Uneven Grillingthe Secret To Grilled Thighs

Uneven grilling is my method to avoid both flare-ups from draining fat and burnt skin.

There are two parts to this method:1) The skin side of the thighs can burn easily so should have less time facing the flames. So with skin-on thighs, start with skin up for the first period and grill for about 5-6 minutes. Flip to skin side down for 4 minutes. Continue to go back and forth using the same timing.2) Alternate sides of the grill surface with each flip. You will get fat drainage flare-ups. Moving the chicken to the other side of the grill at the flips will allow hot spots from fat drainage to burn out.

For skinless thighs, you can skip the uneven grilling timesyou have no chicken skin you are trying to protect. But you will still need a large surface area to move around and avoid flare-ups from the fat drainage.

It would help if you grilled boneless chicken thighs at a lower temperature than bone-in chicken thighs, and the former, in addition, takes less time to cook than the latter. You can cook your boneless chicken thighs at medium to medium-high heat based on your recipe.

Garlic Chicken Thighs Marinade

I love marinades, and I believe they really help to add flavor to your meat. When you combine just the right ingredients in your marinade, they work together perfectly to create a balanced flavor profile and tenderize the meat before you get it on the grill.

All my marinades have the following 5 ingredients to create a perfectly balanced flavor:

  • Acid- This element tenderizes the meat and adds that lip-smacking, come-back-for-another-bite flavor.
  • Fat- Acts as a buffer between the acid and the meat to prevent the protein from breaking down.
  • Salt- Every great marinade needs a savory element. Beyond flavor, salt acts on a deeper level helping deliver flavor to the interior of the meat itself.
  • Sugar- Creates balanced flavors on your taste buds. Also acts as salt to convey flavor into the meat on a molecular level.
  • Herbs and Spices- Punches up the overall wow factor of your marinade. Fresh herbs, garlic, onion, and chiles are all great options!

The marinade for these chicken thighs makes for the most amazing chicken ever. The chicken comes out crispy from the grill with a fresh herb flavor. The lemon and white wine add some brightness to the chicken and beautifully compliment the sharp garlic.

  • 4 whole chicken thighs with bones and skin
  • 1-1/2 cups filtered water

1. In a large glass baking dish or plastic storage container, place the water, salt, sugar, and pepper. Stir well. Submerge the chicken thighs into this bath. Cover tightly and refrigerate for at least 12 hours. If the chicken is not completely submerged, add enough water to cover.

Continue grilling until that temperature is achieved. This could take up to 15 to 17 minutes, depending on the thickness of the thighs.

5. Remove the chicken to a clean cutting board to rest for 5 minutes. Serve with your favorite sides. I suggest creamy polenta and grilled green beans .

Since they started showing up in the meat case a number of years ago, boneless, skinless chicken thighs have quickly moved to the top of my favorites-to-grill list. They offer all the benefits of boneless, skinless chicken breastsconvenience and fast cookingwithout the tendency to turn tasteless and dry, thanks to their slightly higher fat content. The hearty flavor of thighs and their ability to stay juicy on the grill is sure to win over anyone who claims to be dark-meat averse.

Before grilling boneless, skinless chicken thighs, you might need a quick handling tutorial. Like any chicken part, thighs come in different sizes. Thighs from mass-produced chickens tend to be larger than those from their free-range kin, so be sure to check the weight on the package.

To prepare thighs for the grill, youll need to remove any large pockets of fat, which could cause flare-ups. Dont worry about getting every bit, as its the fat that will help keep the thigh moist during grilling.

Chicken thighs are multi-muscular, unlike breasts, which are a single muscle. When the thigh bone is removed, those muscles become more loosely connected, which explains why boneless thighs often look a bit lumpy when unfurled on the grill. The upside is that this unevenness creates little depressions that hold onto sauces and rubs.

Next time you reach for that package of boneless, skinless chicken breasts, stop, and pick up thighs instead. They just may become your new favorite.

Do You Grill Chicken Over Direct Or Indirect Fire

Put the chicken on direct heat. Boil on each side for about 6 minutes, or until you see the desired crust, then over the indirect fire to finish cooking, turning each piece occasionally. Continue cooking until the internal temperature is 160 to 162 degrees F, measured on an instant reading thermometer.
