpower the fish.
Instead, consider some of the lighter, fruitier hardwood flavors such as Cherry, Alder, or Mesquite.
If you prefer the pellets with powerful aromas, try mixing them with some of the lighter flavored pellets when cooking delicate meats like fish.
Whenever I grill tuna or salmon, I use either the Competition blend or the Apple, as those are the two flavors I usually have on hand.
