  • To avoid losing juices during turning, always flip your meat or vegetables using tongs or a spatula, rather than a fork.
  • Try to limit the flips. Ideally, you should flip each item once during the grilling process.
  • Whatever you do, dont press down on burgers or chicken with a spatula while theyre grilling! This squeezes out the juices and once theyre gone theyre gone! If youre bored and need something to do with your hands, learn to juggle .
  • For great smoky flavor, soak some wood chips in water for a while, then throw them onto your charcoal and cover the grill, or if youre using gas, put them into your smoker box following the manufacturers instructions.
  • To infuse grilled foods with herb essence, toss herbs directly onto the charcoal while youre grilling. Or, if youre using a gas grill, soak the herbs in water, and place them on the grate before putting your food on top of them.
  • If you want to baste your meat or vegetables, save this step for last. That way the sugars in ,your marinade or sauce wont have time to caramelize or burn.
  • If this all sounds too complicated, or if its raining or cold outdoors, you can grill indoors with a contact grill or use a grill pan.

How To Grill Chicken Wings

There are several ways to grill wings, but first, lets look at the wing itself.

Wings can either be left whole or separated into drumettes and flats. With this method, I remove the wingtip, saving them with additional chicken parts for a future batch of chicken stock. Separating the wing creates more work on the grill, but in my opinion, it makes for easier eating one-hand eating especially when the other hand is clutching a beer.

Now, on to the grilling part!

  • Brush the wings with olive oil and season. Before grilling, its important to brush the wings with olive oil and season with at least salt and pepper.
  • Grill wings continuously over direct medium heat . You can also smoke them over direct low heat . Flip as needed until the wings are almost cooked through and the inside reads 160º F internal, approximately 20 to 25 minutes.
  • Finish over direct high heat . Finish the wings over direct high heat to sear and crisp the skin.
  • Apply sauce, if using. Adding sauce too soon sets the stage for the sauce to burn. If using a sauce, apply it towards the end of the cook or toss with the wings right before serving.

  • The Challenge with Grilled Carrots: Typical grocery store carrots are larger than the carrots you see at the farmers market These fatter carrots can actually be problematic when grilled because the outside chars before the inside becomes tender. So I came up with a solution!
  • Set up Grill for Indirect Heat: The number one key to great grilled carrots is to use indirect heat to your advantage. Indirect heat is when one side of the grill is hot, and the other is not. To set up your grill for indirect heat on a charcoal grill, rake the hot coals to one side before placing the grill grate on top. If youre using a gas grill, preheat the grill first, then turn off one side of the grill just before adding the food. My gas grill has three burners, so I turned off one of them.
  • First Char on The Hot Side: To give the carrots that great grilled, smoky and charred flavor, cook them on the hot side of the grill first. Youll just want to rotate them every so often until they have some blackened spots here and there. Then move them onto the cool side of the grill, and close the lid. In essence youll be turning your grill into an oven, but they wont be getting any darker from flames below. Tricky huh?!
