    Instructions:

  • In a large bowl, make pork chop marinade by mixing brown sugar, kosher salt, black pepper, garlic, and onion powder. Add in olive oil, soy sauce, Worcestershire sauce, balsamic vinegar and lemon juice. Whisk together.
  • Place pork chops in casserole dish and pour marinade over them. Cover and place in the refrigerator for at least 2 hours.
  • If using a gas grill, preheat to medium-high 10 minutes prior to grilling. If using a charcoal grill, prepare it so you will have a place for indirect heat by banking coals on each side of the grill, leaving the center of the grill without coals/heat. Light charcoals at least 20 minutes prior to grilling. Temperature in either type of grill should be 375-400 degrees prior to putting on the pork chops.
  • Using your tongs, place loin chops on grill and sear for 2-3 minutes per side.
  • Move pork chops to indirect heat , and continue grilling for 4-6 minutes on each side, depending on their thickness. If you have a meat thermometer, make sure the thickest part of the chops reach 145 degrees.

Unless you really, really love garlic, it wouldnt be good to rub your cooked tenderloins across strong raw garlic that could overpower your tenderloin.

    How Do You Make Grilled Pork Tenderloin

    The first thing I do after getting the pork tenderloin out of the package is to pat it dry. I do this because it helps the spices to stick to the meat and wipes off any weird barrier that might have settled on the meat while it was in the package. I then add the tenderloin to a resealable bag, leaving the top open.

    Next, I mix together the lemon juice, garlic, spices, oil, mustard, and honey. I pour only half of this marinade over the pork . You want to save the other half for later. Seal the pork and marinade together in the bag and squeeze out any extra air. I also kind of shake/rub the marinade around on the pork outside the bag as well. I then put it in the fridge for at least 30 minutes.

    Meanwhile, I preheat the grill to about medium and get the grates oiled so that the meat doesnt stick while youre grilling. After the pork has been marinated, I use long tongs to transfer it to the grill, then close the grill and cook for 15-20 minutes, turning every couple of minutes or so so that it cooks on all sides. About halfway through the grilling process, Ill start to spread on the other half of that reserved marinade.

    When its done grilling or the internal temperature of the pork reaches 145°, I remove the tenderloin from the grill and let it rest for 5 minutes before cutting and serving.

    How To Brine Your Loin

    Adjust the recipe to make sure your entire loin is submersed. Put the water and other ingredients in a pot and bring to a boil. Simmer for about 5 minutes, then remove from the heat to cool.

    Add a couple cups of ice to bring the temperature of the brine down to about 45° F.Pour the brine in a plastic bag and add your meat, shake if you have spices added, then place the bag into a bowl in case of leakage. Leave in the refrigerator overnight.
