And this is coming from someone who NEVER ate chicken thighs, ever! Once we tried them, we were hooked. Hooked on the convenience, tenderness and flavor.

Grilling them happens to be one of our favorite ways to prepare these tasty morsels! We have had them with all kinds of sauces from sweet to savory to spicy. They are so easy to change up. Heck, they are even amazing sauceless with just a sprinkle of your favorite seasoning blend.

Uneven Grillingthe Secret To Grilled Thighs

Uneven grilling is my method to avoid both flare-ups from draining fat and burnt skin.

There are two parts to this method:1) The skin side of the thighs can burn easily so should have less time facing the flames. So with skin-on thighs, start with skin up for the first period and grill for about 5-6 minutes. Flip to skin side down for 4 minutes. Continue to go back and forth using the same timing.2) Alternate sides of the grill surface with each flip. You will get fat drainage flare-ups. Moving the chicken to the other side of the grill at the flips will allow hot spots from fat drainage to burn out.

For skinless thighs, you can skip the uneven grilling timesyou have no chicken skin you are trying to protect. But you will still need a large surface area to move around and avoid flare-ups from the fat drainage.

Whats The Ideal Temperature To Grill Boneless Chicken Thighs

It would help if you grilled boneless chicken thighs at a lower temperature than bone-in chicken thighs, and the former, in addition, takes less time to cook than the latter. You can cook your boneless chicken thighs at medium to medium-high heat based on your recipe.

The lower the grill temperature, the more time the chicken thighs need to cook.

Season the chicken skin with salt and grill the skin over medium heat until the fat has melted and the skin is nice and crispy. Keep the heat low if it gets too high, the fat will burn instead of cooking and melting slowly. Turn the chicken over and grill, skin side up, for a few minutes until cooked through.

Brined And Grilled Whole Chicken Thighs

Ingredients:

  • 4 whole chicken thighs with bones and skin
  • 1-1/2 cups filtered water

Directions:

1. In a large glass baking dish or plastic storage container, place the water, salt, sugar, and pepper. Stir well. Submerge the chicken thighs into this bath. Cover tightly and refrigerate for at least 12 hours. If the chicken is not completely submerged, add enough water to cover.

2. Remove the thighs from the brine. Rinse under cool water and pat dry with paper towels. Place the chicken on a plate or roasting pan and allow it to air dry and come to room temperature for 60 minutes.

3. Preheat your GF contact grill to high. While it is heating up, place all of the wet rub ingredients on a large plate and combine well. Place the thighs in the rub and coat evenly on all sides using your hands.

4. Place the thighs, skin side up, on the grill and close the top. At 13 minutes check the internal temperature with a reliable meat thermometer. You are looking for 170°F. Continue grilling until that temperature is achieved. This could take up to 15 to 17 minutes, depending on the thickness of the thighs.

5. Remove the chicken to a clean cutting board to rest for 5 minutes. Serve with your favorite sides. I suggest creamy polenta and grilled green beans .

How Long Does It Take To Grill Boneless Chicken Thighs At 350 F

It takes slightly longer to grill boneless chicken thighs at 350 F because youâre grilling over medium heat. Boneless chicken thighs should take around 25 minutes to grill over 350 F. However, itâs always advised to check the internal temperature of the meat before taking it out from the grates.

If the internal temperature taken from the innermost part of the boneless chicken thighs doesnât register 17165 F, allow the thighs some more time to cook until they reach their safe minimum internal temperature.

Put your boneless chicken thighs skin-side down and cook them for at least 10 minutes. Now flip over the sides and grill them for an additional 15 minutes. Check the internal temperature of the boneless chicken thighs, take them out of the grill, and allow them a rest time of around 10 minutes.

The grilling time of boneless chicken thighs at 350 F may vary based on your recipe and the thickness of the chicken thighs. You can cook boneless chicken thighs for some more time to achieve your desired level of doneness.

It’s that dark meat! Chicken thighs consist of “dark meat” which is richer in flavor and naturally stays moister than “light meat” when subjected to the aggressively dry heat of a grill. Plus thighs are more forgiving you can get away with slightly overcooking them and still get juicy results.

This post is less a recipe on how to season boneless skinless chicken thighs as it is guidelines for achieving the perfect cook on the grill – we’re talking moist, juicy, smoky chicken thighs!

When cooking chicken thighs on the grill you DON’T need to marinate first! Kudos to you if you have time/prefer to marinate your chicken thighs before cooking, but ya don’t have to if you don’t wanna. And it’s all thanks to that magically delicious dark meat.

Season your chicken however you like, with everything from an elaborate marinade or spice rub to plain old salt and pepper. Either way, your grilled chicken thighs will be Delicious with a capital D.

I drizzled canola oil over 8 chicken thighs, then showered them with Spicy Adobo Seasoning. I put them in a Ziploc gallon bag for 20-30 minutes before grilling.

Since boneless chicken thighs take less time and temperature to grill, 400 degrees Fahrenheit is a great grill temperature to start with. To cook them perfectly, you need to grill boneless chicken thighs for about eight minutes at 400 F.

The best way to grill boneless chicken thighs at 400 F is to put them skin-side down for about two minutes and then flip over. Itâs best to keep the skin side up for the rest of the grilling time, i.e., six minutes. If you keep the skin-side down for longer than two minutes, youâll get an over-cooked and crispier skin.

Itâs always best if you preheat the grill with its lid closed so that you can have the right temperature, that is, 400 F, before you put your boneless chicken thighs on the grill grates.

After eight minutes, remove your chicken thighs from the grill grates and allow them a rest time of around ten minutes before eating or serving.
