  • Chicken breast: I like to use boneless, skinless chicken breasts for this recipe. They are easy to work with and cook evenly on the grill.
  • Vegetables: I typically use bell peppers and onions but feel free to mix it up and use your favorite vegetables.
  • Mediterranean spice blend: I like to use paprika, cumin, a touch of cinnamon, and salt and pepper, of course. The combination of these spices creates a wonderfully flavorful kabob.
  • Garlic: I always use fresh garlic in this recipe. It really adds a lot of flavor to the chicken. If you dont have any fresh garlic, you can use 1 ½ tablespoons of garlic powder instead.
  • Lemon juice: This helps to tenderize the chicken and adds a nice brightness to the kabobs. Lime will also work, but I prefer the flavor of lemon.

Tips For Making Grilled Chicken Kabobs

  • If using wooden skewers, soak them for at least 10 minutes in water to prevent them from burning.
  • Cut the chicken and peppers in uniform sizes so the meat cooks evenly.
  • When coating the chicken and vegetables, coat generously so all the pieces are in the chicken kabob marinade.
  • Grill chicken over medium heat. The heat will give the chicken a nice sear and cook thoroughly inside as well.
  • Dont OVERCOOK the chicken.

How Long to Grill Chicken Kabobs: We typically cook them from 12-15 minutes, or until a meat thermometer inserted into the largest part of the chicken reads 165°F.

Serving Suggestions For Chicken Kabobs

Now that you have a plate of delicious chicken kabobs to serve, what should you serve them with? You cant really go wrong, but these are a few of my favorite summer sides for kabobs:

  • Tzatziki Sauce: Serving chicken kabobs with BBQ sauce is always a safe choice, but I also love to serve them with homemade Tzatziki sauce!
  • Rice: Keep it simple and serve your kabobs over a bed of rice. You can go with white rice, brown rice, quinoa, or some other type of grain whatever best fits your preferences!
  • Pita Bread: If you like tzatziki sauce with your kabobs, why not make some pita bread as well? Its super easy, and its such a versatile appetizer/side dish.
  • Salad: Sometimes I like to chop up the grilled veggies and toss them in a light green salad. You can also make some more roasted or grilled veggies to go on the side of your kabobs if you like .

The Juiciest Chicken Kabobs

The secret to making incredible, juicy and flavorful chicken kabobs is all in the marinade! Grilled chicken can go from great to dry in no time so its important to prepare it ahead of time. This grilled chicken recipe uses mayonnaise and a bit of wine to add flavor and to seal in the juices. I recommend marinating the chicken at least 4 hours prior to grilling. If you have the time, marinate the chicken overnight. I season my chicken kabobs with tons of spices, along with fresh dill for an Eastern European twist.

  • These kabobs can be assembled on wooden or metal skewers. If using bamboo skewers, make sure to soak them in water for at least an hour to prevent the wood from catching fire. Keep in mind that metal skewers will cook the chicken faster from the inside watch the kabobs carefully so the chicken doesnt overcook.

  • Place all the marinade ingredients in a large bowl big enough to fit the chicken.
  • Whisk the marinade together until well combined.
  • Add the cubed chicken on top of the marinade.
  • Toss the chicken well to combine, and then allow it to rest in the fridge to soak up the marinade for at least half an hour.
  • Skewer the chicken with the vegetables in between and place them on a preheated grill. If you dont have a grill or want to make these when its cold outside, you can use a grill pan or griddle pan.

    Tips For Amazing Chicken Kabobs:

    • You can use the same marinade for the vegetables as you do the chicken simply double the marinade and marinate the veggies in a separate container or zip lock. While not at all mandatory, this results in super flavorful grilled vegetables.
    • If youre using wooden skewers, be sure to soak them in water for at least 30 minutes before skewering your chicken and veggies for grilling. This will ensure the wooden skewers wont burn during the grilling process.
    • Preheat the grill to high heat. While you are looking to grill the chicken between 375 and 400 degrees, the grill will lose heat quickly once the lid is lifted. Preheating to a high heat will ensure you get those amazing grill marks and the cooking process will go quickly. If you preheat to 375, youll likely end up actually grilling around 300 degrees, which is too low for grill marks and the grilling process will take much longer.

    How To Make Grilled Chicken Kebabs With Vegetables

    First, in a small mixing bowl whisk together white wine vinegar, olive oil, sea salt, dried rosemary, thyme, garlic, and freshly ground pepper.

    Next, cut the chicken breast into 1-inch cubes and place the meat into a large container or freezer bag.

    Pour the marinade over the chicken and seal the bag or container. Let the meat marinate for at least 15-minutes while you cut the vegetables into 1-inch pieces.

    Once the 15-minutes have passed, start building the skewers. As you can see from the photos, we started with chicken and then added the veggies.

    It doesnt have to be perfect, however, try and leave a little space between each cube of protein so it cooks evenly.

    Then, preheat your grill or griddle over low to medium heat. Usually, I use a brush to apply a little vegetable oil to my grate.

    Last, place the grilled chicken kebabs on your grill and let them cook for 12-18 minutes, turning occasionally, or until the meat is cooked through.

    Remove them from the heat and let them rest for about 5-7 minutes before serving. Thats it the recipe is done!

    How To Store & Reheat Grilled Shish Kabobs

    Chicken kabobs keep wonderfully in the fridge. Store them in an airtight container or wrap them tightly with foil or plastic wrap.

    When ready to eat, remove the chicken from the skewers and heat it up in a skillet over medium-high heat until warmed through. You can also use the oven to reheat your kabobs, preheat to 350°F, and heat on the skewer until just warmed through, about 10-15 minutes.

    Use any bell peppers in this recipe. Coloured peppers like red, orange and yellow are sweeter than green.

    Use white, sweet onions or purple onions.

    Add fresh mushrooms, cherry tomatoes or even fresh pineapple to these skewers.

    This pantry marinade has a Mediterranean spin that takes the chicken from ordinary to extraordinary.

    • Olive Oil. To keep the chicken from sticking. Also, for healthy fats and flavor.
    • Red Wine Vinegar. For brightness, pop, and to help the chicken tenderize.
    • Honey. To balance the acidity of the vinegar and help the chicken caramelize on the grill.
    • Dried Herbs. To go with the Mediterranean chicken kabobs theme, I selected oregano and rosemary. Feel free to swap thyme or Italian seasoning, or create your own custom kabob mix.

    If you are using bamboo skewers on the grill, they can easily char a little on the grill and burn. Soak your bamboo skewers in water for at least 10-15 minutes, but for up to an hour.

    After soaking your skewers, then thread the chicken and vegetables onto the bamboo. The water keeps them from burning.

    Metal skewers can also be used, and dont have the same burning or charring issue. Metal skewers are a little harder to eat straight from the skewer as they get very hot, so I recommend removing them from the skewers for eating if you use metal.
